Why wait for a picnic? Push back your furniture and pull out a blanket and spread it on the floor. Have your kids put on their shorts and sunglasses and then have the whole family sit down and enjoy this chicken salad on paper plates with some lemonade. Ah, life is good! 2 whole chicken breasts, bone-in, skin-on (4 split)
olive oil
kosher salt & freshly ground black pepper
2 -3 cups broccoli florets
1 1/2 cups good mayonnaise
2 tablespoons dry white wine
1/4 cup Dijon mustard
3 tablespoons whole grain mustard
2 tablespoons minced fresh tarragon leaves
1 cup cherry tomatoes or 1 cup grape tomatoes, halved

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the chicken breasts on a sheet pan and rub the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle. Remove the meat from the bones, discard the skin, and dice the chicken in large bite-size pieces.
  • Meanwhile, add the broccoli florets to a large pot of salted boiling water. Cook for 1 minute, until crisp tender, drain, and place into a bowl of ice water until cool. This will stop the cooking and set the bright green color.
  • For the dressing, whisk together the mayonnaise, wine, mustards, and 1/2 teaspoon pepper. Add enough sauce to the warm chicken to moisten well. Add the tarragon, broccoli, and tomatoes and mix gently to combine. Season with salt to taste. Refrigerate for a few hours to allow the flavors to blend. Serve at room temperature.

Packed full of yum! This small-batch chicken salad has yellow and Dijon mustard plus a little ranch dressing for the most flavorful lunch ever.

1 boneless, skinless chicken breast, cooked, thinly sliced
1 red pepper, diced
4 celery sticks, diced
1/2 red onion, finely chopped
3 tsp yellow mustard
1 tsp Dijon mustard
2 tbsp Ranch salad dressing
salt and pepper, to taste

Steps:

  • Add chicken and vegetables to a medium bowl.
  • Add yellow mustard, Dijon mustard and Ranch dressing. Stir to combine. Season with salt and pepper. Store in the refrigerator until ready to serve.

We love chicken salad, so I like to make variations and try them. I serve this honey mustard chicken salad on small buns found in my local bakery. Very good.

2 breast half, bone and skin removed (blank)s chicken breasts, cooked and chopped
2 cups seedless red grapes, halved
2 cups diced apples
½ cup chopped celery
½ cup chopped walnuts
½ cup mayonnaise
¼ cup honey
3 tablespoons Dijon mustard

Steps:

  • Combine chicken, grapes, apples, celery, and walnuts in a large bowl. Combine mayonnaise, honey, and Dijon mustard in a small bowl, stirring well. Gently stir into chicken mixture. Cover and chill.
