I love to use parsley in many dishes, and it suits the fresh taste of small red potatoes well. Even though they're easy to prepare, they look fancy and go great with baked ham. -Eunice Stoen, Decorah, Iowa

2 pounds small red new potatoes
1/2 cup butter, cubed
1/4 cup chopped fresh parsley
1/4 teaspoon dried marjoram

Steps:

  • Cook potatoes in boiling salted water for 15 minutes or until tender. Cool slightly. With a sharp knife, remove one narrow strip of skin around the middle of each potato. In a large skillet, melt butter; add parsley and marjoram. Add the potatoes and stir gently until coated and heated through.

This simple recipe is precisely how my Norwegian born BIL taught my sister to make parsley potatoes. He insists that the potatoes do not taste as good if the salt is not cooked with the potatoes. Once I cooked the potatoes for my sister and didn't put the salt in the water first. He had a fit and wouldn't eat them after taking one bite and asking me if I had salted them before cooking.

1 lb russet potato (peeled and quartered)
3 quarts water
1 1/2 teaspoons salt
4 tablespoons butter (melted)
2 tablespoons parsley (chopped)

Steps:

  • Put the water, salt and potatoes in a pot and cook until the potatoes are just tender.
  • Drain well.
  • Pour the melted butter over the potatoes.
  • Sprinkle the chopped parsley over the potatoes and toss lightly.
  • Serve hot.

1/4 teaspoon dried basil
1/4 teaspoon dried thyme
1/8 teaspoon black pepper
2 garlic cloves, crushed
1/2 teaspoon paprika
2 medium potatoes
2 tablespoons cottage cheese

Steps:

  • Place all ingredients except paprika, potato and cottage cheese into a cup and microwave 30 seconds or until butter is melted.
  • Stir mixture well, cut two slices half way into potato, fill with mixture and place a little over the outside.
  • Wrap with foil and bake for one hour at 180 celsius (350 Fahrenheit).
  • Remove potatoes from foil, spoon cottage cheese over top and sprinkle with paprika.

They note the recipe is from Pioneer Woman's cooking blog - such a wonderful site! 2Bleu zamailed me that she felt the cheddar cheese on top improved the flavor enough to warrant an extra star - think I'll be trying it with additional cheese on top too ( & maybe scattered inside...).

4 -5 russet potatoes
1/2 cup butter
1 onion, medium, finely diced
8 ounces cream cheese
3/4 cup heavy cream
1 cup whole milk (half & half works, too)
salt, to taste
pepper, to taste
1 teaspoon rosemary, finely chopped
1 teaspoon parsley, finely chopped
1 teaspoon chives, finely chopped
1/2 teaspoon sage, finely chopped

Steps:

  • Preheat oven to 350 degrees.
  • Slice potatoes very thinly.
  • Add butter to a large skillet over medium low heat, When melted, add diced onion. Cook for 3 minutes, stirring occasionally.
  • Add cream cheese to the pan and stir to melt.
  • Pour in cream and milk, stirring to combine.
  • Season with plenty of salt and pepper, then add chopped herbs.
  • Place potatoes in a buttered baking dish. Pour contents of skillet over the top.
  • Top with Parmesan cheese and bake for 45 minutes, or until bubbly. Allow potatoes to sit 15 minutes before serving.

7 large russet potatoes, washed, peeled and quartered
1 cup(s) half and half
1/4 cup(s) salted butter
- sea salt and pepper, to taste

Steps:

  • Bring a large pot of salted water to a boil to cook the potatoes.
  • Boil the potatoes 15 to 20 minutes, until fork tender.
  • When potatoes are done, drain and set aside to cool until cool enough to touch.
  • When potatoes are cool, stir cream and butter over medium low heat in a medium pot until butter has melted and mixture is smooth.
  • Once potatoes are cool enough to touch, run potatoes through a ricer.
  • Stir butter and cream mixture into the riced potatoes and beat potatoes until smooth using a whisk or hand mixer.
  • Stir in black pepper and sea salt and set potatoes aside.

3 small onions, thinly sliced
1 garlic clove, crushed
2 tablespoons flour
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup chicken stock
1/2 cup white wine
1 tablespoon fresh thyme, chopped
1 tablespoon fresh parsley, chopped

Steps:

  • Heat butter in a large pan, add potatoes & onions and saute turning frequently until slightly browned.
  • Add garlic, flour, salt & pepper and continue frying turning constantly for another minute.
  • Pour combined stock & wine over potatoes and sprinkle with thyme. Simmer, tightly covered until liquid is absorbed and potatoes tender.
