NO BAKE PEANUT BUTTER CORNFLAKE COOKIES
These chewy no bake Peanut Butter Cornflake Cookies are an easy dessert with few ingredients. Plus, they're better than what Grandma used to make because there's NO corn syrup to boil. Shhh...we won't tell! With only 5 ingredients and minutes to make, the family will love how quickly they'll be enjoying them.

Steps:
- In a large pot, over medium low heat, melt the butter.
- Pour the marshmallows into the pan and stir until completely melted.
- Add peanut butter and vanilla and mix until thoroughly combined and peanut butter has melted. Turn off heat.
- Pour in the cornflakes and with a rubber spatula, mix until thoroughly coated.
- Using a tablespoon or small cookie scoop, place scoops of mixture onto a cookie sheet and form into a mound.
- Allow cookies to cool and harden for at least 15 minutes before serving.

These cookies remind me of peanut butter fudge. My Grandmother made them for us, and now I make them for my family. There is nothing healthy about this recipe but it is a great sweet-tooth fixer.

Steps:
- Line a baking sheet with waxed paper. Bring the sugar and corn syrup to a boil in a saucepan over medium heat; stir in butter and peanut butter until thoroughly mixed, and remove from heat.
- Place the corn flakes into a large bowl, and pour the peanut butter mixture over the cereal. Mix until the corn flakes are coated with the mixture. Drop by tablespoon onto the waxed paper; flatten slightly if desired. Allow to cool before serving.

I love the peanut butter in these wonderful cookies. My friend Jenn makes these for herhusband. One day She bought me a half a dozen corn flake cookies and I loved them. I had to have the recipe and I tryed it and it was easy.

- Add sugar, light corn syrup, peanut butter and salt to a medium saucepan and cook over medium heat, stirring constantly until all the ingredients are melted and the mixture starts to simmer. Turn off the heat and add cornflakes to the pot, stir gently but quickly to coat completely.
- Use a small silicone spatula to pack the cornflakes into a medium ice cream scoop to form the cookies and drop them on a lined baking sheet. Allow to dry for about 30 minutes.
- Melt chocolate in a heatproof bowl over a pot of simmering water. When most of the chocolate has melted, take the bowl off the pot and stir until the chocolate melts completely.
- Dip the bottom of each cookie in the melted chocolate and place back on the lined baking sheet. Allow chocolate to solidify.
