SIMPLE & LIGHT NUTELLA RICE PUDDING

My friends and I found a really simple recipe for chocolate rice pudding (using cooked white rice) and decided to sub nutella for the chocolate chips! The result: chocolatey, hazelnutty deliciousness. And in comparison to lots of the other rice pudding recipes, this one's on the lighter side.

2 1/2 cups skim milk
2 cups cooked white rice
1/2 cup sugar
1/4 cup nutella (or a bit more)
1 teaspoon vanilla extract

Steps:

  • Combine milk, rice, sugar and nutella in a large saucepan.
  • Cook on medium heat until pudding thickens, about 30-40 minutes, stirring often.
  • Remove from heat and stir in vanilla.
  • Serve warm or chill before serving.

Beautifully creamy, this French rice pudding or riz au lait in French is a popular French dessert and the best breakfast option. Try out this classic French rice pudding recipe, or bring a new flavor to an old favorite!

4.2 oz. (120 g) Arborio rice
3 cups + 3 1/2 tablespoons (750 ml) whole milk
1 cup + 1 1/2 tablespoons (250 ml) heavy cream
1/4 cup (55 g) granulated sugar
1 vanilla bean
1/3 cup (75 g) granulated sugar
1 1/2 tablespoons (20 g) salted butter
3 1/2 tablespoons (50 ml) heavy cream

Steps:

  • split a vanilla bean in half lengthwise and scrape off the seeds with the tip of a knife. Rinse the rice thoroughly with running cold water to remove the starch. Immerse it in a large saucepan of boiling water and simmer/blanch for 3 minutes. Using a colander or a fine-mesh sieve, drain the rice.
  • Pour milk, heavy cream, place both the vanilla pod and seeds in a medium-to-large saucepan and bring to a boil. Pour in the drained rice, reduce the heat to low, and cook for about 30 to 40 minutes, stirring regularly with a wooden spatula.
  • Add sugar and cook for another 2 minutes. Remove from the heat, let cool.
  • pour sugar in a small saucepan and cook over medium heat. Don't use utensils. Just shake the pot over your stove until the caramel gets an amber color. Remove from the heat, pour the warm cream, constantly stirring (be careful of the splash). Add butter and mix for about one minute over low heat.
  • discard the vanilla bean once the rice has cooled and divide riz au lait into dessert cups/bowls. Pour hot caramel over the dessert.

1 cups leftover cooked rice
1 cup milk (low fat is fine)
1 cup half and half
1/3 cup sugar
1/8 tsp salt
1/8 tsp salt
2 tsp cocoa powder
3 tbsp nutella

Steps:

  • 1. Combine cooked rice, milk, half and half (use 1/2 cup milk and 1/2 cup cream if you do not have half and half), sugar and salt in a medium saucepan.
  • 2. Bring to a simmer, then lower the heat so the mixture doesn't boil. Stir regularly with a spatula, scraping the bottom of the pan, until just about all of the milk is absorbed (about 45 minutes) and pudding has thickened.
  • 3. Add the vanilla and sift the cocoa powder, and stir to combine. Remove from heat and stir in Nutella.
  • 4. Garnish with whipped cream - plain, lightly sweetened or Nutella-flavored (see recipe below).
  • 5. Nutella Whipped Cream Ingredients 1/4 cup heavy whipping cream, chilled 1 tbsp Nutella 1 tsp hot water or coffee Directions 1. Whip heavy cream to soft peaks in a small bowl. 2.In another small bowl, place remaining tablespoon of Nutella. 3.Add 1 tsp of the hot water or coffee to the Nutella. Whisk together until Nutella has dissolved. 4.Fold Nutella mixture into the whipped cream and spoon it on top of puddings.

1-1/3 cups uncooked long grain or basmati rice
1 can (15-1/4 ounces) peach halves, drained
1 cup canned or frozen pitted tart cherries, drained
1 cup heavy whipping cream
1/2 cup packed brown sugar, divided
1/4 cup old-fashioned oats
1/4 cup sweetened shredded coconut
1/4 cup chopped pecans
1/4 cup butter, melted

Steps:

  • Cook rice according to package directions. , Preheat oven to 375°. In a large bowl, combine rice, peaches, cherries, cream and 1/4 cup brown sugar. Transfer to a greased 1-1/2- qt. baking dish., Combine oats, coconut, pecans, butter and remaining brown sugar; sprinkle over rice. Bake, uncovered, until golden brown, 25-30 minutes.
