1 (3 pound) beef brisket
1 cup ketchup
1 (1 ounce) package dry onion soup mix
1 (12 fluid ounce) can or bottle ginger ale
3 carrots, cut into 1 inch pieces
1 small onion, sliced

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place the brisket in a roasting pan fat side up. In a medium bowl, stir together the ketchup, soup mix and ginger ale; pour over the brisket. Arrange carrots and onion around the edge of the roast if using. Cover the roast with a lid or aluminum foil.
  • Bake for 2 hours in the preheated oven. Remove the cover, and cook for 1 more hour. Let stand for a few minutes before slicing and serving.

1 fresh beef brisket (4 pounds)
2 tablespoons canola oil
2 large sweet onions, sliced
2 cups ketchup
2 cups water
1/2 cup dry red wine or beef broth

Steps:

  • In an oven-proof Dutch oven, brown meat in oil on all sides; drain. Top with onions. Combine the ketchup, water and wine; pour over meat and onions. , Cover and bake at 350° for 3 to 3-1/2 hours or until meat is tender. Let stand for 5 minutes. Thinly slice brisket across the grain. Thicken sauce if desired; serve with beef.Freeze option: Place individual portions of sliced brisket in freezer containers; top with cooking sauce. Cool and freeze. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring and adding a little water if necessary.

2 1/2 lb first cut brisket
1 large sweet onion, minced
1 pkg lipton recipe secrets onion soup mix
2 c water, separated
1 c ketchup

Steps:

  • 1. In 5-quart Dutch oven, or heavy saucepan, spread onions on the bottom of pan.
  • 2. Place brisket on top of onions.
  • 3. Sprinkle with contents of Lipton onion soup mix, and pour 1 cup of water over that.
  • 4. Cover and cook brisket on stovetop over low heat for 1 hour. Remove brisket to a cutting board and cut against the grain into l/4 inch thick slices; return to Dutch oven.
  • 5. Pour ketchup and remaining 1 cup of water over brisket; return to stove, cover and cook over low heat for another hour. Remove to platter, and serve with rice or potatoes.

1 tablespoon vegetable oil
1 (4 pound) beef brisket
ground black pepper to taste
2 onions, thickly sliced
2 cloves garlic, peeled and cut in half
salt and pepper to taste

Steps:

  • Heat the oil in a large deep skillet or pot over medium-high heat. Season the brisket generously with black pepper. Place in the pan and cook until the surface is a rich brown color, not burnt, but dark. Lift the roast and scatter the onions in the pan. Place the uncooked side of the roast down onto the onions. Repeat the browning process.
  • Add the garlic to the pan, and fill with enough water to almost cover the roast. Bring to a simmer. Reduce heat to low and cover with a lid or tight-fitting aluminum foil. Simmer for 4 hours, turning the roast over once halfway through. The roast should be fork tender.
  • Remove the brisket to a serving platter. Bring the broth in the pan to a simmer, scraping the bottom to loosen any browned bits. Cook until reduced to a thin gravy. Taste and season with salt and pepper if needed.

3 tablespoons Worcestershire sauce
1 tablespoon chili powder
2 garlic cloves, minced
1 teaspoon celery salt
1 teaspoon pepper
1 teaspoon liquid smoke, optional
1 fresh beef brisket (6 pounds)
1/2 cup beef broth
2 bay leaves
BARBECUE SAUCE:
1 medium onion, chopped
2 tablespoons canola oil
2 garlic cloves, minced
1 cup ketchup
1/2 cup molasses
1/4 cup cider vinegar
2 teaspoons chili powder
1/2 teaspoon ground mustard

Steps:

