An ice creamless parfait of sorts, the kids will enjoy making this as well as eating it. Place uncooked rice into a cup then the cones will stay upright to chill and fill. This is another 'on the fly' creation by a Bird. ;) For homemade Nutella, try Recipe #328643 or Recipe #328709

1/4 cup semisweet chocolate morsel, melted
2 small waffle cones
2 tablespoons white chocolate chips, melted
1/2 banana, mashed
2 tablespoons nutella, divided (recommended Mock Nutella Spread)
1/2 cup whipped topping
2 strawberries, sliced
1/4 teaspoon lemon juice
2 tablespoons peanuts, chopped fine (or pecans)

Steps:

  • Smear semi-sweet chocolate on the inside of the cones. Use a dowel or wooden skewer to help smear the chocolate on the inside. Place in cup of uncooked rice or lay on parchment paper to set.
  • Swirl small amount of remaining semi-sweet chocolate into the melted white chocolate. Dip open tops into the swirled chocolate and immidiately place upright (in the rice) so it drizzles a little down the outside of the cone (use your finger to smear the chocolate or catch drippings if needed). Allow to set again, this time in the refridgerator until chocolate is hard and fully set.
  • Meanwhile, mix banana with Nutella. When cones are set, place half the banana/Nutella evenly into bottom of each cone.
  • Divide the whipped topping and to half, mix in the strawberries, the other half mix in the lemon juice.
  • Place strawberry mixture over banana/Nutella layer thats in the cone. Follow with remaining banana/Nutella. Top with lemon whipped cream, sprinkle with chopped nuts and enjoy.

  • Place the whole milk and condensed milk in a saucepan and heat over medium heat. Once it’s warm and bubbling along the edges, sprinkle the gelatin over top and let it sit for a minute. Whisk until the gelatin dissolves, then remove the mixture from the heat.
  • Whisk in the mascarpone cheese, nutella and salt until completely melted and combined. Mandy recommends an immersion blender here, but I really loathe my immersion blender so I just continued to whisk and it worked out perfectly.
  • Pour the mixture into a baking dish (9-inch square works well) and freeze for at least 6 to 8 hours or overnight.
  • Right before serving, slice the mixture into cubes. Place half of the cubes in the food processor and pulse until they begin to break down, then turn the processor on and blend until creamy and smooth. If you’ve made banana soft serve with frozen bananas, it’s just like that. At this point the ice cream will be slightly melty, so you can pop it back in the fridge or serve it with a spoon, or place it in a piping bag and pipe into cones! Repeat with the remaining cubes and do the same.

  • In a medium saucepan, combine together the sugar, water and squeeze of lemon juice. Set on the stovetop over high heat. Try to avoid stirring it as it heats to prevent crystallization from happening, but if the sugar is not dissolving, then help it out with a few stirs. Once it comes to a boil, STOP stirring.
  • Bring to a rolling boil, then immediately reduce the heat to low and let it simmer for 15 minutes. Set a timer! The syrup will thicken, and have a consistency similar to corn syrup. It should be slightly thicker than the average simple syrup used for the classic pan kunafa.
  • Remove from heat. Transfer to a liquid measuring cup or gravy boat and allow to cool to room temperature before using.
  • Unwrap the kunafa from its paper. Take about a (3/4"/ 2cm) thick strand of kunafa and rewrap the rest to prevent from drying out.
