HOW TO MAKE HOMEMADE MARINADES

How to Make Homemade Marinades image

Do you celebrate summer by grilling anything and everything? Sometimes I go a little nuts and try to make breakfast on the grill, too.

Categories     main dish     side dish

Time 5m

Yield 4 servings

Number Of Ingredients 8

1/4 c. Rice Vinegar
2 tbsp. Avocado Oil Or Other Heat-safe Oil
2 tbsp. Sesame Oil
2 tbsp. Soy Sauce Or Tamari
2 tsp. Finely Minced Garlic
2 tsp. Finely Grated Fresh Ginger
1 tsp. Sea Salt
1 tsp. Asian Garlic Chili Paste (optional)

Steps:

  • Whisk all of the ingredients together in a bowl or shake it up in a lidded container. Pour over 1 1/2 to 2 pounds of meat and let it sit for at least 3 hours up to 18 hours before cooking.

LONDON BROIL WITH ONION MARMALADE

London Broil With Onion Marmalade image

Provided by Food Network Kitchen

Time 13h30m

Yield 4 servings

Number Of Ingredients 21

4 large cloves garlic, chopped
3 sprigs rosemary, leaves roughly chopped (about 1 tablespoon)
1/2 cup balsamic vinegar
1/2 cup red wine
1/2 cup extra-virgin olive oil
Freshly ground black pepper
1 2-inch-thick piece beef top round for London broil (about 3 pounds)
Kosher salt
4 medium red onions, halved and thinly sliced
3 sprigs rosemary, leaves chopped (about 1 tablespoon)
1/2 cup balsamic vinegar
1/3 cup extra-virgin olive oil
3 tablespoons dark brown sugar
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
4 cloves garlic, peeled
1/2 teaspoon salt
8 tablespoons butter, softened
8 3/4-inch-thick slices good quality white or sourdough bread
1 bunch arugula, washed and trimmed
Mustard and/or horseradish

Steps:

  • For the meat: Mix garlic, rosemary, balsamic vinegar, wine, olive oil, and black pepper to taste in a self-sealing plastic bag or a shallow dish. Add the meat, turning to coat, and cover or seal. Refrigerate for several hours or overnight.
  • Prepare an outdoor grill with a hot fire for indirect grilling.
  • For the marmalade: On a large sheet of heavy-duty aluminum foil (or a doubled piece of regular), toss the onions with the rest of the marmalade ingredients. Bring edges of foil up and crimp closed. Place package on the edge of the grill (over medium-high heat). Cook, turning the sealed package every now and then so the onions cook evenly until meltingly tender, about 45 minutes.
  • Remove the meat from the marinade, pat it dry, and season generously with salt and black pepper to taste. Lightly oil the grill and sear the meat over high heat for 5 minutes. Then rotate it (don't turn it over yet) about 45 degrees from its original spot on the grill. Once you've made your grill mark, flip and repeat on the other side. Move the steak to the cooler side of the grill, cover with an aluminum pan, and cook, rotating (not flipping) periodically, until a meat thermometer inserted into the thickest part of the steak registers 125 degree sF, about 15 to 20 minutes. Let steak rest on a cutting board about 10 minutes.
  • For the toast: Meanwhile, sprinkle garlic cloves with salt. With the flat side of a large knife, mash and smear garlic mixture into a paste. Mix with the butter. Lightly oil the grill, place bread over direct heat, and toast on both sides until golden brown, about 2 minutes total. Remove bread from grill and spread generously with the garlic butter. Thinly slice steak against the grain on an angle. Top toasts with onion marmalade, arugula, and sliced meat. Serve open-faced with mustard and/or horseradish.

LONDON BROIL WITH HERB BUTTER

London Broil with Herb Butter image

Provided by Food Network Kitchen

Categories     main-dish

Time 5h12m

Yield 4 servings

Number Of Ingredients 13

1 beef bouillon cube
3 tablespoons extra-virgin olive oil
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
2 tablespoons fresh lemon juice
Kosher salt and freshly ground pepper
1 top round London broil steak (about 2 pounds)
4 tablespoons unsalted butter, softened
1 1/2 tablespoons chopped fresh chives
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chervil or tarragon
Kosher salt and freshly ground pepper
1 tablespoon fresh lemon juice

Steps:

