2 bunches asparagus (about 2 pounds), cut into 2-inch pieces (about 6 cups)
4 thick-slices bacon (about 4 ounces), chopped (about 1 cup)
2 tablespoons unsalted butter
1/4 cup finely chopped onion (from 1/2 a small onion)
Pinch of freshly grated nutmeg
1/8 teaspoon cayenne pepper
Coarse salt and freshly ground black pepper
3 tablespoons all-purpose flour
2 teaspoons Dijon mustard
2 cups whole milk
4 large hard-boiled eggs, halved lengthwise
1 cup butter crackers (such as Ritz), coarsely crushed (about 2 ounces)
1 cup shredded gruyere cheese (about 2 1/2 ounces)

Steps:

  • Preheat oven to 350 degrees with rack in the upper third. Bring a pot of salted water to a boil; prepare an ice bath. Add asparagus and cook until just tender and bright green, 2 to 3 minutes. Transfer to ice bath; drain.
  • Return pot to medium heat. Add bacon and cook, stirring occasionally, until crisp, about 10 minutes; remove bacon with a slotted spoon to a paper towel-lined plate. Discard rendered fat or reserve for another use. Add butter to same pot and heat over medium until foamy. Add onion, nutmeg, cayenne and 1 teaspoon salt. Cook, stirring occasionally, until onion is translucent, about 3 minutes. Stir in flour and cook, stirring occasionally, until toasted and fragrant, about 1 minute. Stir in mustard, then gradually whisk in milk and bring to a boil, whisking often. Reduce to a simmer and cook until thickened slightly, about 5 minutes. (You should have about 2 cups bechamel.) If not using right away, press a sheet of plastic wrap directly onto the surface of the sauce to keep a film from forming.
  • Spread 1 cup bechamel evenly across the bottom of a 9-inch-square baking dish. Reserving 1 cup for topping, sprinkle remaining asparagus over bechamel. Arrange reserved bacon in an even layer on top, followed by the sliced eggs, cracker crumbs and remaining bechamel. Sprinkle the reserved 1 cup asparagus down the center of the casserole, then sprinkle the cheese evenly on top and season with black pepper. Bake until sauce is bubbling, about 25 minutes. Turn oven to broil setting and continue to cook until golden-brown on top, 3 to 4 minutes more. Let cool 15 minutes on a wire rack before serving.

4 eggs
4 tablespoons butter
4 tablespoons all-purpose flour
salt and pepper to taste
1 (15 ounce) can asparagus, drained with liquid reserved
½ cup milk
½ teaspoon Worcestershire sauce
1 pinch cayenne pepper
4 ounces sharp Cheddar cheese, cubed
½ cup blanched almond halves
½ cup seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a medium-sized casserole dish.
  • Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • In a heavy saucepan, melt the butter. Stir in the flour, salt, and pepper; blend thoroughly. Gradually stir in 3/4 cup of reserved asparagus liquid and the milk; cook (stirring constantly) until the sauce is thickened and smooth . If the mixture is too thick, more asparagus liquid or milk can be added until the mixture reaches the desired consistency. Stir in the Worcestershire sauce and cayenne pepper. Remove the pan from the heat.
  • Layer the asparagus, eggs, cheese, and almonds into the casserole. Repeat the layering until all of the ingredients are used. Spoon the sauce over the layers and sprinkle with crumbs.
  • Bake in the preheated 350 degree F (175 degrees C) oven for 20 minutes; or until bubbly and lightly browned.

1 1/2-2 cups pepperidge farms herb seasoned stuffing mix (blue bag)
2 cans del monte fresh cut asparagus
1 fresh lemon, juice of
1/2 cup butter, melted
1 can campbell cream of mushroom soup
1/4 cup half-and-half or 1/4 cup milk
2 tablespoons chopped pimiento, drained (optional)
1 cup grated sharp cheddar cheese

Steps:

  • Preheat Oven 350 Degrees F.
  • Spray 2 quart (9X13 inch) Oven Casserole Dish with Butter Spray or grease with butter.
  • Line bottom of casserole dish with a layer of 1 1/2 to 2 cups Pepperidge Farms Herb Stuffing (Blue Bag).
  • Spread out contents of 2 cans of Del Monte Fresh Cut Asparagus across the stuffing mix.
  • Drizzle the juice of 1 fresh lemon over the asparagus.
  • Nita's Note: Microwave lemon about 10 seconds before squeezing and you will get more juice.
  • Melt 1 stick Butter over low heat being careful NOT to brown or burn it, OR, place butter in a microwave safe dish, cover dish with waxed paper and microwave it for about 35 seconds.
  • Pour melted butter over asparagus and stuffing mix.
  • Combine 1/4 cup Half& Half or milk with 1 can Campbell's Cream of Mushroom Soup and 2 tablespoons chopped pimento (optional), drained.
  • Pour over asparagus and stuffing mix.
  • Place casserole in center of preheated 350 Degrees F.
  • oven and bake for about 25 minutes.
  • Spread 1 cup grated Sharp Cheddar Cheese over top of casserole.
  • Bake 10 or 12 minutes until cheese is melted thoroughly.
  • Serve hot.
  • ENJOY!

