Oh my goodness! A scrumptious meal I made up and the family devoured it! No guilt, because it's good for you! It contains 6 grams of Omega 3 and 6 and fried with olive oil. A healthier option for breaded chicken!

Number Of Ingredients 13

4 skinless chicken breasts
3/4 cup breadcrumbs
2 tablespoons flour
2 tablespoons italian seasoning
1 tablespoon hemp seeds (available from Costco)
1 tablespoon milled flax seed (available in most grocery stores)
1 tablespoon onion powder
1/2 teaspoon ground black pepper
1/2 teaspoon salt
2 eggs
1 tablespoon lemon juice
1 teaspoon garlic
olive oil (for frying)

Steps:

  • In a frying pan cook chicken with 1/4 cup of water until almost cooked through; steams chicken and keeps moist.
  • While chicken is cooking, combine the next 8 ingredients in a large bowl: bread crumbs, flour, Italian seasoning, hemp seeds, flax seeds, onion powder, black pepper, salt.
  • In a smaller bowl mix: 2 eggs, lemon juice, garlic.
  • Cut each chicken piece in 1/2 or 1/3. Dip in egg mixture (small bowl), then in bread mixture (large bowl and fry with olive oil for about 5 min each side. Then serve and enjoy! ------------------------------ Note: You can double the hemp seeds and milled flax seeds for more omega 3 & 6 nutritional value.

2 cups seasoned dry bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Dredge chicken breasts in salad dressing, then coat completely with bread crumbs. Place coated chicken breasts in a lightly greased 9x13 inch baking dish and bake in the preheated oven for about 30 minutes, or until chicken is cooked through and juices run clear.

1/4 cup parmesan cheese
1/2 teaspoon paprika

1/2 teaspoon salt
1 egg
1/4 cup milk

Steps:

  • combine all dry ingredients into a large bowl.
  • whisk milk and egg into a separate bowl.
  • dip each chicken thigh in the milk mixture and then into the dry mixture.
  • place on a lightly greased baking sheet.
  • place in oven at 350 F for 30 minutes.

3 large eggs
Coarse salt
1/3 cup all-purpose flour
3 1/2 cups fresh breadcrumbs
1 cup vegetable oil
8 thin chicken cutlets (about 1 1/2 pounds total)
Lemon wedges, for serving (optional)

Steps:

  • In a shallow dish, whisk eggs with teaspoon salt; let stand 5 minutes. In another shallow dish, season flour with 1/4 teaspoon salt. In a third shallow dish, season breadcrumbs with 1 teaspoon salt.
  • In a large cast-iron skillet or other heavy deep skillet, heat oil over medium. Meanwhile, pat chicken dry with paper towels. Coat in flour, shaking off excess, then dip in egg (letting excess drip off). Dredge in breadcrumbs, turning twice and patting to adhere.
  • Increase heat to medium-high. Working in batches, add chicken to skillet; cook, gently shaking skillet occasionally, until chicken is browned, about 4 minutes. Turn with tongs; cook until browned and opaque throughout, 2 to 3 minutes more (if browning too quickly, lower heat). Between batches, skim off brown crumbs from oil with a slotted spoon. Drain chicken on paper towels; season with salt.

I found this recipe about 4 years ago and I have been making it ever since. It has a wonderful taste and it is so crunchy. It is definitely one of my husbands favorite chicken recopies as well as all my guests. This recipe does not get boring so it can be made again and again and trust me it will be! I hope you enjoy it!

1 chicken (cut into 1/8 can be made with skin or without I usually take off the skin)
1/2 cup mayonnaise
3/4 teaspoon salt
3/4 teaspoon paprika
3/4 teaspoon garlic
1/4 teaspoon ground pepper
1 -2 cup corn flake crumbs (however much the chicken needs)

Steps:

  • Preheat oven to 400. Wash, (skin) and dry chicken.
  • MIx the mayonnaise and the spice ingredients together is a medium size bowl.
  • Put cornflake crumbs in a separate bowl or plate.
  • Take a spoonful or mayonnaise and rub it all around each piece of chicken
  • Place each piece of chicken in the bread crumbs and roll it around making sure each piece is fully covered.
  • Place in a pan big enough to fit all the pieces of chicken.
  • Cover the pan with tinfoil and place in the oven for 40 minute.
  • Uncover chicken and put it back in the over for 20-30 ,min until it is brown on top and appears crunchy.
  • Enjoy!

  • In a shallow bowl, combine mayonnaise and milk. In another bowl, combine bread crumbs and onion powder. Dip chicken in mayonnaise mixture, then roll in crumb mixture. , Place in a greased 8-in. square baking pan. Bake, uncovered, at 350° for 10 minutes. Turn over; bake 10-15 minutes longer or until juices run clear.