  • Prepare the steak: Dissolve the bouillon cube in 3/4 cup hot water in a bowl; set aside to cool. Whisk in 2 tablespoons olive oil, the soy sauce, Worcestershire sauce, lemon juice, 1 teaspoon salt and 1/2 teaspoon pepper. Place the steak in a large resealable plastic bag, pour in the marinade and seal, squeezing out the air. Refrigerate for at least 4 hours or up to 1 day.
  • Prepare the herb butter: Mix the butter with the chives, parsley, chervil, a pinch of salt, 1/2 teaspoon pepper and the lemon juice in a bowl.
  • About 30 minutes before cooking, remove the meat from the bag (discard the marinade), dry it well and bring to room temperature. Heat a large heavy skillet over high heat, about 2 minutes. Rub the steak with the remaining 1 tablespoon olive oil. Sprinkle 1 tablespoon salt over the surface of the pan; add the meat and set a heavy skillet on top to weigh it down. Sear for about 7 minutes; turn the steak, replace the weight and cook until a thermometer inserted into the side reads 110 degrees for medium-rare, about 5 minutes.
  • Transfer the steak to a cutting board; brush with some of the herb butter, tent with foil and let rest for about 10 minutes. Thinly slice against the grain; top with more herb butter and drizzle with the pan juices.

GRILLED BEEF SALAD

Grilled Beef Salad image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 1h40m

Yield 6 to 8 servings

Number Of Ingredients 21

One 2-pound top round London broil
2 tablespoons extra-virgin olive oil
1 tablespoon whole-grain mustard
4 cloves garlic, crushed
2 sprigs fresh thyme
1 tablespoon kosher salt
2 teaspoons lemon pepper
1/4 cup extra-virgin olive oil
1 tablespoon whole-grain mustard
1 teaspoon fresh thyme leaves
Juice of 1 lemon
Kosher salt and freshly ground black pepper
1 to 2 tablespoons heavy cream
One 5-ounce container blue cheese crumbles
4 cups spinach leaves
2 cups torn romaine leaves
2 cups torn salad greens
1 pint cherry tomatoes, halved
2 scallions, sliced
1 red bell pepper, very thinly sliced
1 small red onion, very thinly sliced

Steps:

  • For the beef: Put the beef in a resealable plastic bag. Mix together the olive oil, mustard, garlic and thyme in a small bowl. Pour over the beef, seal the bag and refrigerate for anywhere from 20 minutes to overnight. Take the meat out of the refrigerator about 30 minutes before you are ready to cook.
  • To cook, heat a grill pan over medium-high heat. Wipe the meat dry and season well with the salt and lemon pepper. Grill the meat for about 4 minutes per side, depending on how you like your beef cooked. Cover and set aside to rest for 15 to 20 minutes before serving.
  • For the salad: In a jar, shake together the olive oil, mustard, thyme leaves, lemon juice and a pinch each salt and pepper. Add 1 or 2 tablespoons of heavy cream and shake again. Add 2 tablespoons of the blue cheese crumbles and shake once more. Set aside while you assemble the salad and slice the meat.
  • Put the spinach, romaine and salad greens in a large bowl. Add the tomatoes, scallions, red pepper and red onion. Season lightly with salt and pepper. Toss with a little of the dressing. Add the remaining blue cheese crumbles (about 2/3 cup) and toss again.
  • To serve: Slice the beef thinly against the grain. Place a pile of the salad on 1 big platter and drape the meat over the salad. Serve extra dressing on the side.

MARINATED LONDON BROIL

Marinated London Broil image

Provided by Food Network

Categories     main-dish

Time 2h10m

Number Of Ingredients 8

1/3 cup minced shallots
3 tablespoons soy sauce
1/2 cup olive oil
3 tablespoons fresh thyme
Big dash hot sauce
3 tablespoons freshly squeezed lemon juice
1 1/2 pounds flank steak
Cress, for garnish

Steps:

  • Mix shallots, soy sauce, olive oil, thyme, hot sauce and lemon juice together in a non-reactive broiling pan. Score the steak, place it in the pan and turn in the marinade. Marinate for at least 2 hours at room temperature or up to 24 hours refrigerated. If refrigerated, turn the steak in the marinade occasionally. Drain off marinade and put into a saucepan. Place steak under broiler at 1 inch from the heat for 3 to 4 minutes on each side for rare, for 4 to 5 minutes on each side for medium. Leave the broiler door slightly ajar, so the heat stays on and air circulates. Meanwhile bring marinade to the boil. Remove from heat. Carve the meat in thin diagonal slices across the grain. Arrange the slices on a warm platter. Pour the carving juices and the marinade over the meat. Decorate with cress.
