These are the best oatmeal cookies I've ever had! Very buttery and very hearty. Any dried fruit works well such as cherries, raisins, cranberries, blueberries, or chopped apricots. For a really decadent treat, use chocolate chips and nuts instead of fruit.

1 ¼ cups butter or margarine, softened
1 ¼ cups brown sugar
1 egg
2 teaspoons vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
3 cups quick cooking oats
1 cup dried cranberries, or other dried fruit

Steps:

  • Preheat oven to 375 degrees F (190 degrees C)
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, then stir in the vanilla. Sift together the flour, baking soda, salt, cinnamon and nutmeg, gradually stir into the creamed mixture. Finally, stir in the quick oats and dried fruit. Drop by rounded spoonfuls onto the unprepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1 1/2 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 cup (2 sticks) unsalted butter, room temperature
1 cup dark-brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
2 cups old-fashioned rolled oats
2 cups dried sour cherries

Steps:

  • Preheat oven to 350 degrees. Line baking sheets with parchment paper;set aside. In a medium bowl, whisk the flour, cinnamon, salt, baking soda and baking powder; set aside.
  • In the bowl of an electric mixer fitted with a paddle attachment, or using a hand mixer, beat the butter and sugars until light and fluffy, 1 to 2 minutes. Add the eggs and vanilla, and beat to incorporate. Add flour mixture to butter mixture, beating on low speed to combine. Stir in the oats and dried cherries.
  • Using a 2-ounce scoop, drop the dough onto prepared baking sheets, leaving 6 inches between cookies. Bake until edges are just turning brown, about 20 minutes. Cool 2 minutes on baking sheet, then remove to wire racks to cool completely.

Easy one-bowl chewy cherry oatmeal cookies loaded with tart dried cherries, white chocolate chips, and hearty whole grain rolled oats. This is a cookie recipe you'll make time and time again.

½ cup dairy-free salted butter, softened
¾ cup brown sugar
1 egg, room temperature
1 tbsp. vanilla extract
1 ½ cups whole grain rolled oats
½ cup all-purpose flour
½ tsp. baking soda
½ tsp. coarse sea salt
1 cup dried cherries
½ cup dairy-free white chocolate chips *

Steps:

  • Preheat the oven to 350 degrees and line 2 cookie sheets with parchment paper.
  • In a large mixing bowl add in the melted butter, brown sugar, egg, and vanilla extract. Stir together until well combined and creamy.
  • Add in the whole grain oats, flour, baking soda, and salt. Mix until fully combined and a dough forms.
  • Add in the dried cherries and white chocolate chips. Stir until just combined.
  • Using a 1.5 tbsp cookie scoop drop the cookie dough onto the parchment-lined cookie trays approximately 3 inches apart (note that these cookies will spread) and bake for 9-11 minutes or until the edges are golden brown and the centers appear just slightly under-baked.
  • Let the cookies cool on the tray for at least 10 minutes before removing them to a cookie rack. Enjoy!
  • Store leftover cookies in an airtight container at room temperature for up to 7 days. They can also be frozen in a freezer bag or double wrapped with plastic wrap for up to 6 months.

3/4 cup/180 grams schmaltz, well chilled or frozen
1/2 cup/150 grams granulated sugar
1/2 cup/120 grams brown sugar
1 large egg
1 teaspoon/5 grams pure vanilla extract
1/2 teaspoons/3 grams cinnamon
1 teaspoon/5 grams kosher salt
1/2 cups/150 grams all-purpose flour
1 teaspoon/4 grams baking powder
2 cups/200 grams oats
2/3 cups/85 grams dried cherries (or other garnish as noted above)

Steps:

  • 1. Preheat your oven to 350°F/180°C.
  • 2. Cut the schmaltz into chunks and put it, along with both the sugars, into the bowl of a standing mixer fitted with a paddle. Mix on high until the fat is fluffy, 2 minutes or so.
  • 3. Add the egg, vanilla, cinnamon and mix on low, to incorporate.
  • 4. Combine the salt, flour, and baking powder, and add this to the mixing bowl. Paddle on medium to combine, 30 seconds or so. Add the oats and paddle to combine. Add the garnish and paddle to combine.
  • 5. Shape into golf-ball-sized orbs and put on a cookie sheet. Flatten them to your desired thickness (they won't spread much but they will puff). Bake the cookies until done, about 15 minutes.