  • In a large bowl or shallow dish, combine the Worcestershire sauce, chili powder, bay leaves, garlic, celery salt, pepper and, if desired, liquid smoke. Cut brisket in half; add to bowl and turn to coat. Cover and refrigerate overnight., Transfer beef to a 5- or 6-qt. slow cooker; add broth and bay leaves. Cover and cook on low for 6-8 hours or until tender., For sauce, in a small saucepan, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the remaining ingredients; heat through., Remove brisket from the slow cooker; discard bay leaves. Place 1 cup cooking juices in a measuring cup; skim fat. Add to the barbecue sauce. 2 onions (peeled and chopped)
4 pounds beef brisket (NOT corned)
4 cloves garlic (minced)
5 carrots (cut into chunks)
1/4 cup ketchup
2 tablespoons red wine vinegar
2 tablespoons brown sugar
1 teaspoon salt
1 teaspoon dried marjoram leaves
1/8 teaspoon pepper
3 tablespoons flour
1-1/2 cups water (divided)
1 tablespoon Worcestershire sauce

Steps:

  • Place the onions in the bottom of a 5- to 6-quart slow cooker, then place the brisket, fat side up, on top of the onions.
  • Sprinkle the garlic on top of the beef. Surround the meat with the chunked carrots, and any other root vegetable you'd like.
  • Combine the ketchup, vinegar, brown sugar, salt, marjoram, and pepper in a small bowl and then rub into the beef.
  • Pour 1 cup water into the slow cooker over the vegetables; don't pour over the meat, or you'll wash off the seasoning mixture.
  • Cover the crockpot and cook on low for 8 to 10 hours or until the meat is very tender.
  • To make the gravy, remove the brisket, onions, and carrots and any other vegetables from the slow cooker, place on a serving plate, and cover tightly with foil to keep warm.
  • Pour the liquid from the crockpot into a large saucepan.
  • Mix the flour with 1/2 cup water, add to the saucepan, and bring to a boil, stirring the gravy frequently with a wire whisk. Boil until the gravy is thickened; then add the Worcestershire sauce.
  • Season the gravy with salt as needed until the flavor comes to life.
  • Slice the meat and serve with gravy, onions, and carrots.

1.2kg brisket, rolled
2 tbsp vegetable oil, plus extra for drizzling
2 large onions, sliced
4 tbsp plain flour
500-550ml golden ale
1 tbsp yeast or beef extract
1 tbsp dark brown soft sugar, plus extra to taste
1 tbsp balsamic vinegar, plus extra to taste
1⁄2 bunch of thyme
2 bay leaves
500ml hot beef stock
2 tsp cornflour (optional)
2kg Maris Piper or other floury potatoes, chopped
4 tbsp horseradish
100g butter
100g crème fraîche
handful of parsley, chopped

Steps:

  • Season the brisket all over with salt and pepper. Heat the vegetable oil in a frying pan (or use the sear function on your slow cooker) and sear the meat all over until browned. Transfer to a plate. Add another drizzle of oil, if needed, and fry the onions with a pinch of salt until lightly golden, about 12 mins. Sprinkle over the flour, stir until well-mixed, then pour in the ale and scrape the bottom of the pan to pick up any browned bits. Tip everything into the slow cooker (if using a frying pan).
  • Add the yeast or beef extract, sugar and vinegar, then the beef and herbs. Top up with stock until the brisket is just over half submerged. Cover and cook for 7-8 hrs on low until tender. Remove the meat from the slow cooker and cover to keep warm. Use the reduce or simmer function on your slow cooker and simmer for 10-15 mins until the gravy has thickened to your liking. If your slow cooker doesn't have a simmer function, pour the gravy into a pan and simmer on the hob until thickened. Add a pinch more salt, sugar or a dash more vinegar if needed. If you like your gravy to be extra-thick, mix the cornflour with a splash of cold water, then add to the pan and bubble for a few minutes.
  • Just before you remove the meat from the slow cooker, start on the mash. Cook the potatoes in a pan of boiling salted water for 20 mins until very tender when pressed. Drain and steam-dry for a few minutes before mashing with the horseradish, butter and crème fraîche. Scatter with parsley to serve. Cut the brisket into wedges and serve with the gravy and mash.
