Here in East Hampton, NY, harvesttime means big bunches of kale from local growers. These crunchy kale chips are delicious, super healthy and easy to make. I make them with seasoning to take the flavor up a notch. For extra zip, add a dash of cayenne pepper. -Luanne Asta, East Hampton, New York

1 bunch kale, washed
2 tablespoons olive oil
1 to 3 teaspoons Old Bay Seasoning
Sea salt, to taste

Steps:

  • Preheat oven to 300°. Remove tough stems from kale and tear leaves into large pieces. Place in a large bowl and toss with olive oil and seasonings. Arrange leaves in a single layer on greased baking sheets. , Bake, uncovered, 10 minutes and then rotate pans. Continue baking until crisp and just starting to brown, about 15 minutes longer. Let stand at least 5 minutes before serving.

1 head kale, washed and thoroughly dried
2 tablespoons olive oil
Sea salt, for sprinkling

Steps:

  • Preheat the oven to 275 degrees F.
  • Remove the ribs from the kale and cut into 1 1/2-inch pieces. Lay on a baking sheet and toss with the olive oil and salt. Bake until crisp, turning the leaves halfway through, about 20 minutes. Serve as finger food.

Number Of Ingredients 9

6 cups tightly packed kale leaves (from 1 bunch), center stems and any other thick ribs removed, each torn into several pieces
1 to 2 tablespoons olive oil
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1/4 cup grated Parmigiano-Reggiano or Pecorino Romano cheese
1/4 cup pine nuts, toasted (see Cook's Note)
1 teaspoon seafood seasoning, such as Old Bay
1/8 teaspoon cayenne
Zest of 1 lemon

Steps:

  • For the classic: Preheat the oven to 300 degrees F.
  • Place the kale in a 2-gallon resealable plastic bag. Add the oil and shake and massage the kale to coat each piece entirely. Season with salt and pepper and shake again.
  • Spread the kale in a single layer on 2 large baking sheets. Bake until the leaves become crispy, 22 to 26 minutes. If any leaves remain flexible (as opposed to a crisp crunch), return them to the oven for 2 minutes more. Allow to cool completely before transferring to a serving bowl or storage container.
  • For the Italian-style: Follow the directions for the classic kale chips. Immediately after removing the kale from the oven, toss the leaves with the cheese and pine nuts until evenly incorporated throughout.
  • For the seaside spice: Follow the directions for the classic kale chips. After seasoning the kale with salt and pepper, add the seafood seasoning and cayenne to the bag and massage into the leaves. Immediately after removing the kale from the oven, toss with the lemon zest.

1 tablespoon low-sodium soy sauce
8 ounces kale leaves

Steps:

  • Preheat the oven to 300 degrees F. Line two baking sheets with parchment paper.
  • Whisk the sesame oil and soy sauce together in a large bowl until the mixture looks creamy. Add the kale and toss to coat.
  • Lay about half of the kale out on both baking sheets in a single layer, leaving a little room between leaves. You will need to bake them in batches. Bake in the middle of the oven 6 for 7 minutes, then rotate the sheets and bake until the kale is crispy, another 6 to 7 minutes. Gently transfer it to a platter to cool. Repeat for the remaining kale. Serve once cooled.
