SLOW-COOKER FREEZER-PACK GUMBO



Slow-Cooker Freezer-Pack Gumbo image

This shortcut gumbo eliminates the tricky step of cooking a roux for thickener. Instead, a small amount of rice cooked low and slow gives the stew just the right amount of body. With a bag of prepped ingredients in your freezer ready to go, you can serve this crowd-favorite even on a weeknight.

1 pound boneless skinless chicken thighs, cut into 2-inch pieces
1 pound andouille sausage, thinly sliced
1 large onion, chopped into 3/4-inch pieces
1 green bell pepper, cut into 3/4-inch pieces
2 stalks celery, cut crosswise into 3/4-inch pieces
One 16-ounce bag frozen sliced okra
1/4 cup long-grain white rice
3 tablespoons Cajun seasoning
One 28-ounce can diced tomatoes
Kosher salt and freshly ground black pepper
Hot sauce and crusty bread, for serving

Steps:

  • Layer the chicken, sausage, onion, bell pepper, celery, okra, rice, and Cajun seasoning into a large resealable plastic bag. Pour the diced tomatoes over the ingredients in the bag. Add 1 teaspoon salt and 1/4 teaspoon pepper. Squeeze out the air from the bag and seal. Freeze until ready to use, up to 3 months. Thaw in the refrigerator for at least 24 hours before cooking.
  • Pour the contents of the bag into a 6-quart slow cooker. Add 1 cup water. Cook on low until the chicken is tender and the flavors meld, 6 to 8 hours. Season with salt. Serve with hot sauce and bread.

1 tablespoon grapeseed or other neutral oil
1 medium yellow onion, chopped
1 poblano chili OR 1 small green bell pepper, stemmed, seeded and chopped
2 teaspoons cumin seeds OR coriander seeds, lightly crushed
Kosher salt and ground black pepper
28 ounce can whole peeled tomatoes, crushed by hand
1 teaspoon white sugar OR packed light brown sugar
1 pound okra, stemmed and sliced into ½-inch rounds
3 scallions, thinly sliced
Hot sauce, to serve

Steps:

  • In a large Dutch oven over medium-high, heat the oil until shimmering. Add the onion, chili, cumin and a pinch each of salt and pepper. Cook, stirring occasionally, until the vegetables are lightly browned, about 4 minutes.
  • Add the tomatoes with juices, the sugar and 1 cup water. Bring to a boil, then add the okra. Cover, reduce to medium and cook, stirring occasionally, until the okra is tender, 10 to 12 minutes. Taste and season with salt and pepper. Serve sprinkled with the scallions and with hot sauce on the side.

5 lbs fresh okra
6 medium onions, diced
2 green bell peppers, chopped
2 garlic cloves, minced
4 celery ribs, chopped
15 ounces tomato sauce
4 bay leaves
1 tablespoon salt (to taste)
1 tablespoon black pepper

Steps:

  • Rinse okra well. Let dry completely. Slice into 1/2 inch rounds, discarding the stem portion. Dice and chop remaining vegetables.
  • Place all ingredients in a roasting pan and cook covered at 300 degrees.
  • After one hour uncover and stir. Recover and cook another hour.
  • Cool completely and spoon into 4 one pint freezer containers.

1 tablespoon vegetable oil
1 clove garlic, minced
1 medium onion, finely chopped
1 medium green bell pepper, finely chopped
½ (16 ounce) package frozen okra, thawed and sliced
8 ounces fresh mushrooms, sliced
1 (14.5 ounce) can diced tomatoes with juice
1 (6 ounce) can tomato paste
½ teaspoon file powder
2 bay leaves
1 teaspoon salt
1 teaspoon ground black pepper
2 tablespoons vegetable oil
2 tablespoons all-purpose flour

Steps:

  • Heat 1 tablespoon oil in a large saucepan over medium heat. Stir in garlic, onion, and green bell pepper, and saute until tender. Stir in okra, mushrooms, diced tomatoes and their liquid, tomato paste, file powder, bay leaves, salt, and pepper. Cook, stirring occasionally, 40 minutes.
  • Heat 2 tablespoons oil in a medium skillet over medium heat. Stirring constantly, add flour, and cook 2 to 5 minutes, until a golden brown roux has formed.
  • Spoon the roux into the okra mixture, and continue to cook, stirring occasionally, 5 to 10 minutes, until thickened.
