16 cups pure apple juice or fresh apple cider
Four 2-inch cinnamon sticks
2 oranges, peels and juice
8 whole cloves
6 star anise

Steps:

  • Combine all the ingredients in a saucepan and simmer over low heat for 5 to 10 minutes. Pour into mugs and serve.

1/2 gallon fresh, unfiltered apple cider (non-alcoholic)
1 orange
12 whole cloves
4 (3-inch) cinnamon sticks
15 allspice berries
1/4 teaspoon freshly ground nutmeg
7 whole cardamom pods
2 tablepoon brown sugar, optional

Steps:

  • Simmer the apple cider with orange and spices: Pour the apple cider into a 3-quart saucepan, cover, turn the heat on medium-high. While the cider is heating up, take a vegetable peeler and peel away a couple thick strips of peel from the orange. Press about half of the cloves into the peeled part of the orange. (You can also just quarter the orange and add the slices and cloves separately. I just like seeing the orange bob up and down.) Place orange, orange peel strips, the remaining cloves, and the rest of the ingredients into the sauce pan with the cider. Keep covered and heat the mulled cider mixture to a simmer and reduce heat to low. Simmer for 20 minutes on low heat.
  • Strain out the orange and spices: Use a fine mesh sieve to strain the hot mulled cider away from the orange, cloves, and other spices. If you want, you can add a touch of bourbon, brandy, or rum to spike it up a bit. Serve hot. Add a cinnamon stick to each cup if desired.

2 whole allspice
1 bay leaf
3 quarts apple cider or apple juice
1/4 cup orange juice
1/4 cup lemon juice
1 tablespoon grated orange zest
2 tablespoons brown sugar
Dash salt
1 to 1-1/2 cups brandy, optional

Steps:

  • Place the cinnamon stick, cloves, allspice and bay leaf on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag. , In a large saucepan, combine the apple cider, juices, orange zest, brown sugar, salt and spice bag. Bring to a boil. Reduce heat to medium-low and simmer mixture for 30 minutes to blend flavors. Discard spice bag. Strain cider mixture and stir in brandy if desired. Serve immediately.

Steps:

  • Place cloves, allspice berries, and cinnamon stick pieces in the center of a small piece of cheesecloth. Bring the ends of the cheesecloth together and tie securely with kitchen string.
  • Combine cider, brown sugar, and spice bag in a large kettle over medium-high heat; bring to a simmer. Simmer for 5 minutes. Discard spice bag.

1 cup calvados
1 lemon, juiced
1/3 cup honey
3 cinnamon sticks, plus more for serving
3 cloves
1 star anise

Steps:

  • Special equipment: a 6- to 7-quart slow cooker and a cheesecloth square
  • Combine the apple cider, hard cider, calvados, lemon juice and honey in a 6- to 7-quart slow cooker. Place the cinnamon, cloves and star anise in a square of cheesecloth, tie the ends together to close and toss in the slow cooker. Heat on high to bring to a simmer. Then turn to the warm/hold setting. Serve the cider in a mug with a cinnamon stick.

This is a recipe for a hot beverage we enjoy on cold winter evenings. When curled up with a good book in front of a blazing fire, nothing tastes better than cider. Preferably, it is made with cloudy, unfiltered sweet cider, the fresh juice of pressed apples, which I combine with cloves, allspice berries and cinnamon sticks. After being steeped together like tea, the cloves and allspice come to the top and can be removed before serving, and the stick of cinnamon, which sinks to the bottom, can be served with the liquid. Add bourbon or rum if you wish.

12 allspice berries

2 sticks cinnamon, broken into pieces
6 tablespoons bourbon (optional)

Steps:

  • Place all ingredients but the bourbon in a saucepan and heat over medium heat until the mixture is just below a boil. Cover, remove from the heat and let steep 5 minutes.
  • At that point, you will notice that the allspice and cloves have floated to the top; remove and discard them. Pour a tablespoon of bourbon, if desired, into each of six mugs and pour the cider mixture over it. Spoon a few cinnamon pieces into each mug, and serve immediately.
