A very simple recipe for how delicious it is! Just crush the garlic with the side of a chef's knife blade instead of chopping it, and using whole sprigs of rosemary allows them to be easily removed before serving.

¼ cup butter
2 cloves crushed garlic
2 sprigs fresh rosemary
1 pound scallops

Steps:

  • In a medium size saucepan melt butter over medium-high heat. Add crushed garlic and whole sprigs of rosemary to the saucepan. Add scallops, cook for 2 minutes on each side (or until desired consistency). Remove the garlic and rosemary from pan. Serve.

Sea scallops and bay scallops differ in size and sweetness. They also cook a little differently. I love a good hard sear on a sea scallop, a little crust, and a splash of wine in the butter at the end to provide a silky acidity against the sweet of the meat. For the tiny, sweet bay scallop, though, I prefer a gentle butter bath. Whichever you cook, be very careful not to overcook. Indeed, there is almost no such thing as an undercooked scallop.

3 tablespoons unsalted butter
1 pound sea scallops, patted dry
Kosher salt, to taste
1 tablespoon dry white vermouth or white wine
1 tablespoon finely chopped parsley, for garnish

Steps:

  • Place a large sauté pan or skillet over medium-high heat, and add to it 3 tablespoons of the butter. When it has melted and started to foam, place the scallops in the pan in a single layer, and season with a pinch or two of salt.
  • Cook scallops without moving until the bottoms are golden brown, approximately 2 to 3 minutes, then turn them over, add the wine and cook an additional 1 to 2 minutes.

This was one of the LA Times' best recipes of 2010. It was delicious. It is quick enough for a weeknight meal but special enough for company. I especially liked the chermoula sauce. I actually made just the sauce recently to use on grilled ribeye steaks. It was perfect for the steak. I hope you like this as much as we do!

3/4 cup olive oil
1/2 cup fresh parsley leaves
1/2 cup cilantro leaf
1/3 cup fresh lemon juice
4 garlic cloves
1 teaspoon ground cumin
1 teaspoon sweet paprika
3/4 teaspoon salt
1/4 teaspoon ground red pepper
1 1/4 lbs large scallops
1/4 teaspoon salt
fresh ground pepper
2 tablespoons olive oil
parsley sprig

Steps:

  • 1. For chermoula sauce: Process oil, parsley, cilantro, lemon juice, garlic, cumin, paprika, 3/4 teaspoon salt and 1/4 teaspoon ground red pepper in a blender until garlic and herbs are finely chopped. Taste; adjust seasonings, if necessary.
  • 2. Pat scallops dry. Season with the salt and pepper to taste. Heat oil in a large nonstick skillet until hot. Add the scallops in a single, uncrowded layer. Sear over medium-high heat until golden, about 3 minutes. Turn, sear the other side, about 2 minutes.
  • 3. Transfer scallops to plates. Pour chermoula sauce on and around each serving of scallops. Garnish with parsley sprigs.

Sauteed Bay Scallops with Lemon Butter image

1 pound bay scallops
2 tablespoons olive oil
3 tablespoons unsalted butter
Juice of 1 lemon
1/4 cup chopped fresh parsley
Freshly ground black pepper

Steps:

  • Choose a saute pan large enough to hold all of the scallops in one layer without overcrowding the pan or without them touching each other. Cook in batches if necessary. Heat the oil and 1 tablespoon of the butter until nearly smoking. Add the scallops and do not move or shake pan, but allow the scallops to brown well on one side before tossing the pan to flip them or gently turning them with a spatula to cook the second side.
  • Remove the scallops from the pan and place on a warm serving platter. Return the pan in which the scallops had been cooked to the fire, add the remaining 2 tablespoons of sweet butter, and cook until the butter begins to turn a light brown color. When the butter has browned to a hazelnut color add the lemon juice and chopped parsley.
  • Pour the classic lemon butter over the scallops, garnish with heart-shaped croutons and serve promptly.

1/4 teaspoon ground red pepper
Scallops:
1 1/4 pounds large sea scallops
1/4 teaspoon salt
Freshly ground pepper
2 tablespoons olive oil
Parsley sprigs

Steps:

  • 1. For chermoula sauce, process oil, parsley, cilantro, lemon juice, garlic, cumin, paprika, salt and ground red pepper in a blender until garlic and herbs are finely chopped. Taste; adjust seasonings. (Chermoula will keep up to 2 days covered in the refrigerator; use at room temperature.) 2. Pat scallops dry. Season with the salt and pepper to taste. Heat oil in large nonstick skillet until hot. Add the scallops in a single, uncrowded layer. Sear over medium-high heat until golden, about 3 minutes. Turn; sear the other side, about 1 1/2 minutes. 3. Transfer scallops and pan juices to 4 heated serving plates. Pour about 2 tablespoons chermoula over and around each serving. 4 tablespoons unsalted butter
1/3 cup vegetable oil
1/2 cup flour, for dusting
1/2 teaspoon salt
fresh ground black pepper
1 1/2 lbs sea scallops, sliced crosswise into halves
4 large shallots, peeled and finely chopped
1/3 cup dry white wine
3 tablespoons chopped fresh parsley

