I love rutabagas! This vegetable is full of vitamins and minerals. It has the added plus of storing well. This dish is delicious served with a dark rye bread, potatoes and coarse grain mustard. This recipe was found on Sons of Norway website.

1 cup chicken stock
2 large carrots, scrubbed and sliced in 1/2 inch thick slices
1 large leek, sliced, including the green top
1 1/2 cups rutabagas, cubed
3/4 lb bratwursts or 3/4 lb kielbasa
salt and pepper

Steps:

  • Bring the vegetables to a boil in chicken stock; reduce heat to simmer and cook for 15 to 20 minutes or until vegetables are fork tender.
  • Remove the skin from sausage, cut in thick slices, and add to vegetables.
  • Adjust salt and pepper to taste and simmer covered for a few minutes.
  • Serve with coarse grain mustard, dark rye bread and boiled potatoes.

1 small beef bouillon
2 large carrots, sliced
2 medium parsnips, diced
1 large leek, diced
1 large rutabaga, diced
1/2-3/4 lb bratwurst, sliced (other sausage can be substituted)
1 teaspoon dry mustard
salt and pepper, to taste

Steps:

  • Bring water to a boil then melt the bouillon in it.
  • Stir in the vegetables then simmer for 20 minutes.
  • Add remaining ingredients and let simmer for 5 minutes.

6 small bell peppers, cut into strips
1 zucchini, cut into small chunks
2 small tomatoes, cut into chunks

  • Cook and stir sausage in a skillet over medium heat until cooked through, 5 to 7 minutes, partially draining the drippings. 6 tablespoons extra-virgin olive oil, divided
6 links pork sausage (such as Isernio's®)
2 large baking potatoes, peeled and cut into 1/4-inch thick half-rounds
1 large onion, thinly sliced
1 yellow bell pepper, seeded and cut into 1/4-inch strips
1 orange bell pepper, seeded and cut into 1/4-inch strips
1 red bell pepper, seeded and cut into 1/4-inch strips
1 medium zucchini, sliced 1/4-inch thick
2 tablespoons chopped fresh oregano
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat 1 tablespoon oil over medium heat in a large skillet. Cook sausage in the hot oil until lightly browned, about 2 minutes per side. Set aside.
  • Place potatoes, onion, bell peppers, zucchini, and oregano in a large bowl. Drizzle generously with remaining 5 tablespoons oil and season well with salt and pepper. Mix well. Place browned sausages and vegetable mixture on a large rimmed baking sheet or roasting pan, uncovered.

1/4 lemons or 1 tablespoon citric acid
water

Steps:

  • If using lemon, add the lemon to the kettle, fill with water up to the marks you wish to remove and boil. Can be done a few times if kettle is particularly dirty.
  • If using citric acid, boil water in kettle first and then add citric acid, let sit for approx 20 mins and voila, clean kettle.
  • Empty kettle and re-fill and boil a few times before using it for drinks just to make sure all residue is gone.

1 large head broccoli, cut into florets
10 ounces baby potatoes, halved
1 large carrot, sliced
½ red onion, roughly chopped
3 tablespoons olive oil
2 tablespoons whole grain mustard
2 tablespoons grated Pecorino Romano cheese
1 teaspoon dried thyme
½ teaspoon dried oregano
salt and ground black pepper to taste
4 mild Italian sausage links

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place broccoli, baby potatoes, carrot, and onion in a large bowl. Pour in olive oil, mustard, Pecorino Romano cheese, thyme, oregano, salt, and pepper. Toss well to coat, then spread vegetables in an even layer on a sheet pan. Arrange sausages in the pan, pushing aside the vegetables so that the sausages touch the bottom of the pan.
  • Bake in the preheated oven, flipping sausages and vegetables halfway through until sausages are no longer pink in the center, 30 to 35 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).
