BROWN SUGAR OATMEAL COOKIES
These Brown Sugar Oatmeal Cookies are a dark, magical cookie that's as good at room temperature as it is warm straight out of the oven.

- Preheat the oven to 350 F.
- In the bowl of an electric mixer (or using a hand mixer) beat together the butter and brown sugar until fluffy. Beat in vanilla. Add eggs, one at a time, scraping the bowl after each one.
- Mix together the flour, salt, and baking soda in a medium sized bowl. Add it into the creamed mixture in 2 to 3 batches, mixing it until just combined. Mix in the oats until just combined.
- Use your preferred size cookie scoop (or a regular spoon) to drop portions of dough onto a lightly greased cookie sheet, spacing them a couple inches apart. Bake for 12-13 minutes or until dark and chewy. If you'd like a crispier cookie, just cook a little longer!
- Let them cool slight on the pan after removing from the oven, then transfer the cookies onto a plate for serving.* Note: Add 1/2 cup finely chopped nuts to the flour mixture if you'd like a nutty flavor and crunch.

- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs, lemon zest and lemon juice. In another bowl, whisk flour, oats, baking powder and salt; gradually beat into creamed mixture. Refrigerate, covered, 2 hours or until firm enough to shape., Preheat oven to 375°. Shape level tablespoons of dough into balls; place 2 in. apart on parchment-lined baking sheets. Coat bottom of a glass with cooking spray, then dip in sugar. Press cookies with bottom of glass to flatten, redipping in sugar as needed., Bake until edges are light brown, 6-8 minutes. Remove from pans to wire racks to cool.

SUGAR-FREE OATMEAL COOKIES
Fast easy oatmeal cookies for the dieter or diabetic in the family. You can add raisins or craisins. This recipe came from a friend and then I changed it to add the splenda instead of sugar. For the oatmeal, I personally used the 3-minute type. I like the cookies because I love cookies and since I am now diabetic I can't have any so of course I think these are great!

- Combine in a separate bowl, flour, salt and soda and cinnamon.

- Makes 5 dozen small or you can make them larger.