Steps:

  • Heat butter and oil in a large skillet.
  • Season flour with salt and pepper and toss sliced scallops in it.
  • Drop scallops in hot oil and sauté very quickly until golden about 4 minutes.
  • Remove scallops to serving platter with slotted spoon.
  • Sauté shallots in same oil 5-6 minutes.
  • DO NOT BROWN.
  • Remove shallots and sprinkle them over scallops.
  • KEEP WARM.
  • Pour over excess oil from pan, add white wine and stir over high heat until wine is reduced by half.
  • Pour over scallops and sprinkle on herbs and serve while hot with lemon wedges.

1/2 cup flour
1/2 teaspoon salt
fresh ground pepper, to taste
1 1/2 lbs sea scallops, cut in half
2 tablespoons butter
1/4 cup vegetable oil
3 scallions, 1 small bunch, sliced
1/2 cup dry white wine
3 tablespoons fresh parsley or 3 tablespoons chervil, chopped
1 lemon, cut into wedges

Steps:

  • On a plate, combine flour, salt, and pepper.
  • Dredge scallops in the flour mixture.
  • In a heavy skillet, heat the butter and oil and saute the scallops very quickly until golden brown, about 4 minutes.
  • Remove scallops with slotted spoon and place on a warmed serving dish.
  • Saute the scallions in the same pan over medium-high heat for 5 more minutes; they should not brown.
  • Remove with a slotted spoon and sprinkle over the scallops; keep warm.
  • Pour off excess oil from the pan and add the wine to deglaze the pan over the highest heat until the wine is reduced by half.
  • Pour the sauce over the scallops and sprinkle with the herbs.
  • Serve immediately with fresh lemon wedges.

1/3 pound very fresh sea scallops*
All-purpose flour for dredging
2 teaspoons butter
2 teaspoons light olive oil
Salt and freshly ground pepper
1 fat shallot, minced
A splash of white wine
A sprinkling of chopped fresh parsley

Steps:

  • Dredge the scallops in flour. Heat the butter and oil in a large heavy skillet over high heat, and when it is sizzling, shake the excess flour from the scallops and scatter them in the hot pan. Keep the heat high, and turn and move the scallops around frequently, giving the pan a shake now and then. Total cooking time should not be more than 3 minutes-or 4 for really large pieces. Season the scallops lightly with salt and several grindings of the pepper mill, and remove them to a warm plate. Lower the heat to moderate, and toss the shallot into the pan. Stir it around for about 30 seconds, splash in the wine, and let it reduce slightly. Pour this sauce over the scallops, scraping up every bit of pan juice with a spatula. Sprinkle the parsley on top.
  • Variation
  • Sometimes I wrap a band of prosciutto around the circumference of each scallop and secure it with a toothpick. These can be broiled, or sautéed as above. The sharp saltiness of the prosciutto, along with the briny taste of the scallops, creates a striking combination of flavors.

1 pound large shrimp in shell (21 to 25 per pound), peeled, leaving tail fan attached, and deveined
3 large shallots, finely chopped (1 cup)
6 tablespoons extra-virgin olive oil, divided
1 small leek (white and pale green parts only), finely chopped
1 garlic clove, minced
1 fresh serrano chile (optional), seeded and finely chopped
1/4 teaspoon sweet paprika
1/8 teaspoon smoked paprika (optional)
1/8 teaspoon turmeric
1/2 teaspoon grated lemon zest
1/2 cup fresh lemon juice
2 teaspoons mild honey
2 tablespoons chopped flat-leaf parsley or cilantro

Steps:

  • Cook shrimp in a large pot of boiling water until just cooked through, 1 to 2 minutes. Drain and cool.
  • Cook shallots in 2 tablespoons oil in a heavy medium skillet over medium-low heat, stirring frequently, until very tender, about 8 minutes.
  • Meanwhile, wash leek and pat dry.
  • Add leek, garlic, and chile (if using) to shallots and cook, stirring frequently, until softened, 4 to 5 minutes. Add paprikas and turmeric and cook, stirring, 2 minutes. Remove from heat and stir in lemon zest and juice, honey, parsley, 1/2 teaspoon salt, and remaining 1/4 cup oil.
  • Toss shrimp with sauce in a glass or ceramic bowl and marinate, covered and chilled, at least 8 hours. Season with salt and serve in sauce.
