NORTH CROATIAN HAM AND PASTA CASSEROLE (KRPICE SA SUNKOM)



North Croatian Ham and Pasta Casserole (Krpice Sa Sunkom) image

This is recipe from Zagorje region in Croatia. I liked this meal when I was a kid and I like it still today. This meal is very suitable for light dinner or lunch. It is better if you use smoked ham.

400 g pasta (farfalle or similar flat pasta)
200 g ham
40 g butter
40 g onions
3 eggs
300 g sour cream
100 ml milk
40 g butter
35 g breadcrumbs
150 g fresh parsley leaves
salt
pepper

Steps:

  • Cook pasta until al dente.
  • Sauté finely sliced onion on butter until soft and add sliced ham. Sauté it not more than 5 minutes than let it cool for a bit.
  • Take casserole pot; coat it with butter and sprinkle bread crumbs over to cover the butter.
  • Mix well eggs, milk, butter and some sour cream. Add chopped parsley leaves salt and pepper into eggs and mix with ham.
  • To prepare casserole first lay one layer of pasta, than mix the rest of pasta with ham and eggs and cover the first layer of pasta.
  • Cover with the rest of sour cream. Bake it for 25 to 35 minutes on 200°C Serve hot.

NORTH CROATIAN CABBAGE AND PASTA ("KRPICE SA ZELJEM")



North Croatian Cabbage and Pasta (

This is old recipe popular in North Croatia. You should use flat pasta like "farfalle", or any similar FLAT pasta. Use also fresh cabbage. This is side dish to pork roast meat, or pork chops or BBQ pork and sausages.

300 g pasta (farfalla )
600 g cabbage
100 g lard (or oil)
1 teaspoon salt
1 teaspoon pepper
1/2 cup water

Steps:

  • Cook pasta according to manufacturer manual.
  • During this cut cabbage into stripes up to 1 cm wide and put them on hot lard. Add salt and pepper. Sauté it until cabbage is soft (add some water for better results).
  • When the cabbage is soft, mix it with pasta and sauté for few more minutes (it should be dry and greasy). Serve warm.

SIMPLE PASTA CASSEROLE

A friend originally gave me this recipe, and it has been a staple ever since. Especially good when you want to take a meal to someone.

16 ounces penne pasta
10 ounces frozen chopped spinach
12 ounces shredded mozzarella cheese (3 cups)
5 cups spaghetti sauce (amount is flexible depending on how much sauce you like)
1 lb sausage (optional, I never use it) or 1 lb beef, browned and seasoned (optional, I never use it)

Steps:

  • Cook noodles as directed on package.
  • Defrost spinach and drain (you don't need to drain it well).
  • Mix cooked noodles, spinach, cheese, and spaghetti sauce, and meat, if used.
  • Spoon into baking dish (9 x 13).
  • Bake, covered at 350F until hot and cheese is melted.

CROATIAN CHICKEN "PAPRIKAS"



Croatian Chicken

This meal is also from NW Croatia, very popular in area "Zagorje" and along river Drava. You can notice Hungarian influence.

1 kg chicken piece (breasts, back... with bones and skin)
2 large onions, finely minced
10 g lard (preferably, but oil can do)
3 teaspoons ground paprika (red,dry)
1/4 teaspoon chili
1/2 teaspoon salt
1 teaspoon pepper
1/2 teaspoon caraway seed
200 ml white wine
50 g sour cream
300 ml water

Steps:

  • Melt the lard in a pot.
  • Add 2 large onions finely minced and sauté it until the onion is soft and transparent.
  • Chop the chicken into small pieces (mouthfull). Than, add chicken pieces and sauté it until the meat is white.
  • Add wine and sauté it for 5 more minutes.
  • Than add 3 teaspoons of paprika (chili to taste), salt pepper and caraway seeds.
  • Add water to cover the chicken.
  • Sauté for 50 minutes or until chicken is soft.
  • At the end add 2-3 teaspoons of sour cream and cook for 2-5 more minutes.
  • Serve with noodles or mashed potatoes, and inevitably white wine (you've used in the paprikas).
  • As a salad with it I would recommend red beet.

NORTH CROATIAN PORK AND SAUERKRAUT STEW (SEKELI GULASH)

This meal is originally Hungarian but since us Croats and Hungarians lived in one Empire for 400 years gastronomic influences are inevitable. This is also my grandmother's recipe.

