Nut Crescents image

Time for some delicious cookies!

1¼ cups walnut halves
1½ cups all-purpose flour
¼ teaspoon salt
1½ sticks unsalted butter, room temperature ((¾ cup))
1½ cups confectioners' sugar
1 teaspoon pure vanilla extract

Steps:

  • 1. Preheat the oven to 350°F. Spread walnuts in a single layer on a rimmed baking sheet, and toast until light golden and fragrant, about 8 minutes. Transfer to a plate, and let cool completely. Line two baking sheets with parchment paper.
  • 2. In a food processor, combine ½ cup flour with the toasted nuts, and pulse until the nuts are finely ground. In a medium bowl, whisk together the flour-nut mixture and the remaining 1 cup flour and the salt; set aside.
  • 3. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and ½ cup sugar until light and fluffy, about 2 minutes. Beat in vanilla. With the mixer on low speed, add the flour mixture in two batches, and beat until combined.
  • 4. Roll 1 tablespoon of dough into a 3-inch log. Using your fingers, shape log into a crescent, tapering the ends slightly so that the center is the widest part. Repeat with remaining dough, placing crescents about 1 inch apart on prepared sheets. Freeze or refrigerate until crescents are very firm, about 30 minutes.
  • 5. Bake, rotating sheets halfway through, until the edges of the cookies begin to turn golden, 16 to 18 minutes. Transfer sheets to a wire rack to cool, 5 minutes. Transfer cookies to the rack to cool completely. Place the remaining 1 cup sugar in a shallow bowl and roll cookies in it to coat completely. Cookies can be kept in an airtight container at room temperature for up to 5 days.

Pillsbury™ refrigerated crescent dinner rolls provide a simple addition to these cheesy and nutty crescents baked to perfection.

1 can (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count)
4 oz chèvre (goat) cheese, crumbled (1 cup)
1/4 cup golden raisins
1/4 cup raisins
1/4 cup chopped walnuts, toasted
1/4 cup honey

Steps:

  • Heat oven to 375°F. Spray cookie sheet with cooking spray.
  • Unroll dough; separate into 8 triangles. From center of longest side to opposite point, cut each triangle in half, making 16 triangles. Sprinkle triangles evenly with goat cheese, raisins and walnuts; drizzle with honey. Starting at shortest side of triangle, roll to opposite point. Place rolls on cookie sheet.
  • Bake 15 minutes or until golden brown. Serve warm.

Mr. GoKittenGo doesn't cook a lot, and when he does, I tend to stay away from the kitchen. However, I peeked over his shoulder to learn how to make these after he whipped them up one night. They're almost too easy to be a recipe! Note that this recipe calls for the "Big & Flaky" crescent rolls; if you use the regular size ones, you might want to use less Nutella. Then again, you might not. ;)

1 (10 1/8 ounce) package pillsbury big & flaky refrigerated crescent dinner rolls
3 tablespoons nutella, approximately 1/2 tablespoon per crescent roll

Steps:

  • Preheat the oven to 350 degreen Farenheit, or whatever temperature is called for on the can of crescent rolls.
  • Unroll the crescent rolls per package instructions.
  • Put about 1/2 tablespoon of Nutella on the large end of each roll.
  • Roll them up.
  • Bake for the amount of time specified in the package directions, about 15 to 20 minutes.
  • Let cool for about five minutes before attempting to eat - the Nutella is like lava when they first come out of the oven, and will hurt you. I speak from experience.

  • Sprinkle 3 teaspoons of the flour over work surface. If using crescent rolls: Unroll dough onto floured surface; press perforations to seal. Sprinkle with remaining 2 teaspoons flour. Roll to form 18x12-inch rectangle. If using dough sheet: Unroll dough onto floured surface. Sprinkle with remaining 2 teaspoons flour. Roll to form 18x12-inch rectangle.
  • Carefully spoon and spread pecan mixture evenly over 1 long side of dough in 4-inch-wide strip, spreading to within 1/2 inch of edges. Starting with topped side, carefully roll up dough. (There may be small breaks in dough.)
  • Spoon 1 tablespoon of the melted butter diagonally on ungreased large cookie sheet. Place filled roll, seam side down, over butter on cookie sheet. Pinch ends to seal. Gently flatten dough until 3 inches wide. Brush top and sides with remaining tablespoon melted butter. Sprinkle with cinnamon-sugar.
