1 large Vidalia onion
1 can beer (Budweiser or the like is fine)
Olive oil
6 pounds steamer clams
1/4 cup onion, finely diced
1/4 cup dill pickles, diced
3/4 cup mayonnaise
1 tablespoon pickle juice
2 cups canola oil or more, according to manufacturer's instructions on deep-fryer
3 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons salt
2 eggs, lightly beaten
1/2 cup evaporated milk
1 1/2 cups clam broth
Lemon wedges, if desired

Steps:

  • For the Clams: Over medium heat in a large pan, pour 3 tablespoons olive oil. Chop onion into large chunks and saute in oil until lightly cooked, about 5 minutes. Add the beer and the clams. Cover and cook until all of the clams are opened, about 10 to 15 minutes depending on how many you have in the pan.
  • Remove pan from heat, uncover and allow to cool to the touch before shucking.
  • Push the clams to the side so that there is broth visible to rinse the clams in after shucking. Remove clams from shell 1 at a time and pull off membrane that covers the neck and discard. Rinse shucked clams in broth and set aside. When all clams are shucked, drain the broth out of them by giving them a slight squeeze over the pan of broth. Chop roughly and set aside.
  • For the tartar sauce: Mix all ingredients in a small bowl to serve with clam cakes. Refrigerate until serving.
  • For the clam cakes: In a deep-fryer or on the stove top in a deep skillet, preheat oil to 375 degrees F.
  • In a large bowl, combine flour, baking powder and salt. Fold in eggs, evaporated milk and clam broth until thoroughly mixed. Stir in clams and mix well.
  • Dip a spoon into the heated oil, then take a 2 tablespoon sized scoop of the fritter mixture and carefully drop into oil. Turn the cake over when the first side is browned. Fritters should be cooked through and browned in 4 to 5 minutes. Remove with a skimmer and drain on brown paper bag. Reseason with additional salt, if desired. Serve with the tartar sauce and enjoy! If desired, serve on small plates with wedges of lemon.

Leftover fish cakes make a wonderful sandwich when heated, placed on buns, topped with a slice of cheddar cheese and some home made tartar sauce!! YUMMMMMM!!!!! This recipe is as we like to say in the North...

FISH CAKE RECIPE
1 lb cod, haddock or any mild white fish local to your area
3-4 russet potatoes medium size
1 c bread crumbs, dry - plus more for coating fish cakes
1/4 c flat leaf parsley ( italian type...not curley) chopped
2 1/2 Tbsp shredded or grated parmesan cheese
2 garlic cloves- minced
1 tsp salt
1/2 tsp pepper
1 tsp old bay seasoning
2 spashes of lemon juice
BAKED BEAN RECIPE
2- 28 oz can(s) b&m beans ( not bbq flavored...any others are fine
1/2 onion- chopped ( half of the whole onion)
1/2 c ketchup
4 Tbsp spicy brown mustard
4 Tbsp brown sugar
2 Tbsp molasses
TAR-TAR SAUCE FOR FISH CAKES
1 c hellmans mayonnaise
4 Tbsp dill relish
2 Tbsp champagne vinegar or white wine vinegar
2 tsp coarse grain mustard ( the one that looks like 99% seeds)
splash of lemon juice
salt and pepper

Steps:

  • 1. Preheat your oven to 425 degrees... For the Fish Cakes: Place fish in 9x13 glass pan, sprinkle with salt and pepper and a few small splashes of lemon juice. Cover tightly with foil and bake for 25 minutes at 425 degrees. Remove from oven and set aside to cool, leaving the foil in place covering the fish as it cools.
  • 2. While fish is baking, peel, chop and boil the potatoes...drain water, return potatoes back to the same pot and let the heat left over from stove burner "dry" the potatoes a bit, giving the pan a few shakes while "drying".
  • 3. Add all the fish to the potatoes...(do not add the liquid from the bottom of fish pan) Mash the fish and potatoes lightly together with potato masher... but mix well.
  • 4. Add the rest of the ingredients to the mash and mix well using your hands. The mix will be somewhat sticky. Form the mixture into hamburger size patties, about a 1/2 an inch thick ( you should get in the vicinity of 12 patties depending on your size) Once your patty is formed, coat the front, back and all around the sides of the cake with additional bread crumbs, then set prepared fish cakes on cookie sheets sprayed with Pam if baking.
  • 5. You can either fry the patties, a few at a time in canola oil in a cast iron fry pan until golden brown...or you can bake them in the oven at 350 degrees in with the beans... (Fish cakes and Beans will take aprox 1 hour to bake in oven together)
  • 6. Preheat oven to 350 degrees... For the Beans: In a casserole sprayed with Pam, mix all the bean ingredients together...do not cover...place in 350 degree oven with fish cakes and bake for 1 hour flipping fish cakes after a half an hour. Give the beans a few turns with a spoon when you flip the fish. Bake for an additional 30 min to make a total of 60 minutes of baking.
  • 7. For the Tar-Tar Sauce: Mix all the ingredients well and chill for 2 hours...let sit at room temp 1/2 hour before serving

100g white breadcrumb
2 eggs
450g potato , peeled
450g smoked haddock
1 lemon , grated zest
2 tbsp chopped fresh parsley
flour , for dusting
3 tbsp vegetable oil , for frying
200g mayonnaise
2small gherkins , chopped
2 tbsp caper , roughly chopped
1small shallot , very finely chopped
1 tsp horseradish sauce
½ tsp dry or made mustard
2 tbsp finely chopped fresh parsley

Steps:

