All sorts of goodness come together in this one-pot pasta dish. Alfredo sauce, shrimp, chicken, smoked sausage, and more.

8 ounces chicken breast (cut into bite-sized pieces)
1 cup Italian dressing
16 ounces penne pasta
4 ounces butter
4 tablespoons all-purpose flour
1 1/2 cup heavy cream
1/3 cup shredded parmesan cheese
1/2 cup shredded mozzarella
1 1/2 cup salsa
1 1/2 tablespoons Tony Chachere's Creole Seasoning
8 ounces smoked sausage (sliced)
8 ounces shrimp (medium sized) peeled and deveined
1 sliced green bell pepper
1 white onion, sliced

Steps:

  • Marinate chicken for about 1 hour in the Italian dressing. Discard the marinade after the marinate has completed.
  • Cook pasta according to package directions.
  • In a large pot, heat butter. When the butter melts add the flour. Stir and cook for about 1 minute or until the roux begins to smell nutty.
  • Add cream, parmesan cheese, mozzarella, and salsa. Stir to combine, and once the sauce thickens simmer until the sauce is needed.
  • Add 1 tablespoon of oil into a large skillet over medium heat. Cook chicken for 5 to 7 minutes, or until done. Remove chicken from the skillet.
  • Add sliced sausage to the skillet and sear. Remove sausage and wipe out the skillet.
  • Sprinkle Tony Chachere seasoning on the shrimp.
  • Add another tablespoon of oil to the skillet and cook shrimp just until pink. Remove shrimp from the skillet.
  • Add oil to the skillet if necessary and sauté onion and green bell pepper until the vegetables are tender.
  • To assemble, combine pasta, meats, cooked vegetables with the sauce. Serve immediately.

ESSENCE CREOLE SEASONING:
3/4 pound cooked fettuccine
2 tablespoons olive oil
1 pound peeled, deveined raw large shrimp
1 tablespoon plus 2 teaspoons Essence seasoning (recipe below)
1 1/2 hot links, or smoked turkey sausages, sliced and quartered
1/2 cup diced green pepper
1/2 cup diced yellow onion
1 tablespoon minced garlic
1/2 cup chicken stock
1 teaspoon dried thyme
1 teaspoon dried basil
1/2 cup heavy whipping cream
1/2 cup grated Parmesan
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Heat 1 tablespoon of olive oil over medium high heat in a large saute pan. Season the shrimp with 2 teaspoons of the Essence. Place the shrimp in the pan and saute until almost done. Don't overcook, as they'll continue to cook when you add them to the sauce. Remove the shrimp from the pan and set aside. Place the remaining tablespoon of olive oil in the saute pan and onions and bell peppers. Saute, stirring occasionally, until the onions are translucent, about 3 minutes. Add the sausage and cook another minute. Add the garlic to the pan and saute for 30 seconds. Add the chicken stock to the pan and scrape with a spoon to remove any browned bits that have formed in the bottom of the pan, about 30 seconds. Add the thyme, 1 tablespoon of Essence and 1/2 teaspoon salt and cook for 2 minutes. Add the heavy cream to the pan and cook an additional 2 minutes. Return the shrimp to the pan and pasta to the pan. Continue to cook the sauce and pasta, stirring occasionally, for about 3-5 minutes. Remove from the heat and add the basil and Parmesan. To make the Essence Seasoning, just mix all of the ingredients and store in an airtight container.

I had some shrimp and smoked sausage that I needed to use up, so I started thinking about what I could do with it. I remembered a similar recipe that I had once at a restaurant that was very good. It inspired me to come up with this recipe and we both really enjoyed it, but it made a lot, so I'll have to freeze some. You can...

1 lb box of angel hair pasta (i used about 3/4 of the box)
2 Tbsp butter
2 medium tomatoes
3 small green onions
1 Tbsp fresh chopped basil leaves
1 tsp minced garlic (or more, if you like)
2 tsp tony cachere's creole seasoning (more or less to taste)
1 tsp cajun seasoning (more or less to taste)
14 oz package of smoked sausage or andouille sausage if you prefer more spice
32 oz carton of heavy cream
1/2 c parmesan cheese
1 1/2 lb shrimp, peeled and deveined with tails removed

Steps:

