GINGERBREAD MUFFINS



Gingerbread Muffins image

Moist and gingery with a bit of crunch from the demerara sugar sprinkle on top.

Yield 12

Number Of Ingredients 12

350g plain flour (2 1/2 cups
2 tsp ground ginger
2 tsp ground cinnamon
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
60ml oil (1/4 cup)
135g soft light brown sugar (2/3 cup packed)
120ml molasses (1/2 cup)
1 large free range egg
320ml buttermilk (1 1/3 cups)
2 TBS demerara sugar to sprinkle on top

Steps:

  • Preheat the oven to 180*C/350*F. gas mark 4. Line a 12 cup muffin tin with paper liners or grease with non-stick cooking spray.
  • Whisk the flour, ginger, cinnamon, baking powder, soda and salt together in a medium bowl. Set aside.
  • In another bowl, whisk together the oil and brown sugar. Whisk in the molasses and egg. Make sure they are well combined and then whisk in the buttermilk, again making sure it is well combined.
  • Add the flour mixture to the wet ingredients and stir together just to combine.
  • Scoop into the prepared muffin cups, dividing it equally amongst them. The cups will be quite full. Sprinkle the tops with the demarara sugar.
  • Bake in the preheated oven for 20 to 25 minutes, until well risen, golden brown and a toothpick inserted in the centre comes out clean.
  • Tip out onto a wire rack to cool completely. Store any leftovers in an airtight container.

Every Sunday morning, our family would go to my grandmother's house for her homemade muffins. I finally got the basic recipe and through years of experimenting I finally came up with the right portions to make them taste like hers. Please try and enjoy.

1 ¾ cups all-purpose flour
1 tablespoon baking powder
¼ teaspoon salt
½ cup butter, softened
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 cup milk

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease 12 muffin cups. Stir the flour, baking powder, and salt together in a bowl; set aside.
  • Beat the butter and sugar with an electric mixer in a large bowl until smooth. Add 1 egg and allow it to blend into the butter mixture; beat the vanilla and milk into the mixture with the second egg. Mix the flour mixture into the wet ingredients until just incorporated. Divide the dough into the prepared muffin cups.
  • Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 30 minutes.

Number Of Ingredients 9

1/2 cup butter, softened
1/2 cup sugar
2 large eggs
1 teaspoon grated orange zest
1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup red currants
Confectioners' sugar

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and orange zest. Combine the flour, baking powder and salt; add to the creamed mixture just until blended. Fold in currants. , Fill greased or paper-lined muffin cups two-thirds full. Bake at 375° for 20-25 minutes or a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to wire rack. Dust with confectioners' sugar. Serve warm.

1/4 cup butter
1/4 cup shortening
1/2 cup milk
1/2 teaspoon vanilla
2 eggs, beaten
1 1/2 cups blueberries

Steps:

  • Preheat oven to 400 degrees.
  • In medium bowl, combine dry ingredients and mix well.
  • Cut in butter and shortening until mixture resembles fine crumbs.
  • Combine milk, vanilla and eggs and blueberries.
  • Add to dry mix until just moistened.
  • Spoon into prepared pan filling each cup 3/4 full.
  • Bake 30-35 minutes.
  • Cool five minutes before serving.
  • *Variation: leave out the blueberries and reduce cooking time to 20-25 minutes.

GINGER-PUMPKIN MUFFINS

5 1/2 tablespoons minced crystallized ginger
1/2 cup dried currants or raisins
2 tablespoons brandy
2 cups sifted unbleached all purpose flour
1 tablespoon ground ginger
2 teaspoons pumpkin pie spice
1 1/2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup plus 2 tablespoons cooked pumpkin puree or canned solid pack pumpkin
1/2 cup plus 2 tablespoons low-fat buttermilk
1 teaspoon vanilla extract
2 large egg whites
1 large egg
3/4 cup plus 3 tablespoons (packed) golden brown sugar
1/2 cup unsulfured (light) molasses
1/4 cup vegetable oil

Steps:

  • Preheat oven to 375°F. Line sixteen 1/3-cup muffin cups with paper liners. Mix 2 1/2 tablespoons crystallized ginger, currants and brandy in small bowl.
  • Sift flour, ground ginger, pumpkin pie spice, baking soda and salt into medium bowl. Whisk pumpkin puree, buttermilk and vanilla in another bowl. Using electric mixer, beat egg whites and egg in large bowl until foamy. Add 3/4 cup plus 2 tablespoons brown sugar; beat until light, about 2 minutes. Beat in molasses and oil. Beat in dry ingredients alternately with pumpkin mixture in 3 additions each. Stir in currant mixture.
  • Divide batter among prepared muffin cups. Mix 3 tablespoons crystallized ginger and 1 tablespoon brown sugar in small bowl. Sprinkle evenly over muffins.
  • Bake muffins until tester inserted into center comes out clean, about 25 minutes. Cool on rack.
