Soft and chewy healthy oatmeal cookies are made with oats, honey, coconut oil, chopped nuts, raisins, chocolate chips, and much more! They're super nutritious and make a great snack or even breakfast.

1/3 cup honey or maple syrup (can use 1/2 cup for sweeter cookies)
1/4 cup coconut oil or unsalted butter ((melted))
1 large egg
1 tsp vanilla extract
1 cup instant oats
1/2 cup whole wheat flour ((or all-purpose flour))
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/4 cup chocolate chips ((optional))
1/4 cup raisins

Steps:

  • Preheat oven to 350F. Line a baking sheet with parchment paper, foil or silicone baking mat and set aside.
  • In a large bowl, whisk the honey, coconut oil, egg, and vanilla. In a medium bowl whisk, all the dry ingredients then stir them into the wet mixture.
  • Drop cookie dough onto the prepared baking sheet using a medium-large cookie scoop and flatten to about ¾'' thickness. Bake 10 minutes then allow in the pan for at least 5-10 minutes and enjoy!

1 ¼ cups quick oats
1 cup white whole wheat flour
1 ½ teaspoons baking powder
1 ½ teaspoons ground cinnamon
½ teaspoon kosher salt
½ cup honey
¼ cup unsweetened applesauce
4 tablespoons unsalted butter, melted and cooled
1 large egg
1 teaspoon vanilla extract
⅓ cup dark chocolate chips
¼ cup chopped walnuts

Steps:

  • Whisk oats, flour, baking powder, cinnamon, and kosher salt together in a large bowl.
  • Combine honey, applesauce, butter, egg, and vanilla extract in a medium bowl. Whisk until blended. Pour into the bowl with the flour mixture; stir until just combined. Fold chocolate chips and walnuts into the batter.
  • Place batter in the refrigerator and let chill at least 30 minutes or up to 3 days.
  • When ready to bake, preheat the oven to 350 degrees F (175 degrees C) and place a rack in the center. Line a large, rimmed baking sheet with parchment paper or a silicone baking sheet.
  • Remove chilled dough from the refrigerator. Let sit for 5 to 10 minutes if very stiff.
  • Drop dough onto the prepared baking sheet in 1 1/2-inch balls using a cookie scoop or spoon, leaving 1 inch of space around each. Gently flatten each cookie with your fingers to 3/4-inch thick.
  • Bake in the preheated oven until golden, firm around the edges, and set on top, 9 to 10 minutes.
  • Place the baking sheet on a wire rack. Let cool on the baking sheet for 2 minutes before transferring cookies to the wire rack to cool completely.

Any amount of the following: chopped dates, figs, raisins, currants, chocolate chips, chopped nuts

Steps:

  • Preheat oven to 350 degrees F. Grease a cookie sheet. Using a mixer with the paddle attachment, mix together the butter, brown sugar, honey, egg and water thoroughly. Sift together the dry ingredients then stir in the oats. Add the dry ingredients to the wet and mix. Add any additional ingredients you've chosen. Drop by heaping teaspoonfuls onto the cookie sheet. Bake 12 to 15 minutes. Cool on a wire rack.

1/4 cup canola oil
1/2 cup honey
1 large egg
1/4 cup smooth unsalted almond butter
1/2 teaspoon vanilla extract
1/4 cup nonfat dry milk
1 cup whole-wheat pastry flour (or 1/2 cup each all-purpose and whole-wheat flour)
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 3/4 cups rolled oats
1/2 cup raisins

Steps:

  • Preheat the oven to 350 degrees F. Mist 2 baking sheets with cooking spray. Beat the butter, canola oil, honey, egg, almond butter and vanilla extract in a large bowl with a mixer until combined.
  • In another bowl, whisk the dry milk, flour, baking soda, cinnamon and salt. Add the flour mixture to the butter mixture and stir to combine. Stir in the oats and raisins.

1 cup dark brown sugar, firmly packed
1/2 cup honey
1 large egg
1 1/2 teaspoons vanilla
1 1/2 cups Pillsbury BEST® All Purpose Flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
3 cups rolled oats, quick
1 cup raisins
1/2 cup pecans, coarsely chopped

Steps:

  • HEAT oven to 350°F Spray baking sheets with no-stick cooking spray.
  • COMBINE shortening, brown sugar, honey, egg and vanilla in bowl of electric mixer. Beat at low speed until blended. Increase speed to medium. Beat until light and creamy.
  • COMBINE flour, cinnamon, baking soda and salt in medium bowl. Add gradually to shortening mixture at low speed. Increase speed to medium. Beat until well blended. Stir in oats, raisins and pecans. Drop by heaping tablespoonfuls onto prepared baking sheet.
  • BAKE 10 to 13 minutes or until golden brown. Cool 2 minutes on baking sheets. Place on cooling racks to cool completely.
  • TIP - For smaller cookies, drop dough by heaping teaspoonfuls. Bake 8 to 10 minutes. Makes 4 to 5 dozen cookies.