Two bunches fresh asparagus
4 tablespoons butter
4 tablespoons all-purpose flour
1 cup milk
Pinch salt
5 ounces Cheddar, grated
4 hard-boiled eggs
1/2 cup saltine cracker crumbs (about 10 crackers)

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the asparagus to a large pot of boiling water, keeping the bundles together with rubber bands or string. Cook for a couple of minutes; the asparagus should be bright green and still crunchy. List the bundles out of the water and slice off the tough ends of the asparagus. Drop the trimmed ends back in the boiling water and lower to a simmer.
  • Run the asparagus tops under cold water to stop the cooking.
  • Melt the butter in a medium saucepan. Whisk in the flour to make a roux. Cook for 1 minute, then whisk in the milk and 1 cup of the asparagus cooking liquid. Add the salt and continue cooking until the sauce thickens, about 5 minutes. Add the grated Cheddar and cook, stirring, until melted, about 1 minute.
  • Arrange the asparagus in the bottom of a 9-by-12-by-2-inch baking dish, alternating the stem ends so each serving includes both heads and stems. Thinly slice the hard-boiled eggs and arrange them over the asparagus. Pour the cheese sauce over the eggs and asparagus and sprinkle with the cracker crumbs. Bake until lightly browned and bubbles appear around the edges, about 20 minutes.

1 cup shredded cheddar cheese
1 cup crushed potato chips

Steps:

  • In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes or until crisp-tender. Drain well; set aside. , In a large saucepan over medium heat, melt butter. Stir in flour until smooth. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Add salt and pepper. , Preheat oven to 350°. In an ungreased 11x7-in. baking dish, layer half of the asparagus. Cover with half of the eggs, cheese and sauce. Repeat layers. Sprinkle with potato chips. , Bake, uncovered, until heated through, 30 minutes.

1 pound fresh asparagus, cut into 1-inch pieces or 2 packages (10 ounces each) asparagus cuts, thawed
2 medium onions, sliced
5 tablespoons butter, divided
2 tablespoons all-purpose flour
1 cup 2% milk
3 ounces cream cheese, cubed
1 teaspoon salt
1/8 teaspoon pepper
1/2 cup shredded cheddar cheese
1 cup soft bread crumbs

Steps:

  • In a large skillet, saute asparagus and onions in 1 tablespoon of butter until crisp-tender, about 8 minutes. Transfer to an ungreased 1-1/2-qt. baking dish. , In a large saucepan, melt 2 tablespoons butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. , Reduce heat. Add the cream cheese, salt and pepper; stir until cheese is melted. Pour over vegetables. Sprinkle with cheddar cheese. YUMMY! This one is DEELICIOUS and a KEEPER! My own way of doing a casserole using VEG-ALL VEGETABLES (or, yo could use other canned mixed vegetables.) This is very good. Good for "covered dish" or church dinners. The New Perry Hotel in Perry GA used to serve a similar dish when it was owned by the original owners.

1/2 medium sweet onion, chopped (Vidalia if available)
2 celery ribs, scraped,strings removed,chopped
2 -3 cans veg-all vegetables, drained well
1 can campbell cream of mushroom soup
1/2 cup grated sharp cheddar cheese
1 tablespoon chopped pimiento, drained well
1 can water chestnut, drained and chopped (I don't add these) (optional)
1 cup mayonnaise
1/2 teaspoon herbes de provence (or Mixture of Basil, Rosemary, Parsley to taste) (optional)
1/4-1/2 teaspoon onion powder (not onion salt)
1/4 teaspoon celery salt
3 -5 dashes celery seeds (optional)
2 tablespoons granulated sugar
1/2 teaspoon table salt
1/8-1/4 teaspoon black pepper
1 package cheese Ritz crackers or 1 package Ritz cracker
1/4 cup butter, melted
paprika, for sprinkling on top (optional)
1/2-2/3 cup grated sharp cheddar cheese, to spinkle over this if using plain ritz crackers (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Prepare and combine the onion and celery and put in a small bowl, add water, cover with waxed paper.
  • Microwave on high 3 minutes or saute together in a little water for 3 or 4 minutes.
  • Combine with rest of ingredients except crackers and butter.
  • Pour into a baking dish or if for a covered dish dinner use a disposable 12 3/4" X 8 3/4" X 1 11/16" pan.
  • [Reservethe lid that comes with it and put it on top loosely after baking and before traveling with the casserole.
  • ]Crumble crackers while still in the sleeve.
  • Cover top of casserole with crackers.
  • Drizzle melted butter on top and sprinkle with paprika if desired.
  • (May use optional cheese.) Bake at 350 degrees for 30-45 minutes.
  • ENJOY!
  • Note: This can be baked without the topping.
  • Cooled, topping added and reheated when ready to serve and eat.