1 cup rolled oats
1/3 cup corn syrup
1 tablespoon canola oil
2 tablespoons butter
1 large egg
1/3 cup sugar
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup chopped dried tart cherry

Steps:

  • Set oven rack in the center; preheat to 400°F .
  • Lightly oil 3 baking sheets or coat with nonstick cooking spray, and dust them with flour, shaking off excess.
  • Combine oats, corn syrup and oil in a medium bowl.
  • Melt butter in a small saucepan over low heat and cook until it begins to turn a light, nutty brown, 1 1/2 to 2 minutes. (Be careful not to burn the butter.)
  • Pour into the oat mixture and stir to combine. Set aside.
  • Beat egg and sugar in a mixing bowl with an electric mixer until thickened and pale, about 5 minutes. Blend in vanilla.
  • Stir together flour, baking powder and salt in a small bowl; fold into the egg mixture.
  • Add the oat mixture and dried cherries; stir gently to combine.
  • Spoon the batter by teaspoonfuls, about 2 inches apart, onto the prepared baking sheets.
  • Bake, one sheet at a time, for about 4 minutes, or until the cookies are golden and lacy.
  • Let cool on the baking sheet for 2 minutes, then carefully remove cookies from the baking sheet and cool on a flat surface (not a rack).

I received this an email from ATK. I substituted dried cranraisins for the dried cherries, semi-sweet chocolate chips for bittersweet chocolate and used my hand mixer. Dried cranberries may also be used instead of the cherries. Quick oats may be used instead but will yield a cookie with slightly less chewiness. These cookies will keep for 4 to 5 days stored in airtight container or zipper-lock bag, but they will lose their crisp exterior and become uniformly chewy after a day or so. I only baked one cookie tray at a time. These were very good. I froze them in individual bags for a sweet treat.

1 1/4 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon table salt
1 1/4 cups old fashioned oats
1 cup toasted pecans, chopped
1 cup dried tart cherry, chopped coarse (I used cranraisins)
4 ounces bittersweet chocolate, chopped into the size of chocolate chips (I used semi sweet chocolate chips)
12 tablespoons unsalted butter, softened, but still cool
1 1/2 cups packed brown sugar
1 large egg
1 teaspoon vanilla extract

Steps:

  • I baked the cookies only one tray at a time so I cannot vouch for the method of baking two at a time. But if you would like to bake two trays at a time adjust oven racks to upper and lower middle positions.
  • Preheat oven to 350 degrees.
  • Line 2 large (18 x 12) baking sheets with parchment paper. If you do not have this size, you will need to use 3.
  • Whisk flour, baking powder, baking soda and salt in medium bowl.
  • In second medium bowl, stir together, oats, pecans, cherries and chocolate.
  • In a standing mixer fitted with flat beater, beat butter and sugar at medium speed until no sugar lumps remain, about 1 minute.
  • Scrape down sides of bowl with rubber spatula; add egg and vanilla and beat on medium-low speed until fully incorporated, about 30 seconds.
  • Scrape down bowl; with mixer running at low speed, add flour mixture; mix until just combined, about 30 seconds.
  • With mixer still running on low, gradually add oat/nut mixture; mix until just incorporated.
  • Give dough final stir with rubber spatula to ensure that no flour pockets remain and ingredients are evenly distributed.
  • Divide dough evenly into 16 portions; about 1/4 cup each.
  • Roll between palms into balls about 2 inches in diameter; stagger 8 balls on each baking sheet, spacing about 2 1/2 inches apart.
  • Using hands, gently press each dough ball into 1 inch thickness. Bake both sheets 12 minutes, rotate them front to back and top to bottom, then continue to bake until cookies are medium brown and edges have begun to set but centers are still soft (cookies will seem underdone and will appear raw, wet and shiny in cracks), 8 to 10 minutes longer. (I baked each cookie tray individually for 18 minutes). Do Not Over Bake.
  • Cool cookies on baking sheets on wire rack 5 minutes; using wide metal spatual, transfer cookies to wire rack and cool to room tempature.
