There's nothing better than fresh tomatoes in season & there's nothing better than this creative BLT variation. It makes a great lunch, potluck pleaser, patio party winner or picnic favorite. Recipe source is Florida Tomato Committee, altho I amended the original recipe slightly. Enjoy! .. *Edited to Add* -- This recipe was included for Greece in ZWT6 due to its use of feta cheese as a primary ingredient. :-)

Number Of Ingredients 7

1 lb tomatoes (fresh)
4 hard rolls (4-inch round)
3/4 cup caesar salad dressing (creamy)
3 cups iceberg lettuce (chopped)
8 slices bacon (fried crisp & crumbled)
1/4 cup green onion (sliced)
1/4 cup feta cheese (crumbled)

Steps:

  • Preheat oven to 400°F.
  • Use tomatoes held at room temp till fully ripe. Quarter tomatoes & remove the seedy moist centers so only the "meat" of the tomato is used. Coarsely chop tomato meat, place in a lrg bowl & set aside.
  • Slice off the top of each hard roll & remove the center for a later use. Brush inside of rolls (& their tops) w/2 tbsp of the creamy dressing. Bake till lightly toasted (about 5 min) & set aside.
  • Add the lettuce, bacon, green onions, feta cheese & remaining Caesar dressing to the bowl w/the tomatoes & toss till well-mixed.
  • Spoon BLT mix into toasted bread shells. Place tops of rolls over the filling & serve immediately.
  • NOTES: If you want to do the prep ahead, but serve later -- delay the final step till just prior to serving. Sliced avocado also makes a nice "extra" w/this sandwich.

1 pouch (2.8 oz.) Oscar Mayer Real Bacon Recipe Pieces
2 Tbsp finely diced red onion
1 avocado, diced
3 Tbsp mayonnaise
6 slices tomato
3 lettuce leaves
6 slices whole grain sandwich bread, toasted

Steps:

  • In a bowl combine Real Bacon, red onion, avocado and mayonnaise.
  • Divide mix evenly on three slices of toasted bread.
  • Top each with 2 slices of tomato, 1 lettuce leaf and the other slice of toasted bread.

Okay, I know that when you read this you are probably going to say "GROSS", but I've been making this sandwich over the summer and everyone who has tried it likes it. It is different! I got the recipe from the National Watermelon Board (who knew there was such a thing!?!)

Number Of Ingredients 7

2 slices bread (your choice, but it needs to be thick)
2 tablespoons pesto sauce
2 slices cheddar cheese
1 slice seedless watermelon (cut about 1/3 inch thick and about as the same width as your bread)
2 slices tomatoes
4 slices bacon, cooked crisp
2 lettuce leaves

Steps:

  • Spread the pesto over 1 side of each slice of toast.
  • On one slice of toast stack the cheese, watermelon, tomato, bacon and lettuce on top of pesto.
  • Place the other slice of toast, pesto side down, on top of the lettuce.
  • Cut in half and enjoy.
