30 Minute Saucy Ginger Sesame Noodles with Caramelized Mushrooms image

Best for nights when you're craving Chinese, but want something a little healthier.

1/2 cup plus 2 tablespoons low sodium soy sauce or tamari
1/4 cup honey
2 tablespoons balsamic vinegar
2 tablespoons rice vinegar
3 tablespoons creamy peanut butter or tahini
1 tablespoon molasses or pomegranate molasses ((optional))
2 tablespoons fresh grated ginger
3 cloves garlic, grated
8 ounces Chinese style egg noodles or rice noodles
2 1/2 cups low sodium vegetable or chicken broth
2 cups fresh baby spinach, roughly chopped
2 tablespoons sesame or extra virgin olive oil
3 cups shiitake or cremini mushrooms, sliced
2 shallots, chopped
black pepper
2 tablespoons raw sesame seeds
2 green onions chopped, for serving

Steps:

  • 1. To make the sauce. Combine 1/2 cup soy sauce, honey, balsamic vinegar, rice vinegar, peanut butter/tahini, molasses, 1 tablespoon ginger, 1 clove garlic, and 1/3 cup water in a bowl. 2. Cook the noodles according to package directions. Drain. To the pot used to cook the noodles, add the broth and 1/2 of the soy sauce mixture. Bring to a simmer over medium heat, stir in the spinach. Keep warm.3. Heat the sesame oil in a large skillet over medium-high heat. When the oil shimmers, add the mushrooms. Cook undisturbed for 5 minutes or until golden. Add the shallots, 1 tablespoon ginger, and 2 cloves garlic. Cook 4-5 minutes, until fragrant. Add 2 tablespoons soy sauce and a large pinch of pepper. Cook another 2-3 minutes, until the mushrooms are caramelized. Add the sesame seeds, cook 2 minutes. Spoon the mushrooms out of the skillet and onto a plate. 4. To the skillet, add the remaining soy sauce mixture and bring to a simmer over medium heat. Add the noodles, toss to combine, and cook until the sauce just coats the noodles, 2-3 minutes. Remove from the heat. 5. Ladle the broth into bowls. Add the noodles and toss combine. Spoon the mushrooms over the noodles. Top with green onions and chili oil. Enjoy!

During Chinese New Year, long noodles are eaten in all corners of China. "Longevity noodles," also presented at birthday celebrations, are never cut or broken by the cook, and if they can be eaten without biting through the strands, it's considered even more auspicious. Longevity noodles are usually stir fried, presenting challenges to the home cook. Noodles should be stir-fried alone and lightly oiled so that they don't clump together in the wok, and all ingredients must be completely dry so they sear properly.

12 ounces thin fresh noodles, like lo mein or tagliarini
2 teaspoons toasted sesame oil
12 ounces boneless, skinless chicken thighs, cut into 1/4-inch-thick, bite-size slices
1 tablespoon finely shredded ginger
1 teaspoon plus 1 tablespoon Chinese rice wine or dry sherry
1 teaspoon cornstarch
1 teaspoon plus 1 tablespoon soy sauce
Salt
1/4 teaspoon ground white pepper
2 tablespoons peanut or vegetable oil
1/4 teaspoon red pepper flakes
5 ounces (about 3 cups) thinly sliced Napa cabbage
4 ounces (about 2 cups) fresh shiitake mushrooms, stems removed, caps thinly sliced
1/2 cup finely shredded scallions

Steps:

  • Bring a medium saucepan of water to boil over high heat and cook noodles until just done, 3 to 5 minutes, stirring to prevent sticking. Drain in a colander and rinse with cold water until cool, then shake well to remove water. Return noodles to pot, add sesame oil, and toss.
  • Put chicken in a shallow bowl and add ginger, one teaspoon rice wine, cornstarch, one teaspoon soy sauce, 1/4 teaspoon salt and pepper. Mix gently to combine. In a small bowl, combine remaining one tablespoon rice wine and one tablespoon soy sauce.
  • Heat a wok over high heat until a bead of water evaporates almost on contact. Swirl in one tablespoon peanut oil, add red pepper flakes and stir-fry 10 seconds using a metal spatula. Push pepper flakes aside and add chicken, spreading in a single layer to maximize contact with the wok. Let cook undisturbed one minute, until chicken begins to sear.
  • Stir-fry chicken and pepper flakes together, tossing in the wok, for a minute or 2 until just done. Remove to a bowl. Add cabbage and mushrooms and stir-fry one minute until just wilted but not cooked. Empty into the bowl with chicken.
  • Reheat wok, swirl in remaining one tablespoon peanut oil, and add noodles. Stir-fry 30 seconds, moving constantly to heat through. Swirl soy sauce-rice wine mixture and add to wok along with chicken-vegetable mixture and scallions. Sprinkle on 3/4 teaspoon salt and stir-fry a minute or 2 until chicken and vegetables are heated through.

