An easy recipe for green chile verde with ground pork, green chiles, and potatoes.

1 pound ground pork
2 tbsp olive oil
1 onion (diced)
3 cloves garlic (minced)
6 cups chicken broth
1/2 cup green chile (pureed)
4 cups potatoes (peeled and cubed)
2 tbsp cumin
salt and pepper (to taste)

Steps:

  • Cook ground pork in a large skillet until no longer pink. Set aside.
  • Add olive oil to skillet and warm over medium-high heat. Add in onions and saute for 8 - 10 minutes, or until soft and translucent. Add in garlic, saute another minute, then add in cooked pork, chicken broth, green chilies, potatoes, cumin, salt and pepper. Bring to a boil, reduce heat to medium-low, and simmer for 20 - 30 minutes, or until potatoes are softened.
  • Serve with a warm flour tortilla

1/4 cup oil
4 pounds pork butt, (trimmed and cut into 1 1/2-inch cubes)
2 large onions, (peeled and chopped)
1 tablespoon ground cumin
1 tablespoon ground coriander
1 tablespoon oregano
4 cloves garlic, (minced)
2 Hatch peppers, (chopped (or Anaheims) )
2 Poblano peppers, (chopped)
1-2 jalapeno peppers, (seeded and diced)
1 pound tomatillos ((peeled and cleaned), chopped)
2 bay leaves
1 bunch cilantro ((large), chopped)
3 tablespoons masa ((corn flour))
4 cups water (or chicken stock)
1 tablespoon salt, (divided)
Lime wedges (for garnish)

Steps:

  • Heat the oil in a large pot over medium-high heat. Add the pork and 2 teaspoons of salt. Brown the pork on all sides, stirring regularly. Remove the pork from the pot and pour out all rendered fat, saving about 1 tablespoon.
  • Add the onions, remaining salt, cumin, coriander, and oregano to the pot. Sauté for 3-5 minutes. Then add the garlic and peppers. Sauté another 3-5 minutes. Add the chopped tomatillos, bay leaves, and cilantro. Toss the pork with the masa and add back to the pot. Stir well.
  • Finally add the water. Bring to a boil, then reduce the heat to low. Cover and simmer for 3 hours, or until the pork is falling apart, stirring occasionally.
  • Take 2 forks and break the pork up even more. Salt and pepper to taste.

10 fresh Poblano chiles (about 2 pounds)
3 thin slices bacon
1/2 cup coarsely chopped onion
2 garlic cloves, minced
1 teaspoon Ancho chile molido or chili powder (available in Latin American markets)
1/2 teaspoon salt
2 tablespoons masa harina (available in Latin American markets)
2 pounds boneless pork, cut in 1/2-inch cubes
3 cups chicken stock
1/2 teaspoon ground cumin (optional)
Salt and pepper

Steps:

  • Over gas flame or on barbecue grill roast chiles until charred on all sides. Place in a paper bag for 20 minutes. Peel off blackened skin, remove seeds and membranes and chop into coarse pieces.
  • In a large heavy stew pot heat bacon over high heat and saute until 3 tablespoons of fat are rendered. Reserve bacon for another use or discard. Add onion and garlic and saute until onion browns. In a large bowl mix together ancho chile molido, salt and masa harina. Add pork and toss to coat in spice mix. Push onion to sides of pot and add seasoned pork cubes, turning several times until well-browned. Stir together pork and onions, add stock, scraping up any browned bits from bottom of pan, and bring to a boil. Reduce heat to simmering and add roasted poblano. Stir well, cover and cook about 2 hours, or until pork is very tender. If using cumin, add 5 minutes before end of cooking. Taste and season with salt and pepper if needed. Serve with warm corn tortillas and garnish as desired with cumin, posole, lime juice, cilantro, or extra chopped roasted chiles.

5 roasted pasilla chiles
3 lbs pork shoulder, cut into 1/4 cubes
1 brown onion
4 roasted garlic cloves
1 tablespoon salt
1 tablespoon sugar
1 teaspoon black pepper
6 roma tomatoes
4 cups chicken stock
1 brown onion
1/4 cup flour

Steps:

  • lightly brown pork cubes in some olive oil and remove from pot.
  • Brown diced onions for about 10 min or until onions are caramelized
  • Add roasted garlic.
  • Add back the meat.
  • Add flour and cook it for a couple of minutes to remove the flour taste then Add tomatoes and Roasted dry chilies.
  • Pour chicken broth in a blender and blend chili and broth. Add the chili chicken broth to stew.
  • Bring mixture to boil and simmer.
  • Add sugar, salt and pepper.
  • Allow mixture to thicken and thoroughly finish cooking the pork.

HATCH CHILE VERDE

Hubby and I are Hatch chile fanatics. We buy 50 pounds of roasted Hatch chiles when they are in season. We portion them out and freeze them so they are readily available. This chile verde does not call for tomatillos because I wanted the chiles to be the star of the recipe.

