GRANOLA COOKIES RECIPE
If you like oatmeal cookies you will love these crunchy and chewy granola cookies made with granola cereal. Easy to make and addictive!

Steps:
- Heat oven to 350 degrees.
- Melt butter and mix with sugar and brown sugar in large bowl until sugars are dissolved.
- Add vanilla and egg and mix until thoroughly combined.
- In another bowl, combine flour, baking soda, salt.
- Add dry ingredients to the bowl with the butter mixture.
- Add granola and mix until a dough forms.
- Drop by rounded tablespoonful onto a greased cookie sheet 2 inches apart.
- Bake for 10-12 minutes at 350. Bake for 10 minutes for a chewier cookie and 12 minutes for a crunchy cookie.

MAKE-AHEAD BREAKFAST GRANOLA COOKIES

- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
- Mix the peanut butter, brown sugar, vanilla, cinnamon and eggs in a large bowl with a handheld mixer until smooth. Add the oats, cranberries and pepitas and mix until just combined. Use a 1/4-cup dry measuring cup or 1/4-cup ice cream scoop to scoop the dough onto the baking sheets, leaving at least 1 inch between scoops, making about 9 per tray. Flatten the scoops slightly with the back of a spoon. Bake until the cookies are starting to brown, 10 to 12 minutes.
- Let them sit on the baking sheets for a couple of minutes to let them set up a little bit. Serve warm, or let cool completely, then store in an airtight container for up to a week. Also great for freezing and eating straight out of the freezer! Serve with Greek yogurt for slathering or dipping, if using.
OATMEAL GRANOLA COOKIE BALLS
The title is the best way to describe these healthy treats. It is technically a cookie, but does not bake like one. They taste like a nutrition bar, but in a ball form. They're packed with healthy fats and grains and are perfect little snacks for adults and kids. My daughter favors these cookies over regular ones.

- Mix wet ingredients. Mix dry ingredients. Combine until well incorporated.
- Use a cookie scoop to form dough into balls. Arrange on cookie sheet (no need to spread out, cookie does not spread during cooking). Bake at 350 degrees for 9 minutes.

OATMEAL COOKIE GRANOLA
This smells so good while cooking! Makes a great cereal or snack, and of course tastes like a great oatmeal cookie. The directions call for cooking on a greased cookie sheet but I used a silpat mat and it worked great.

- Preheat oven to 300 degrees.
- Combine oats, flax, brown sugar, salt, cinnamon, and nutmeg in a large bowl.
- In a small saucepan, melt butter and add honey.
- Once it starts to simmer, remove from heat and quickly stir in extract. Mix well, and pour over dry mixture. Mix to coat thoroughly, and place on a greased cookie sheet.
- Place into the oven and bake for 20-25 minutes, until done.
- Allow to cool completely, break into large pieces and store in an airtight container.
- *Note - granola nuggets form better if you stir the granola as little as possible while baking, and don't stir it at all while it's cooling.

OATMEAL GRANOLA COOKIES
I was in the supermarket one day shopping for a muffin recipe from the Barefoot Contessa. I had picked up french vanilla granola in hopes of using it in the recipe, but when I got home and tasted it the first thing I thought of was oatmeal cookies. So, the kids and I came up with this one. We get around 3 dozen or so from this recipe.

- Preheat oven to 350. In a bowl mix flour, salt, baking soda, baking powder and spices till well blended. Set aside.
- In another bowl, beat butter, shortening and sugars until light and creamy. Then add the eggs one at a time until they are blended. Add the vanilla beat until well blended, about a minute.
- Add the flour mixture to the butter and sugar mixture. When dough is well blended, fold in fruit, oats and granola. Break your granola into manageable pieces if needed.
- Drop by rounded teaspoon onto pan. We lined our pans with wax paper but whatever you choose to do to your pans is up to you. Bake for 10 - 12 minutes. Oven temps vary, so keep an eye on your cookies !

NO-BAKE ENERGY BITES
This is a healthy take on the traditional no bake cookies. So good and good for you! I am always asked for this recipe every time I make them. They are a hit with the kids and the adults, and always go quick! I store them in the freezer because I think they taste best frozen, but not necessary.

- Preheat oven to 325°F (163°C). Line an 8-inch square baking pan with parchment paper with enough overhang on the sides to easily remove the bars from the pan. Set aside.
- Transfer mixture to prepared baking pan and press very firmly into an even layer. You really want it packed in tight- as tight as possible. Bake for 25-28 minutes or until top appears set and it’s golden brown around the edges. Remove from the oven and allow to cool completely in the pan set on a wire rack for 1 hour, then transfer to the refrigerator to chill for 1 more hour. This firms up the bars which helps them stay compact. Remove bars from the pan using the overhang on the sides and cut into bars.
