NIF'S QUICK BAGUETTE CRISPS
I had half of a baguette left one day after making a recipe and thought that I would quickly make something for my kids to snack on. These were gone in no time! They would be perfect for appetizers - use for dips or spreads or just eat them as they are! There is not a lot of seasoning on these because I like the taste of a good baguette. These are sturdy but so light and crispy when you eat them. You have to make sure to cut them very thin or they are a little hard to chew. Enjoy!

Steps:
- Preheat oven to 350°F.
- Place baguette slices on a cookie sheet, making sure to leave a little space between them. I lined my sheet with tin foil so there was no clean up.
- Spray thoroughly (enought to coat) and evenly with olive oil. Sprinkle with seasoning salt, just enough to taste. You don't want these to be salty, just nicely seasoned.
- Bake for 12 minutes. That was the perfect amount of time for my oven, but check your oven earlier to make sure that they don't burn. They are done when they are lightly browned.
- Let cool and store in an airtight bag or container.

NIF'S CRUNCHY CHOCOLATE TREAT
Yummy! This is an easy and delicious treat that everyone seems to like, even me and I don't have a sweet tooth. It's been a big hit at baby or bridal showers. I like sunflower seeds on top because I like the salty with the sweet but you can use any kind of nuts if you prefer. (I've even had this with graham wafers instead of the crackers, but I thought it was waaay to sweet.) I didn't include the cooling time in the preparation time. Steps:
- Preheat oven to 400°F Line a cookie sheet with tin foil (I use the nonstick kind). Arrange Stoned Wheat Thins to cover entire bottom of tray.
- Heat butter and brown sugar in small pot on medium heat. Bring just to a boil, stirring often. Pour evenly over crackers. Bake for 5 minutes immediately after adding hot butter mixture.
- Once removed from oven, immediately sprinkle chocolate chips on top. Wait a couple of minutes and spread melted chocolate over baked crackers. Sprinkle sunflower seeds over chocolate right away so they will stick.
- Let cool and put tray in fridge. After about an hour or two (when solid), break into "chunks" and serve.
- Store in fridge.

Steps:
- Dip a pastry brush into the melted chocolate and brush up the side of two glasses. Chill until set.
- Pour the Irish cream liqueur, coffee liqueur, chocolate syrup and vodka into a shaker with a handful of ice and shake hard until the outside of the shaker feels very cold. Strain into the glasses.

NIF'S QUICK RASPBERRY MINT JAM
I had fresh raspberries in my fridge and a mint plant on my counter. What to do with them? I gave this a shot and it turned out really well! I didn't include cooling time. Enjoy!

Steps:
- In a large pot, mash raspberries with a potato masher. Stirring, bring to a boil for 1 minute. Add sugar and, stirring, bring to a boil for 3 minutes. Remove from heat.
- Let sit for 10 minutes and add 1 tablespoon chopped mint. Again, let sit to cool for 10 minutes. Taste and add more mint if desired. I didn't add any more mint.
- Pour into airtight container and store in the fridge. I didn't use a sterilized jar because I know it won't last long!