8 each Hatch chile peppers, or more as needed
2 pounds pork butt, cut into 1-inch chunks
½ cup water
½ teaspoon salt
1 tablespoon oil, or as needed
1 onion, diced
6 cloves garlic, pressed
1 tablespoon ground cumin
¼ cup all-purpose flour
4 cups chicken broth, or more as needed
1 (14.5 ounce) can diced tomatoes
1 pinch salt and ground black pepper to taste

Steps:

  • Place Hatch chiles directly on the grates of a gas stove. Cook over medium heat, flipping with tongs occasionally, until blackened and charred, about 5 minutes. Place in a sealed plastic bag and allow to cool, 7 to 8 minutes.
  • Peel off charred skins, remove seeds, and cut 1/2 of the chiles into 1-inch squares. Set aside. Place remaining chiles in a food processor and process until finely chopped. Add processed chiles to chopped chiles. Set aside.
  • Combine pork cubes, water, and salt in a Dutch oven. Cover and cook over medium heat for 20 minutes, stirring every 5 minutes. Uncover, raise heat to medium-high, and cook, stirring constantly until the water evaporates and the pork browns in its rendered fat, 15 to 20 minutes. Remove pork and set aside.
  • Heat oil in the Dutch oven. Add onion; cook and stir until soft and translucent, 5 to 7 minutes. Add garlic and cumin and cook until fragrant, about 1 minute. Stir in flour and cook for 1 to 2 minutes. Add chiles, pork, chicken broth, canned tomatoes, salt, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer, stirring occasionally, until pork cubes are fork-tender, about 1 1/2 hours.

This recipe was developed by Chef Rachel Bradley. I originally found it on the Castro Valley Patch website. I was looking for anuthentic chili verde recipe for my mom and stumbled across this one. Man am I glad that I did! It is AMAZING. Im not going to lie, its a lot of work but it was SO worth it! Be prepared to be cooking most of the day but please dont let that scare you off! The recipe is VERY simple, just a huge labor of LOVE! Note on PREP TIME and COOKING TIME: I have made this once and it took me 7 hours from the very beginning to putting it on the table. I also have 2 children that I was concentrating on so I set the prep time at 3 hours. Depending on how you roast the peppers and tomatillos and what size pot you use to brown the pork that time will very.

4 lbs boneless pork shoulder, trimmed and cut into 1 inch cubes
1/4 cup all-purpose flour
2 large yellow onions, fire roasted and chopped
4 garlic cloves, minced
1 tablespoon sea salt
black pepper, freshly ground, to taste
1 tablespoon cumin, ground
10 poblano peppers, fire roasted, peeled, seeded, and chopped
6 jalapenos, fire roasted, peeled, seeded, and chopped
3 yellow bell peppers, fire roasted, seeded, peeled, and chopped
6 anaheim chilies, fire roasted, seeded, peeled, and chopped
2 quarts chicken stock
3 lbs tomatillos, husks removed, fire roasted
2 bunches cilantro, stems discarded, leaves chopped
3 large limes, juiced
1/2 lb smoked bacon, diced

Steps:

  • Fire-roast the peppers and tomatillos. You can do this on the grill, over a gas burner, or under your broiler turned on high. The goal is to char the skin of the vegetable. ROASTING THE PEPPERS AND TOMATILLOS ADDS TONS OF FLAVOR TO THEM! IT IS WORK BUT DO NOT SKIP THIS STEP!
  • Place the charred vegetables in a large heat proof bowl or pan and cover with foil. The steam from the vegetables will help the charred skin come off easily. Let sit covered 15-20 minutes and then the charred skin will easily peel off the peppers and tomatillos.
  • In a large (6 to 8 quart) stock pot, over high heat, brown the bacon reserving the bacon drippings.
  • Next, trim off any excess fat from the pork and cut into 1 inch squares. Liberally season the pork with salt and pepper and toss with flour to coat evenly.
  • DO NOT SKIP THIS STEP! THIS IS WHAT ADDS THE MOST FLAVOR TO THE CHILI VERDE! Brown the seasoned pork in small batches, in the bacon drippings, being careful not to overcrowd the pot. Remove the pork from the pot and pour off the fat drippings, leaving two tablespoons of fat. Caramelizing the meat to a rich golden-brown is a key flavor step!
  • In the same pot, over a medium heat, add the chopped onion, garlic, salt, and pepper and sauté until transparent, scraping up any browned bits. Add the cumin, pork, and chicken stock, and cook simmering over medium-low heat for 1 hour.
  • Place half of the peppers, one bunch of cilantro, and half of the tomatillos in to a blender or the bowl of a food processor and pulse for a chunky puree. Add the puree to the pot with the pork and stir to combine, cooking on medium-low for an additional 30 minutes.
  • Roughly chop the remaining tomatillos, peppers, and cilantro. Add them to the pot, stir, and simmer for an additional 30 minutes, for a total cooking time of two hours.
  • Add the lime juice and adjust seasoning to taste with salt and pepper.
