These cookies are very versatile. You can use the oatmeal base and then add whatever "mix-ins" you choose!

Steps:
- Preheat oven to 375 F.
- Combine splenda, brown sugar, pumpkin and butter, egg substitute and vanilla until thoroughly mixed.
- Add in all the dry ingredients, except oats and "add in's".
- Use a small melon scoop to place cookies about 1 inch apart on a greased cookie sheet.
- Gently press down on the cookies with a fork.
- Bake in the oven for 10-12 minutes.
