Steps:
- Cover the bottom of an 8 or 9 inch square pan with fruit. (I prefer an 8 inch or 9 inch square glass baking dish. You could also use a deep dish glass pie plate.)
- Mix 3/4 cup sugar, butter, baking powder, salt, extracts, milk and flour together. Add a little more milk if it is too thick to pour; pour over fruit.
- Mix remaining sugar and cornstarch in a small bowl; sprinkle over mixture in pan. Pour boiling water gently over the top of the cake.
- Bake at 375°F for 45 minutes, a little longer for gluten free flours.

OLD-FASHIONED RHUBARB CAKE
My great-aunt gave me this rhubarb cake recipe. It's especially delicious when rhubarb is in season, and tastes even better with the old-fashioned milk topping. But you'll love it even with frozen rhubarb and "modern-day" whipped topping! -Mairlyn Homola, Hazel, South Dakota

- Stir together the condensed milk, boiling water, and butter in a saucepan over medium heat, and heat until the butter has melted. Place the bread cubes in a large bowl, and pour the milk mixture over the bread cubes. Let the bread sit to soak up the liquid; do not stir.

- Bake in the preheated oven until a toothpick inserted into the center of the bread pudding comes out clean, about 1 hour.

- In a medium bowl, mix together 1/2 - 3/4 cup sugar (depending on how sweet you like it or the sweetness of the fruit you are using), the butter, baking powder, salt, vanilla, milk and flour together. Spoon over fruit and spread to cover as much as possible. (There is not a ton of batter and it is thick-ish, but do try to cover the fruit as completely as possible, even if it seems quite a thin cover).
- In a small bowl, stir together the remaining 3/4 cup white sugar and cornstarch. Sprinkle over the batter in pan. Pour boiling water over the top.
