TABBOULEH SALAD
A great salad for potlucks. Substitutions can be made to the vegetables. While in Mexico I used cilantro instead of parsley and added poblanos and created a southwestern tabbouleh. Very refreshing!

Steps:
- Combine bulgur, boiling water, and salt in a bowl.
- Cover and let stand 15-20 minutes, or until bulgur is chewable.
- Add lemon juice, garlic, oil, and mint, and mix thoroughly.
- Refrigerate 2-3 hours.
- Just before serving add the vegetables and mix gently.
- Correct seasonings.
- Garnish with olives.

NEW-AGE TABBOULEH SALAD
It's summer and it's hot. What I want...what I crave...is to eat something delicious, refreshing and healthy, and that's how this brown rice tabbouleh was born. It's the perfect salad to have with grilled anything, or to bring to a potluck. And you know you're being good to yourself in every way possible.

- Combine all salad ingredients in a large, resealable bowl.
- Whisk together dressing ingredients, adding salt and pepper to taste. Toss salad with dressing. Taste salad (try to get a little of everything on your fork), add a little more lemon, if necessary. Adjust seasoning.
- Refrigerate at least 2-3 hours before serving to allow flavours to mingle and love each other. Mix salad well before serving to redistribute dressing. :-).

- Prepare tabbouleh according to package directions, eliminating chopped tomatoes.
- Stir in cherries and lemon or lime juice.
- Refrigerate, covered, several hours or overnight. Serve on romaine lettuce leaves. Sprinkle with pine nuts just before serving.

TABBOULEH

Steps:
- Place cracked wheat in a bowl and cover with water. Set aside for approximately 30 minutes until wheat has swelled and softened. Drain wheat, squeezing it in your hands to expel as much water as possible.
- Place the wheat in a large salad bowl. Add parsley and mint and mix well. Add scallions, onions and tomatoes, using a wooden spoon or your hands to press the vegetables slightly so that they give up their flavors.
- Add olive oil, lemon juice and salt, if desired. Taste, and add more lemon juice if necessary. The lemon taste should be definite but not overpowering. Set aside, covered, in a cool place for an hour or so until ready to serve.
- Serve the tabbouleh on a tray lined with crisp romaine lettuce leaves. Diners should use the leaves to scoop up the tabbouleh.

- Cook according to package directions. I make mine by pouring it into a medium sized bowl, covering with boiling water and leaving for 10 minutes while I prepare the rest of the salad ingredients. Then drain, cool and use.
- Chop the parsley, spinach and mint really finely! Chop until you think it's small enough, then chop it a little bit more!
