ONE SKILLET BREAKFAST BURRITOS
My husband and I enjoy surf fishing and will often take along our one burner cooktop to prepare breakfast on the beach while we enjoy the sunrise. To cut down, I do prep at home and place everything in either containers or zippy bags. It can be made in one skillet. I take three plates, 2 for service, 1 for ingredient holding. I shell the eggs, drop them in a ziplock bag and scramble by mashing the bag. I slice mushrooms and tomatoes and wrap in plastic wrap. I put the mayo on thickly on one side of a burrito and place the other burrito on top. Roll them loosely up and wrap in a paper towel. All gets transported to the beach. (add cheese if desired)

Steps:
- Place mayonaise on one side of burrito, place second burrito on top, roll up and set aside.
- Cook bacon in skillet to desired doneness, we like it crunchy. Remove from pan and drain on paper plate.
- In same skillet, add mushrooms and cook 3 minutes over medium high heat.
- Mix up the eggs and pour into mushrooms. As eggs cook, lift up the edges with a spatula and let the uncooked roll underneath.
- Unroll tortillas and divide to 2 plates.
- Place 2 tomato slices on each and 2 bacon slices on each.
- Divide eggs in half and place on plate.
- Roll each up burrito style and enjoy!

Steps:
- Scramble egg, add milk, salt and pepper to taste.
- Spray small skillet with cooking spray.
- Add chopped onion, jalapeno and sausage.
- Cook until sausage is done.
- Remove from heat and set aside.
- Spray skillet again and add egg.
- Cook until just about done and add onion, jalapeno and sausage mixture.
- Heat tortilla with cheese in microwave until melted.
- Put mixture on tortilla and add salsa if desired.
- Fold in half and eat!

- Heat a large nonstick skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Remove ground beef to a paper towel-lined plate and drain and discard grease from the skillet.
- Return ground beef to the skillet and add black beans, salsa, water, and taco seasoning. Mix well and bring to a boil. Reduce heat slightly and add Cheddar cheese and tortilla strips. Cover and simmer until cheese is melted, about 5 minutes. Top with sour cream.

- Crumble sausage and add to hot pan. Turn heat down to medium. Cook sausage until thoroughly cooked throughout. Do not drain, unless sausage is very fatty (if sausage is fatty, drain and reserve a bit of fat in the pan to fry the potatoes). Transfer the sausage to a bowl with a slotted spoon and set aside.
- Add hash browns and cook until they are roughly 1/2 done. Then, add red bell peppers, onions, green chiles, Ancho-chile powder and cumin and cook until potatoes are completely done and a bit crunchy.
- Add eggs and cook over medium heat, stirring frequently until nearly done. Add sausage to pan and cook until eggs are completely done throughout.
