The BEST oatmeal pancakes! Healthy and easy oatmeal pancakes with yogurt and oat flour made right in your blender. Gluten free!

Number Of Ingredients 12

2 tablespoons canola oil (or melted, cooled unsalted butter or melted, cooled coconut oil)
3/4 cup nonfat plain Greek yogurt
1/2 cup nonfat milk
2 cups old-fashioned oats (, divided (or quick oats; do not use steel cut or instant))
2 large eggs
3 tablespoons pure maple syrup
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
1 tablespoon baking powder
1/2 teaspoon kosher salt
1/2 cup mix-ins of choice: toasted chopped nuts (, chocolate chips, blueberries, or diced fresh or dried fruit (optional))
For serving: pure maple syrup (, butter, or any of your favorite pancake toppings)

Steps:

  • If you'd like to keep the pancakes warm between batches, place a rack in the center of your oven and preheat the oven to 200 degrees F.
  • Place the oil, Greek yogurt, milk, 1 1/4 cups oats, eggs, maple syrup, vanilla, cinnamon, baking powder, and salt in a blender.
  • Blend until the batter is smooth, stopping to scrape down the sides of the blender as needed. Continue blending until you don't see any remaining bits of oats.
  • Stop the blender, stirring the remaining 3/4 cup oats and any desired mix-ins. Do not blend again. Let the batter sit for 10 minutes while you heat the skillet/griddle and prep any toppings.
  • Heat a large nonstick skillet or griddle over medium-low heat. Lightly butter or oil the pan if needed (some nonstick pans do not need this).
  • Once the skillet is hot, drop the batter by 1/4 cupful into the pan. Let cook gently for 3 to 4 minutes on the first side, until the pancakes look dry at the edges and small bubbles form on top.
  • Gently flip, then cook on the other side for 1 to 2 minutes. They should look golden on both sides. If desired, transfer the pancakes to a baking sheet and keep them warm in the oven between batches. Repeat with the remaining batter.
  • Serve hot with desired toppings.

Greek yogurt goes fantastically with hot oats and makes it creamier, adds protein, and most important of all makes a standard bowl of oatmeal phenomenal! Sprinkle with some more cinnamon, if you desire.

½ banana, sliced
½ teaspoon ground cinnamon
1 pinch salt
1 cup water
¼ cup Greek yogurt
2 tablespoons strawberry jam
1 tablespoon peanut butter

Steps:

  • Combine oats, banana, cinnamon, and salt in a microwave-safe bowl; add water and stir. Cook in microwave until water is absorbed, 2 to 3 minutes. Stir to evenly distribute cinnamon; let stand until slightly cooled, about 3 minutes.
  • Spoon Greek yogurt, strawberry jam, and peanut butter over oatmeal; stir.

Steps:

  • Whisk yogurt in a bowl until smooth creamy; add egg and whisk to combine.
  • Whisk flour and baking soda together in a bowl; add to yogurt mixture and stir until smooth.
  • Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

When I made these I did end up adding milk to thin the batter. I let the mixture sit while preparing a quiche to allow the oats to soften. Which resulted in adding more milk to thin the batter. I cooked these on my indoor grill 4 minutes on each side. I topped these pancakes with a mixture of greek yogurt and sugar free strawberry preserves. This came from Voskos Greek Yogurt.

1 egg, beaten
1 cup voskos Greek yogurt (plain)
1/2 cup quick-cooking oats
1/2 cup flour
2 tablespoons sugar
2 tablespoons oil
1 teaspoon double-acting baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
milk (optional)
fruit preserves

Steps:

  • In a bowl, stir the yogurt into the egg, then add the oats, flour, sugar, oil, baking powder, baking soda, salt, and cinnamon. (if you want a thinner batter, add some milk.).
  • Pour about 3 tablespoons of the batter onto a heated griddle or "platter" and cook until puffed and lightly golden on both sides.
  • These nutritious pancakes are traditionally serve with fruit preserves.

1 1/2 cups oatmeal
1/2 cup milk
milk
1 cup flour
2 tablespoons brown sugar
2 teaspoons cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
2 cups yogurt
1 teaspoon vanilla
3 egg whites
2 tablespoons peanut butter

Steps:

  • In one bowl, pour the milk over the oatmeal to soak.
  • Mix the dry ingriedience in one bowl.
  • Mix the other ingredience in another.
  • Combine all of the bowls together.
  • Add milk until it is the right consistency.
  • Pour 1/3 cup of batter into a greased frying pan on medium heat.
  • Tip shake the frying pan to get the pancake to spread out.
  • Cook until the sides of the pancake pull up from the pan about five minutes. DO NOT OVERCOOK. It blackens quickly.
  • Flip the pancake over and cook for another minute or so.
  • Serve with butter.
  • Batter will keep overnight.

  • Melt the butter. Place all ingredients in a blender and blend on high until a smooth batter forms.
  • Lightly grease a skillet with butter and wipe off extra grease with a paper towel. Heat the skillet over low heat. Pour the thickened batter into small circles (about 1/3 cup each). Cook the pancakes until the bubbles pop on the top and the bottoms are golden: low and slow is the key! Then flip them and cook until golden on the other side.
  • Add 1 tablespoon milk to the remaining batter and stir so that it is pourable. Cook the remaining batter, adjusting the heat as necessary (the skillet can get very hot on the second batch). Place the cooked pancakes under an inverted bowl to keep them warm. Serve immediately with maple syrup.

  • Add all of the ingredients (except optional mix-ins) to a blender and blend on high until completely smooth, about 30 seconds to 1 minute. Let the batter sit in your blender for 10 minutes; this is important to allow the batter to thicken up properly, so please do not skip!
  • After 10 minutes, lightly coat a griddle with butter or olive oil and place over medium heat. Once the pan is hot, add approximately 1/4 cup of the batter to the griddle for each pancake. Immediately add 5-6 blueberries or chocolate chips per pancake and cook for 2-4 minutes until pancakes slightly puff up and you see a few bubbles along the edges.
  • Flip cakes and cook until golden brown on underside. If you find that pancakes are browning too quickly then you need to lower the heat. I normally start on medium heat, then decrease to medium low later so that my pancakes don't burn. If at any point your griddle starts smoking or if your pancakes are quickly burning, it means your pan is too hot.
  • Wipe skillet clean and repeat with more oil and remaining batter. Makes 6 pancakes total. Serves 2, 3 pancakes each.
