Found among my recipe clippings. I am posting for safe keeping! I estimated the prep time, so it may not be accurate.

8 medium potatoes, peeled and thinly sliced
1 small onion, chopped
1 (10 3/4 ounce) can condensed cheddar cheese soup, undiluted
1 cup sour cream
1 teaspoon salt

Steps:

  • Combine all ingredients in a large bowl and mix well.
  • Place into a greased 9 inch square baking dish.
  • Cover and bake at 350 degrees for 70 t0 75 minutes or until the potatoes are tender.
  • Uncover and bake for 10- 15 minutes longer or until lightly browned.

1 (30 ounce) package frozen shredded hash browns, thawed
2 cups sour cream
1 teaspoon garlic powder
1 pinch cayenne
1 cup shredded cheddar cheese
1 (10 ounce) can condensed cream of chicken soup, undiluted
1 small onion, chopped
1/4 cup butter, melted
2 tablespoons chopped fresh parsley
seasoned salt & freshly ground black pepper (can use white salt)
1/3 cup freshly grated parmesan cheese

Steps:

  • Set oven to 350 degrees F.
  • Butter a 2-quart baking dish.
  • In a large bowl, combine all ingredients except the Parmesan cheese until well blended.
  • Transfer to prepared baking dish then sprinkle with Parmesan cheese.
  • Bake uncovered for 1 hour.

This is a wonderful potato casserole for potlucks and parties.

1 (2 pound) package frozen hash brown potatoes
⅓ cup chopped green onions
2 cups shredded Cheddar cheese, divided
1 (10.75 ounce) can condensed cream of potato soup
¼ cup butter
2 cups sour cream
salt and pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a small pot, heat the soup, butter or margarine and sour cream over low heat.
  • Combine potatoes, green onion and 1 cup cheese into a large mixing bowl. Mix in the heated soup mixture. Season with salt and pepper. Pour into a 9x13 inch dish. Sprinkle one cup of cheese over the top of the casserole.
  • Bake 30 to 45 minutes. Serve warm.

1 1/2 cups hot mashed potatoes (prepared with milk and butter)
1/2 cup sour cream
1 -2 tablespoon milk
1/8 teaspoon garlic powder
3/4 cup French-fried onions
1/2 cup shredded cheddar cheese

Steps:

  • In a bowl, combine potatoes, sour cream, milk and garlic powder; mix well. Spoon half into a greased 1-qt. baking dish. Layer with half of the onions and cheese. Reapeat layers. Bake, uncovered at 350 for 30-35 minutes or until the cheese is melted.
  • *Prep time is based on using leftover mashed potatoes.