  • 1. Cut tomato in quarters, then scoop out the seeds. Dice and set aside. Thinly slice tops of green onion. Chop basil leaves and slice smoked sausage. If using fresh shrimp, peel and devein and remove tails. Set aside. Reserve 7 or 8 shrimp to saute later.
  • 2. Cook pasta according to package directions, then drain and rinse with cold water. Set aside.
  • 3. In a dutch oven or large skillet with deep sides, melt butter. Saute onions, garlic, tomatoes and seasonings on medium high heat for about 7 to 8 minutes. Add sausage and brown well.
  • 4. Pour in heavy cream and bring to a boil. Add cheese and sprinkle with additional creole seasoning, if desired. You may also add a dash of salt at this time, but keep in mind that the sausage and the cheese contains salt, so use your own judgement.
  • 5. Once mixture comes to a boil, reduce heat to medium and cook uncovered for about 15 minutes to reduce, stirring occasionally. Add shrimp and cook for about 5 to 7 more minutes or until shrimp is pink.
  • 6. Remove from heat and add pasta, gently stirring to coat. Garnish with sauteed shrimp and serve.
  • 7. TO SAUTE THE EXTRA SHRIMP: In a small skillet, melt about 1 tablespoon of butter. Add about 3/4 teaspoon of minced garlic and the reserved shrimp. Sprinkle with creole seasoning and brown shrimp well. Use as a garnish for pasta dish.

1 large onion, chopped

1-1/2 cups heavy whipping cream
1/4 cup white wine or chicken broth
1/4 to 1/2 teaspoon Creole seasoning
1/4 teaspoon salt
1/8 to 1/4 teaspoon crushed red pepper flakes
1/8 teaspoon pepper
1/2 pound fully cooked andouille sausage, sliced
1/2 pound uncooked medium shrimp, peeled and deveined
2 cups chopped tomatoes

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a large skillet, saute the onion, celery, peppers, green onions and garlic in 2 tablespoons butter until tender. Stir in the cream, wine, Creole seasoning, salt, pepper flakes and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 5-6 minutes or until thickened., In another large skillet, saute sausage and shrimp in remaining butter for 5-6 minutes or until shrimp turn pink. Drain fettuccine; toss with vegetable mixture, tomatoes and sausage mixture.

12 ounces uncooked pasta (I used fettuccine)
2 tablespoons olive oil
1 lb Andouille Sausage
1 pound large shrimp (For this I used frozen deveined. If using fresh clean and devein)
1 bell peppers, thinly sliced (I used a red bell pepper)
1 small onion, peeled and diced
2 tablespoons olive oil or butter
4 large cloves garlic, minced or pressed
1 tablespoon sugar
1 cup chicken broth
1 15 oz can crushed tomatoes
1 1 1/2 cup heavy cream
1/4 cup Parmesan cheese
2 tablespoons Cajun seasoning, homemade or store-bought (divided using a pinch to season the shrimp)
1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
salt and fresh cracked black pepper, to taste
1 tablespoon chopped fresh parsley for garnish (optional)

Steps:

  • Cook the fettuccine according to the package instructions, and keep warm.
  • Cut the sausage into 1/4" -1/2" chunk size slightly diagonal. Season shrimp with salt and pepper and a pinch of Cajun seasoning.
  • In a large skillet over medium heat, heat olive oil, add onion and bell pepper. When the onion is almost translucent, about 3 minutes then add garlic. Remove and set aside.
  • Add sausage to brown and set aside. Pour out any excess grease leaving about 1 tablespoon, add the shrimp and cook until pink, curled and cooked through, about 2 minutes per side, then transfer to a plate.
  • Add chicken broth, stirring and scraping up any brown bits from bottom of pan. Add crushed tomatoes, sugar, remaining Cajun seasoning, thyme and heavy cream then turn down to a simmer.
  • Once simmering, add Parmesan and stir into sauce, simmer a few more minutes and taste if sauce needs any extra salt or pepper.
  • If serving directly from the skillet, mix in pasta and top with shrimp, sausage and the parsley. Depending on the size of your skillet I poured the pasta into a serving dish, and topped with the sauce, shrimp, sausage and sprinkled the chopped parsley.

2 tablespoons olive oil
1 small onion, chopped
1 celery rib, finely chopped
1 small green pepper, chopped

1 can (15 ounces) Italian tomato sauce
1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrained
1/2 cup water
1/2 teaspoon Worcestershire sauce
1/8 to 1/4 teaspoon cayenne pepper
1 pound uncooked shrimp (31-40 per pound), peeled and deveined
3 cups hot cooked brown rice

Steps:

  • In a large skillet, heat oil over medium heat. Add onion, celery and pepper; cook and stir 5-7 minutes or until tender. Add garlic; cook 1 minute longer., Stir in tomato sauce, diced tomatoes, water, Worcestershire sauce and cayenne; bring to a boil. Reduce heat; simmer, uncovered, 10-15 minutes or until slightly thickened, stirring occasionally. Add shrimp; cook 2-4 minutes or until shrimp turn pink. Serve with rice.
