HONEY WHEAT BREAD



Honey Wheat Bread image

This no yeast, quick whole wheat honey bread provides a crumb which is dense & soft that is just great toasted! This recipe is really too simple not to try.

Number Of Ingredients 7

3 cups whole wheat flour (468 grams)
2 teaspoon baking soda
¼ teaspoon salt
2 cups buttermilk (or sour milk)
¼ cup honey
2 tablespoons olive oil
1 tablespoon sunflower seeds (Optional, to sprinkle over the top.)

Steps:

  • Preheat oven to 300℉ (150ºC).
  • Spray 9" x 5" (2 L) loaf pan with non-stick spray.
  • In a very large mixing bowl, whisk together the whole wheat flour, baking soda and salt. Set aside.
  • In a medium bowl, whisk buttermilk, honey and oil together.
  • Combine this mixture to the dry ingredients and mix only until combined with a wooden spoon.
  • Place batter in a pan.
  • If using, sprinkle top with sunflower seeds.
  • Bake for approximately 55 minutes or until done.
  • Remove from the oven and let cool on a wire rack for about 10 minutes before removing bread from pan. Cool completely before slicing.

This is so far the BEST yeast free bread that I have baked for my daughter who has candida. It tastes really nice, holds together well and is so quick and easy to make. I adapted this recipe from an Irish Soda Bread recipe called Wheaten Bread which I found on an untitled web site.

Number Of Ingredients 8

3 cups whole wheat flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda (baking soda)
1/4 cup rolled oats
1/2 teaspoon salt
1 tablespoon sugar (I use sweetener as my daughter has candida)
1 1/2 tablespoons butter, softened
2 cups rice milk (or preferred milk incl. buttermilk)

Steps:

  • Pre-heat oven to 200 deg.celsius (392 deg. fahrenheit).
  • Combine all dry ingredients then mix butter through well with a fork.
  • Add milk (and sweetener if it is a liquid) mix until well combined.
  • Put mixture into a greased loaf tin and bake for 50 minutes.
  • Remove bread from tin and cool on a rack.

I'm 12 years old and make this bread with my mother, who got the recipe from her mother. I usually make the dough, and my mom bakes it.

Yield 2 loaves (16 slices each).

Number Of Ingredients 8

1 package (1/4 ounce) active dry yeast
3 cups warm water (110° to 115°), divided
3/4 cup canola oil
1/4 cup sugar
1/4 cup molasses
1 tablespoon salt
7 to 7-1/2 cups all-purpose flour
3 cups whole wheat flour

Steps:

  • In a large bowl, dissolve yeast in 3/4 cup warm water. Add the oil, sugar, molasses, salt and remaining water. Combine flours; add 4-5 cups flour to mixture. Beat until smooth. Add enough remaining flour to form a firm dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Shape each portion into a loaf. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until doubled, about 30 minutes. , Bake at 350° until golden brown, 40-45 minutes. Remove from pans to cool on wire racks.

Number Of Ingredients 5

3 cups whole wheat flour (preferably stone ground)
4 teaspoons baking powder
1 teaspoon salt
1 1/2 cups rice milk (works with any liquid) or 1 1/2 cups water (works with any liquid)
1/4 cup liquid fat (i.e. melted milk free margarine, vegetable oil, olive oil)

Steps:

  • Mix dry ingredients.
  • Do not sift the flour!
  • Mix liquids and add to dry.
  • Stir until there is no more dry flour.
  • Depending on the humidity of the air where you live you may need a little bit more or less liquid.
  • The dough should be moist but not sticky.
  • It may take a few minutes for the flour to fully absorb the liquid, so don't rush to add liquid or flour to it.
  • Score lightly the surface in a diamond or X shape to prevent splitting of the crust.
  • This is a country style bread that should be sliced thick.
  • It is important not to overwork the dough.
  • Shape into a ball or an oval, with oiled hands.
  • Place on clean baking sheet.
  • Bake for 40 minutes at 400°F.
  • Variations: Rub the dough ball with virgin olive oil and sprinkle sea salt and oregano for a foccacia flavor.
  • For tea time add a tsp pure cane sugar.
  • The liquid can be replaced for orange or other fruit juice if the bread is to be used for teatime and you can even add dried chopped fruits.
  • For a savory bread the liquid can be tomato juice and you can add chopped sundried tomatoes to the dough.
  • Sprinkling of seeds in the dough or on top of the bread is also possible.

Line a baking sheet with parchment paper or a silicone baking mat, use a seasoned 10-12 inch cast iron skillet, or grease a 9-10 inch cake pan or pie dish. Set aside. Feel free to pre-heat the skillet in the oven too, though that’s not necessary.
  • Whisk the melted butter and honey/sugar together. Pour into the flour mixture and toss to combine. (The mixture won’t fully combine yet since there’s so little wet ingredients and so much flour.) In 2-3 additions, pour in the buttermilk mixing for 15-20 seconds after each addition. After all of the buttermilk has been added, mix gently to form a shaggy, stiff, and slightly moist dough. If you used honey, there could be little specks of honey/butter in spots. That’s ok! Those will be extra flavorful specks in your bread.
  • Pour the shaggy dough and any flour crumbles that haven’t been incorporated onto a lightly floured work surface. With floured hands, work the dough into a ball and flatten into a (approximately) 7-8 inch disc as best you can (make it about 2 inches tall). If the dough is too sticky, add a little more flour.
