SCALLOPED POTATOES AND HAM
Short on time? I've included directions to help cut down on baking time. This involves cooking the potato mixture over medium-high heat for about 5 minutes to begin the cooking process. This helps reduce the baking time.

Steps:
- Preheat oven to 375F. Peel potatoes. Using a mandoline or food processor, slice the potatoes very thin.
- In a large mixing bowl, whisk together 1/2 cup cream and flour, until there are no lumps. Continue whisking in the remaining cream and milk. Add salt.
- Place potatoes, onions, and cream mixture in a large heavy saucepan. Turn on heat to medium-high, and cook, stirring gently and occasionally, for about 5 minutes, until mixture comes to a simmer.
- Stir in ham. Pour mixture into a large casserole dish. Bake for about 50 minutes, until top begins to brown. Remove from oven and cool for a few minutes before serving.

- Preheat oven to 350°. In a small saucepan, melt butter; stir in flour, salt and pepper until smooth. Gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, about 2 minutes. Remove from heat; stir in cheese until melted., Coat an 8-in. square baking dish with cooking spray. Place half of the potatoes in dish; layer with 1/2 cup onion and half of the cheese sauce. Repeat layers. , Bake, covered, 50 minutes. Uncover; bake until bubbly and potatoes are tender, 10-15 minutes longer.

- Preheat oven to 350°. Grease a shallow 1 1/2 -quart baking dish.Peel and thinly slice potatoes (you will need about 6 cups). Place half the potatoes in baking dish. Sprinkle with 1 1/2 tablespoons of the flour and sprinkle with salt and pepper. Dot with 1 1/2 tablespoons butter. If onion is used, place on top of butter. Repeat with remaining potatoes, flour, salt, pepper and butter. Bake for 15 minutes.Remove from oven. Add hot milk and carefully stir. Bake 1 hour longer or until potatoes are tender.
