Cheeseburger salad loaded with ground beef, lettuce, tomato, onion and a special big mac sauce that tastes just like the big mac from McDonald's without the added carbs and fats!

1 pound 85-90% ground beef
1/2 cup diced onions
1/2 teaspoon salt
1/2 teaspoon pepper
6 cups romaine lettuce ((chopped))
1/2 cup sliced red onion
1 cup shredded cheddar cheese
1 cup tomato, diced ((optional))
1/4 cup dill pickles ((sliced or diced))
3/4 cup mayo
2 tablespoon dill pickles, finely minced ((or pickle relish))
1 tablespoon mustard ((or French/Thousand Island Dressing))
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

Steps:

  • Cook beef: Add the beef to a large pan and brown over medium-high heat for 3-4 minutes, smashing the beef to crumble. Add the onion, salt & pepper and cook for another 4-5 minutes or until the onion is softened and the beef is browned, cooked through and slightly crispy.
  • Make a big mac sauce: whisk all the ingredients in a medium bowl.
  • Assemble: Divide the lettuce into 4 bowls, top each bowl with ¼ the browned beef, onion, cheese, tomato and pickled. Drizzle with big mac sauce and serve immediately.

For the Beef Mixture and Salad:
1 pound ground beef
1 teaspoon salt
1 teaspoon Worcestershire sauce
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
For the Special Sauce Dressing:
1/2 cup mayonnaise
2 tablespoons sugar-free ketchup
2 tablespoons diced dill pickles
2 teaspoons yellow mustard
1 teaspoon white vinegar
1/2 teaspoon paprika
For the Salad:
6 cups shredded iceberg lettuce
1 cup cherry or grape tomatoes, halved
1 cup shredded cheddar cheese
1/2 cup dill pickle chips, quartered
1/4 cup finely chopped onion
Sesame seeds, for garnish

Steps:

  • Gather the ingredients.
  • In a large skillet over medium high heat, combine the ground beef, salt, Worcestershire sauce, onion powder, garlic powder, and black pepper. Cook for 8-10 minutes or until the beef is no longer pink. Set aside to cool slightly while preparing the rest of the salad.
  • Meanwhile, prepare the special sauce dressing. In a medium bowl combine the mayonnaise, ketchup, diced pickles, yellow mustard, white vinegar, and paprika. Stir to combine or blend in a food processor or blender for a smoother sauce if you prefer. Refrigerate until ready to use.
  • Assemble the salad. In a large bowl, combine the shredded iceberg lettuce, halved tomatoes, shredded cheddar cheese, pickle chips, and finely chopped onion.
  • Toss with the cooled ground beef mixture and the special sauce salad dressing.
  • Garnish with sesame seeds and serve.

1 head lettuce, torn
1 large tomato, sliced
1 large onion, sliced
½ cup dill pickle slices
2 tablespoons butter, melted
½ round loaf sourdough bread, cubed
¼ cup olive oil
¼ cup pickle juice
1 teaspoon mustard
1 teaspoon ketchup
1 teaspoon grill seasoning
1 pound ground beef
1 teaspoon grill seasoning
2 cups shredded American cheese

Steps:

  • Combine lettuce, tomato, onion, and pickle slices in a large bowl for salad. Set aside
  • Heat butter in a large skillet and toss bread cubes in until lightly browned, 2 to 3 minutes.
  • Combine olive oil, pickle juice, mustard, ketchup, and grill seasoning in a lidded jar for dressing. Close and shake until well combined. Set aside.
  • Heat a large skillet over medium-high heat. Season ground beef with grill seasoning and add to the hot skillet. Cook and stir until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add cheese and stir into the beef until melted.
  • Toss salad with the dressing just before serving. Put salad on plates and top with ground beef mixture and croutons.

8 slices white bread
1 -1 1/2 lb extra lean ground beef
1/2 cup finely chopped onion
1 head iceberg lettuce, shredded
1 1/2 cups shredded cheddar cheese
3/4 cup mayonnaise
1/4 cup ketchup
2 tablespoons sweet pickle relish
1/4-1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon sesame seeds

Steps:

  • Toast all eight pieces of bread until just lightly golden-brown. Let cool and cut into cubes; set aside.
  • Brown and drain the extra lean ground beef. Let cool.
  • In a large bowl, combine the cooked and cooled ground beef, toasted bread cubes,finely chopped onions, shredded lettuce and cheese; toss well. Place in a large salad/serving bowl.
  • In a seperate small bowl, stir together the mayonnaise, ketchup, relish, salt and pepper.
  • Drizzle the dressing over the salad. You can either leave it drizzled or toss everything to evenly coat salad.
  • Sprinkle with sesame seeds.
