I got this recipe from a friend who can't remember where she got it. It's different than the usual creamy spreads and is versatile and delicious.

Serve this pungent olive, caper, and anchovy spread as an hors d'oeuvre on toasted rounds, or on sandwiches, grilled chicken, and fish.

- Coarsely chop olives, garlic, capers, anchovies, and lemon zest on parchment-covered cutting board. Place chopped mixture in a bowl. Add pepper, mustard, parsley, and juice of the zested lemon, and stir in enough olive oil to bind the mixture together. Serve on baguette rounds.

An easy and great tasting appetizer. You can not just have one.... You will have garlic breathe when you are finished, but it's worth it.

Steps:
- Put all ingredients, except olive oil in the food processor and pulse until chopped.
- Turn processor on low setting and gradually add olive oil until you get a grainy texture.
- I stop and start and scrape down the sides as I am going.
- I try to add as little oil as possible, but enough to hold the mixture together so it will spread nicely.
- Serve with slices of grainy baguette.
- This is wonderful and easy.
OLIVE SPREAD
Steps:
- Place all of the ingredients in a food processor or blender and puree. If the mixture is too thin, add 2 ounces or more of ricotta cheese to thicken it. Season with salt and pepper.
THREE OLIVE SPREAD
This recipe was given to me by a coworker for the holidays. It is best when made with olives purchased at a deli. Serve with your favorite cracker, baguettes or thin italian bread slices.

- Combine the black olives, green olives, kalamata olives, and garlic in the container of a food processor. Pulse to chop, then add balsamic vinegar and olive oil. Process until smooth. Refrigerate for at least one hour, or overnight if possible, before serving.

- 1. In a medium bowl, soak the olives, capers, and anchovies in cold water for 5 minutes to remove excess salt. Rinse, drain, and pat dry.
- 2. In a food processor, combine the olives, capers, anchovies, mustard, lemon juice, Cognac (if using), parsley, and a pinch of black pepper. Blend until the ingredients are roughly chopped. With the machine running, slowly stream in the oil and continue processing until a coarse paste is formed.
- 3. Serve immediately or refrigerate for 1 hour to allow flavors to further develop.
- Serving Suggestion: Serve the tapenade as an appetizer with croûtes (toast). To prepare, thinly slice a baguette and spread the slices in an even layer on a baking sheet. Brush the bread lightly with olive oil and bake at 325°F, turning as needed, until the bread is completely dry and lightly browned, about 30 minutes total. While still warm, rub the toasts with a clove of garlic. Serve warm or at room temperature.
OLIVE-CAPER SPREAD
This salty spread is perfect with crudite and crackers.