  • Make the tartare sauce: mix all the ingredients together and chill (you won't need it all; leftovers keep for 3-4 days, covered, in the fridge and enliven any seafood dish).
  • Preheat the oven to 150C/gas 2/fan 130C. Spread the crumbs over a baking sheet and dry in the oven for 10-15 minutes until pale golden, stirring halfway.
  • At the same time, hard-boil one of the eggs. Cut the potatoes into chunks. Cook in boiling salted water for 10-15 minutes until tender. Drain well and mash with a fork.
  • While the egg and potatoes are cooking, put the fish in a frying pan with just enough water to cover. Bring to the boil, reduce the heat, cover and simmer for 5 minutes until just cooked. Remove the fish with a palette knife and put on a plate. When it is cool enough to handle, carefully remove the skin and any bones. Flake the fish.
  • Shell the egg and chop it. Carefully mix with the potato, fish, lemon zest, parsley, ½ tsp salt and a some black pepper. With floured hands, shape into 4 round cakes.
  • Coat each cake in the egg, then the dried breadcrumbs. Reshape if necessary.
  • Heat the oil in a frying pan and fry the cakes over a medium heat for 5 minutes on each side, turning once, until golden on both sides. Serve with the tartare sauce.

NEW ENGLAND-STYLE COD AND POTATO CAKES WITH TARTAR SAUCE



New England-Style Cod and Potato Cakes with Tartar Sauce image

Number Of Ingredients 10

1 pound skinless cod fillets (approximately 2 to 3 fillets)
4 large russet or Idaho potatoes (about 3 1/2 pounds), peeled
2 large eggs
2 tablespoons all-purpose flour
1/4 cup coarsely grated onion, squeezed of excess moisture
1 teaspoon celery seeds
1/4 teaspoon celery salt
6 tablespoons vegetable oil
6 tablespoons unsalted butter
Tartar Sauce

Steps:

  • Preheat oven to 200°F. Place 2 nonstick baking sheets in oven.
  • In medium saucepan, cover cod with cold water by 1 inch. Set over moderately high heat and bring to simmer. Drain and set aside to cool.
  • Using box grater or food processor fitted with grating disc, coarsely grate potato and set aside in colander to drain.
  • In large mixing bowl, lightly beat eggs. Whisk in flour, then add onion, celery seeds, and celery salt. Break cod into small flakes and add to bowl.
  • Press potatoes to extract as much liquid as possible, then add to bowl. Season mixture with salt and freshly ground black pepper. Using wooden spoon or hands, mix well, but do not overwork.
  • In heavy-bottomed, 12-inch skillet over moderately high heat, heat 1 tablespoon oil and 1 tablespoon butter until hot but not smoking. Drop 4 scant 1/4-cup portions of batter into pan and flatten with spatula to form four 3-inch pancakes.
  • Fry until bottoms are golden-brown, 4 to 5 minutes, then turn over and fry until golden-brown and crisp, an additional 4 to 5 minutes. Transfer to paper towels to drain; season immediately with salt and pepper. Keep warm on baking sheets in oven while making remaining pancakes.
  • Using paper towels, carefully wipe out pan. Add 1 tablespoon oil and 1 tablespoon butter and fry 4 more pancakes. Repeat with remaining batter, wiping out pan and adding 1 tablespoon oil and 1 tablespoon butter before each batch.
  • Serve pancakes hot with Tartar Sauce .

NEW ENGLAND CODFISH CAKES

Number Of Ingredients 10

1 1/2 pounds fresh skinless, boneless cod fillets
Salt and freshly ground white pepper to taste
1 1/2 pounds potatoes, preferably russet
3/4 cup peeled and sliced onions
1 egg, well beaten
2 teaspoons English mustard
1 teaspoon Worcestershire sauce
4 tablespoons grated onion
1/3 cup all-purpose flour
4 tablespoons vegetable oil, approximately

Steps:

  • Season fillets well with salt and pepper. Place on the rack of a steamer over boiling water. Cover and steam for 5 minutes. Remove rack and fish and let fillets cool.
  • Peel potatoes and cut them into 1 1/2-inch cubes. Cover with cold water in a saucepan. Add sliced onions, salt and pepper. Bring to a boil and simmer for 15 minutes or until potatoes are tender.
  • Drain potatoes well and mash them coarsely.
  • When fish is cool enough to handle, flake it with a fork.
  • Place potatoes in a mixing bowl. Add egg, mustard, Worcestershire sauce and grated onion. Blend very well and add fish, folding it in lightly without overmixing. Put mixture in a baking dish and chill in refrigerator.
  • When mixture is thoroughly cool, shape it into 12 hamburger-size patties. Put flour in a shallow dish and dredge fish cakes in it. Shake off excess flour.
  • Heat 2 tablespoons of oil in a large nonstick skillet. Fry patties for about 2 1/2 minutes on each side or until golden brown. Drain on paper towels and serve immediately. Use remaining 2 tablespoons oil if necessary. Serve with tartar sauce (see recipe).

  • If you are using salted cod instead of fresh, rinse all visible salt off the fish and rinse again for several minutes. Soak the cod in 2 quarts of milk under refrigeration for 24 hours. Rinse off milk and cod thoroughly and soak in another two quarts of milk under refrigeration for another 24 hours. Rinse off milk and cod thoroughly again and flake. Discard the milk. Soak flaked cod in water for an hour and rinse again. (If you are using fresh cod, cut into small pieces.) Place cod in a large bowl.
  • Bring water to a boil in a medium pot and place whole peeled russet potatoes into water. Boil for 10 minutes then shut off heat and let them sit in the hot water for 30 minutes. They will be partially cooked at this point. Cool completely.
  • In a medium sauté pan over medium heat, melt butter in oil. Add onions and celery and sauté 3-5 minutes until onions are translucent. Add garlic and cook for one more minute. Cool before adding to fish and potato mixture.
