NOT YOUR MAMA'S GRILLED CHEESE
This sandwich is a little tangy from the tomatoes, a little spicy from the chipotle chilies,and just plain delicious.

Steps:
- Blend tomato paste, chilies and molasses in processor until smooth.
- Spread 1 tablespoon chipotle mixture over 1 side of each bread slice.
- Arrange 6 slices of bread, chipotle side up, on work surface.
- Divide half of cheese among bread slices.
- Top with tomatoes, then onion, cilantro, and remaining cheese.
- Top sandwiches with remaining bread, chipotle side down.
- Spread butter on outside of sandwich tops and bottoms.
- Heat a large griddle over medium heat.
- Place sandwiches on griddle, cook until bread is golden and cheese is melted, about 5 minutes on each side.
- Keep your heat on medium to low or the bread will burn.
- Eat the sandwiches warm from the griddle.

- On 1 side of 2 bread slices, evenly spread apple butter. Top each with 1 slice of cheese, half of the chicken, a second slice of cheese and remaining bread slices.
- In 10-inch nonstick skillet, melt 1 tablespoon of the butter over medium-low heat. Place sandwiches in skillet. Spread tops of bread with remaining 1 tablespoon butter. Cook 5 minutes, turning once, until cheese is melted and bread is golden brown.

NOT YO MAMA'S GRILLED CHEESE SANDWICH
My grandson was visiting and when I offered to make him a turkey sandwich, he asked if I could make him a grilled cheese and turkey. This sandwich sort of grew from ingredients that I had on hand that sounded like they would go well together. The result was delicious awesomeness! I hope you enjoy this sandwich as much as we do.

Steps:
- 1. Butter one side of each slice of the bread and lay the first slice buttered side down in a skillet or on a griddle.
- 2. Begin layering ingredients in the following order: slice of American cheese, slice of tomato, slice of sharp cheddar cheese, 2 thin slices turkey, slice mild cheddar cheese, the avocado, slice of American cheese. Top with second slice of bread, buttered side up.
- 3. Turn heat on to medium high under your skillet or griddle and weight the sandwich with a sandwich press or a plate with and a quart jar filled with water.
- 4. When bread is toasted, flip sandwich, weight it again and toast the other side. Plate it, cut in half and serve immediately.
