NORWEGIAN PARSLEY POTATOES
This simple recipe is precisely how my Norwegian born BIL taught my sister to make parsley potatoes. He insists that the potatoes do not taste as good if the salt is not cooked with the potatoes. Once I cooked the potatoes for my sister and didn't put the salt in the water first. He had a fit and wouldn't eat them after taking one bite and asking me if I had salted them before cooking.

- Put the water, salt and potatoes in a pot and cook until the potatoes are just tender.
- Drain well.
- Pour the melted butter over the potatoes.

- Place all ingredients except paprika, potato and cottage cheese into a cup and microwave 30 seconds or until butter is melted.
- Stir mixture well, cut two slices half way into potato, fill with mixture and place a little over the outside.
- Wrap with foil and bake for one hour at 180 celsius (350 Fahrenheit).

- Preheat oven to 350 degrees.
- Slice potatoes very thinly.
- Add butter to a large skillet over medium low heat, When melted, add diced onion. Cook for 3 minutes, stirring occasionally.
- Add cream cheese to the pan and stir to melt.
- Pour in cream and milk, stirring to combine.
- Season with plenty of salt and pepper, then add chopped herbs.
- Place potatoes in a buttered baking dish. Pour contents of skillet over the top.
- Top with Parmesan cheese and bake for 45 minutes, or until bubbly. Allow potatoes to sit 15 minutes before serving.

- Bring a large pot of salted water to a boil to cook the potatoes.
- Boil the potatoes 15 to 20 minutes, until fork tender.
- When potatoes are done, drain and set aside to cool until cool enough to touch.
- When potatoes are cool, stir cream and butter over medium low heat in a medium pot until butter has melted and mixture is smooth.
- Once potatoes are cool enough to touch, run potatoes through a ricer.
- Stir butter and cream mixture into the riced potatoes and beat potatoes until smooth using a whisk or hand mixer.
- Stir in black pepper and sea salt and set potatoes aside.
