SAUSAGE AND RIGATONI DUMP DINNER

Skip boiling a big pot of water. This hearty pasta dinner calls for uncooked rigatoni and layers of ricotta and Italian sausage to be layered right in the casserole, so you'll have nothing to wash while it bakes.

Unsalted butter, for the baking dish
One 24-ounce jar marinara sauce
3 cups beef broth
1/4 cup tomato paste
4 cloves garlic, grated
Kosher salt and freshly ground black pepper
1 pound uncooked rigatoni
1 pound Italian sausage, casings removed
3/4 cup ricotta
2 cups shredded mozzarella

Steps:

  • Preheat the oven to 425 degrees F. Generously grease the bottom and sides of a 9-by-13-inch casserole dish with the butter.
  • Stir together the marinara, beef broth, tomato paste, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl.
  • Spread half the pasta in an even layer in the bottom of the prepared dish. Scatter half of the sausage over the top by breaking into pieces and dolloping onto the pasta. Dollop with half of the ricotta. Pour half of the marinara mixture over top. Repeat with a second layer.
  • Cover with aluminum and bake until the pasta is al dente, about 50 minutes.
  • Uncover and sprinkle the mozzarella on top. Bake until the mozzarella is melted and bubbly, about 10 minutes.

3 tablespoons good olive oil
3 cups chopped fennel (1 large bulb)
1 1/2 cups chopped yellow onion
1 1/4 pounds sweet Italian sausages, casings removed
2 teaspoons minced garlic (2 cloves)
1/2 teaspoon whole fennel seeds, crushed with a mortar and pestle
1/2 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 cup dry white wine
1 cup heavy cream
2/3 cup half-and-half
2 tablespoons tomato paste
1 pound rigatoni
1/2 cup chopped fresh parsley leaves
1 cup freshly grated Italian Parmesan cheese, divided

Steps:

  • Heat the olive oil in a large heavy pot or Dutch oven, such as Le Creuset, over medium heat. Add the fennel and onion and saute for 7 minutes, stirring occasionally, until tender. Add the sausage and cook for 7 to 8 minutes, crumbling it with a fork, until nicely browned. Add the garlic, crushed fennel seeds, red pepper flakes, 2 teaspoons salt, and 1 teaspoon black pepper and cook for one minute. Pour in the wine, bring to a boil, and add the heavy cream, half-and-half, and tomato paste. Bring back to a boil, lower the heat, and simmer for 20 minutes, until the sauce has thickened.
  • Meanwhile, bring a large pot of water to a boil, add 2 tablespoons salt, and cook the rigatoni according to the directions on the package. Drain and add to the sauce, stirring to coat the pasta. Cook over low heat for 5 minutes to allow the pasta to absorb the sauce. Off the heat, stir in the parsley and 1/2 cup of the Parmesan. Serve hot in shallow bowls with the remaining 1/2 cup Parmesan on the side.

This one pot pasta is the perfect weeknight dinner - the pasta cooks in the sauce! Sausage, spinach, and onion make it a hearty meal, with a starchy sauce you won't forget.

1 tbsp each olive oil and butter
1 medium onion, diced
3 cloves garlic, minced
1 lb spicy Italian sausage
1 24-26oz jar tomato sauce (your favorite kind)
3 cups chicken broth
1 lb rigatoni (or penne) pasta
1 6-oz bag fresh spinach
Salt, pepper, and grated parmesan cheese (optional)

Steps:

  • Heat a large pot or Dutch oven over medium heat. Melt butter and oil together, then cook onion and garlic until softened. Add the sausage and cook, breaking up with a spoon, until browned, 5-7 minutes.
  • Add tomato sauce and chicken broth, and bring to a boil. Add the pasta and simmer, stirring every few minutes so it does not stick, until pasta is al dente, 15-20 minutes. Taste and add salt and pepper if necessary.
  • Add spinach and toss everything together until spinach is wilted (it will seem like a lot of spinach at first, but it will cook down!).
  • Plate and top with grated parmesan if desired, and dig in!

5 links hot italian sausage
1 large yellow onion, chopped
5 cloves garlic, minced
salt, to taste
pepper, to taste
1 tablespoon dried oregano
1 tablespoon dried basil
1 tablespoon dried parsley
12 oz tomato paste
15 oz diced tomato
2 cups grated parmesan cheese, divided
2 cups spinach
1 lb rigatoni, cooked
1 cup ricotta cheese
fresh basil, to garnish

Steps:

  • To a large dutch oven on medium heat, add the olive oil and heat it until it shimmers.
  • Add the hot Italian sausage, cook until the the first side browns deeply, flip and cook on the other side until the sausage is fully cooked, 15 minutes. Remove the sausages from the pan and slice when they cool down.
  • To the leftover pan drippings, add the chopped yellow onion, minced garlic, salt, pepper, dried basil, dried oregano, and dried parsley. Cook until the onions are caramelized and soft. About 10 minutes.
  • Add the tomato paste and cook until the tomato paste darkens slightly.
  • Add in the diced tomatoes and the sausage slices into the pan, stir, and let the sauce come to a simmer.
  • Add in half the grated parmesan, spinach, the cooked pasta, and stir to combine.
  • Spoon in fresh dollaps of the ricotta cheese, garnish with fresh basil, more grated parmesan, and serve!