Because of this they were never cut when preparing them, and to serve them was to wish those who ate them a long life. In Sah Gau there were many varieties and shapes of noodles, and for vegetarians there were noodles made without eggs. These are what were served to the nuns, along with that special food that came usually with the onset of the New Year, young ginger, more subtle, less hot than the customary kind. These days this young, often pinkish gingerroot is available year-round. This dish illustrates what a "lo mein" is - that is, a dish tossed together, not precisely stir-fried.

Yield Makes 4 to 6 servings

Number Of Ingredients 13

1 1/2 tablespoons oyster sauce
2 teaspoons light soy sauce
1 teaspoon sugar
1 tablespoon Shao-Hsing wine, or sherry
4 tablespoons vegetable stock
1 tablespoon sesame oil
Pinch white pepper
8 cups cold water
2 teaspoons salt
8 ounces fresh, flat eggless noodles, like linguine
3 tablespoons peanut oil
4 tablespoons young ginger, shredded (if unavailable, regular ginger may be used)
1 cup scallions, cut into 2-inch pieces, white portions quartered lengthwise

Steps:

  • Combine all ingredients for sauce; set aside.
  • In a large pot place water and salt and bring to a boil over high heat. Add noodles, cook 45 seconds to 1 minute, or al dente, stirring and loosening them with chopsticks as they cook. Turn off heat, run cold water into pot, drain noodles immediately through a strainer. Place noodles back into pot and fill with cold water. Mix with hands, drain again through strainer. Repeat until noodles are cool. Allow to drain 10 to 15 minutes, loosening with chopsticks. Reserve.
  • Heat wok over high heat 45 seconds. Add peanut oil, coat wok with spatula. When a wisp of white smoke appears, add ginger, stir-fry 45 seconds. Stir sauce, pour in, mix well, allow to boil. Add noodles, stir, mix so noodles absorb the sauce. Add scallions, stir together for 2 minutes. Turn off heat, transfer to a heated dish and serve immediately.

6 tablespoons/90 milliliters olive oil
1 1/2 teaspoons red-pepper (chilli) flakes
1/2 teaspoon sweet paprika
1 (2-inch) piece fresh ginger (about 30 grams), peeled and finely chopped (about 3 tablespoons)
1 shallot, peeled and finely chopped
1/4 cup/20 grams panko bread crumbs
1 tablespoon white and black sesame seeds
Kosher salt
2 1/4 cups/500 milliliters chicken stock or vegetable stock
1 (4-inch) piece fresh ginger (about 65 grams), peeled and roughly chopped (about 1/3 cup)
1 shallot, peeled and roughly chopped
1 small head of garlic, halved crosswise
7 to 9 ounces/about 200 grams dried soba noodles
2 tablespoons fresh lime juice
2 tablespoons soy sauce
1/3 cup/10 grams roughly chopped fresh cilantro (coriander)

Steps:

  • First, prepare the toppings: Add 4 tablespoons oil to a large skillet and heat gently over medium. Place the red-pepper (chilli) flakes and paprika into a small heatproof bowl. Once the oil is quite hot but not smoking, pour it over the spices. Set aside to infuse as you make the ginger crumbs.
  • Add the remaining 2 tablespoons oil to the same skillet and heat over medium-high. Once hot, turn the heat back down to medium and add the ginger and shallot. Cook for 10 to 15 minutes, stirring often, until nicely browned and starting to crisp. Add the panko, sesame seeds and 1/4 teaspoon salt, and cook for 4 to 6 minutes more, stirring often, until nicely toasted. Transfer to a bowl and set aside.
  • Meanwhile, make the broth: Add all the broth ingredients plus 3/4 cup/200 milliliters water and 1 teaspoon salt to a medium lidded saucepan, and bring to a simmer over medium-high heat. Cover once simmering, turn the heat down to low and cook for 25 minutes. Drain through a sieve set over a bowl, discarding the solids, and return the broth to the saucepan along with another 1 1/4 cups/300 milliliters hot water. Keep warm over low heat until ready to serve.
  • Prepare the noodles: Boil them in a pot or saucepan according to package instructions, or for 5 minutes in plenty of boiling water. Drain well and run under cold water to stop the cooking. Return the drained noodles to the pot or saucepan and toss with the lime juice, soy sauce and cilantro (coriander).
  • Divide the warm broth across four bowls, then use a fork to twist and gather the noodles and nest them artfully in the bowls. Top with a spoonful of the ginger crumbs and the chile oil, serving the remaining alongside.