700 g pork necks (no bones)
150 g onions
100 g lard
1 teaspoon flour (optional)
1 teaspoon paprika (dried, red)
1 bay leaf
1 teaspoon caraway seed
1 1/2 cups white wine
800 g sauerkraut
100 g sour cream
1/2 teaspoon pepper
1 teaspoon salt

Steps:

  • Cut pork meat into small pieces.
  • Finely slice onion and sauté it on lard until soft. Add meat and continue to sauté it until meat starts to change color.
  • Add paprika and mix. Add some wine and continue to sauté it.
  • After 10 to 15 minutes add sauerkraut (sliced), bay leaf, caraway seeds and more wine. Add water and brine (only if you like it really sour).
  • Cook 30 to 40 minutes on low fire. After 20 minutes add flour (just one teaspon if you want thicker stew) and mix well. Continue to cook until sauerkraut is soft.
  • Before serving add sour cream and mix.

KRAFNE (CROATIAN DOUGHNUTS)



Krafne (Croatian Doughnuts) image

This is traditional carnival pastry in Croatia. The origin is of course Austrian. The name "krafne" comes from Mrs. Cecilia Krapf a.k.a. Cilly who worked for Emperor in his Court as pastry cook. The story is that she uncovered the recipe to the street pastry makers so the cake spread all over the Empire (and that is how we get it). The best "krafne" to buy in Croatia is in town Samobor in the vicinity of Zagreb. The ladies who work there have a secret recipe and I must admit the "krafne" there are really the best I have ever tasted.

500 g flour (white, for bread)
7 g dry yeast (package for 500g flour)
6 egg yolks
50 g sugar (white)
1/4 teaspoon salt
1 cup milk
60 g butter
2 tablespoons rum
1 liter oil
200 g apricot jam
200 g sugar (white, grounded)

Steps:

  • Take a large pot (glass pot for salad or similar) and put in it flour, sugar, slightly melted butter, salt, rum and slightly warm milk (25-30°C) and mix well using mixer or dough-machine.
  • The dough must be smooth and "shiny". Cover the dough with warm kitchen towel and leave it grow for 40-50 minutes (it must double in size).
  • Knead the dough again and cut into two parts. One part cover with kitchen towel again and thin the second part into 2 cm thick dough. Use mould for "krafne" or normal glass 6 cm. in diameter. Cut round pieces. Do this until there is no more dough (re-knead and do it again).
  • Now, knead the second part of the dough and do the same thing (with glass). Let it grow for more 20 minutes.
  • Take a large pot, pour 1 liter of oil and heat to 80-100°C Fry several krafne in oil; first covered (not more than 1 minute or until brownish) on one side, and than uncovered1 minute on the other side (them must not touch each other). They must have white ring (we call it in Zagreb: "ramftl").
  • When they are done, take them out of oil with hollow spoon and put onto paper towel to drain surplus of oil. Using cooking syringe put jam into each "krafn". Spread grounded sugar over and serve. They are very good when they are warm, but not too warm.

FRIED PEACHES WITH HONEY, CINNAMON, PISTACHIO AND BREADCRUMBS



Fried Peaches With Honey, Cinnamon, Pistachio and Breadcrumbs image

I have found this recipe in some magazine. The source of this recipe is Miss Tamara Novakovic, blogger from Croatia. I have changed the recipe with adding dry fried roughly grounded pistachio. Of course breadcrumbs are just fine if you don't have pistachio. Taste of this dessert is amazing, I gave it the nick name "the mother of all desserts". This is how it goes:

2 peaches (fresh)
3 tablespoons honey (from acacia or other light honey)
1 teaspoon cinnamon (grounded)
4 tablespoons sour cream
2 tablespoons breadcrumbs
1 tablespoon pistachios (roughly grounded)
1 tablespoon olive oil
3 tablespoons rum

Steps:

  • Wash peaches, cut them in halves and remove the stone.
  • Take a dry frying pan heat the hone, add cinnamon and rum and put peaches on it. Fry 8-10 minutes.
  • Peaches will soften, honey will reduce and become like syrup. Turn peaches from time to time to cover them with syrup.
  • In other pan first fry grounded pistachio.
  • Remove it and add olive oil and brown some breadcrumbs. When finish, add some cinnamon.
  • Serve half peach on a plate, pour over some syrup and add some breadcrumbs mixed with pistachio and cinnamon and put it into the stone hole. Put a spoon of sour cream on the side. Serve warm.
