1/2 cup butter (softened)
3/4 cup powdered sugar
1 tablespoon vanilla
2 drops red food coloring paste
1 1/2 cups flour
1/8 teaspoon salt
20 -25 maraschino cherries

Steps:

  • Heat oven to 350 degrees.
  • Mix thoroughly butter, sugar, vanilla.
  • Add red food coloring.
  • Mix in flour and salt until dough hold together. (If dough is dry, mix in 1 - 2 Tablespoons light cream.
  • Mold dough by teaspoonfuls around Maraschino cherry.
  • Place cookies about 1 inch apart on parchment lined cookie sheets.
  • Bake 12 - 15 minutes or until set but not browned.
  • Cool. Dip tops of cookies into Icing.

Easy No Chill Rolled Sugar Cookies bake up perfectly and hold their shape! They are the best sugar cookies to bake in a hurry and decorate for any fun occasion!

1 cup butter ((2 sticks, at room temperature but not softened))
1 cup sugar
1 tsp vanilla extract
1/2 tsp almond extract
1 large egg
2 tsp baking powder
3 cups all-purpose flour
1 pinch salt ((optional, use 1/2 tsp of salt if using unsalted butter))

Steps:

  • Preheat your oven to 350 degrees F (175 degrees C) and line a baking sheet(s) with parchment paper.
  • In a large bowl, or the bowl of your stand mixer, cream together the butter and sugar. *The butter should be (preferably) at room temperature, but still firm. If your working with cold butter, it will take longer to cream together but can be cut in to the sugar using a pastry cutter to help your dough stay chilled during the mixing process.
  • Once the butter and sugar are combined, add the extracts and egg, baking powder and pinch of salt. Combine thoroughly.
  • Add the flour, starting with 2 cups. Work the flour into the dough, even with only 2/3 of the flour mixed in the dough may seem crumbly but it will all come together when turned out and kneaded (like bread) before rolling out to cut shapes.
  • Once the first 2 cups of flour has been incorporated, turn the dough out onto a well floured surface or pastry mat and work the remaining flour into the dough until you have a firm cookie dough for rolling. *Typically, I use 2 3/4 cups of the flour at this point and save the remaining 1/4 cup of flour for working with the dough while rolling.
  • Roll out sugar cookie dough to your desired thickness (usually 1/4 - 1/2 inch depending on your preference) and cut into shapes. Transfer to baking sheet(s) and bake for 6-9 minutes at 350 degrees F (175 degrees C). Remove from the oven before any browning starts on the bottom edges of your cut out sugar cookies.
  • Allow your cookies to remain on the baking sheet for 5-6 minutes as they will continue to bake on the baking sheet. Transfer to a wire cooling rack to cool completely before storing or decorating. *I recommend allowing your cookies to sit for several hours (and preferably overnight) before decorating with icing, as they can absorb the icing and become too soft.

Whenever you make these cookies for someone, be sure to bring along several copies of the recipe! You will be asked for it, I promise! NOTE: I make icing with confectioners' sugar and milk. I make it fairly thin, as I 'paint' the icing on the cookies with a pastry brush. Thin enough to spread easily but not so thin that it just makes your cookies wet and runs off.

1 ½ cups butter, softened
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
5 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt

Steps:

  • In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
  • Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
  • Bake 6 to 8 minutes in preheated oven. Cool completely.

2 cups salted butter
2 cups granulated sugar
2 large eggs
4 tablespoons whipping cream (or whole milk)
4 teaspoons pure vanilla extract
2 teaspoons almond extract
6 cups unsifted all-purpose flour
1 tablespoon baking powder

Steps:

  • Combine butter and sugar. Do not take this mixture to a "light cream." Think "incorporate" ? not "cream." Just make sure the mixture is smooth ? no butter lumps.
  • In a small bowl mix egg, milk/cream, and extracts. Add this mixture all at once to the butter and sugar. Mix just until the egg is broken. The mixture will "curdle" but that's not a problem.
  • In another small bowl, mix the flour and baking powder. Add these dry ingredients to the liquid ingredients in the mixing bowl. Process to form dough.
  • Preheat the oven to 325 degrees F. Line 2 baking sheets with parchment paper. It's just that simple! The beauty of this dough is that it does not need to chill before using it. Simply flour a work surface. Knead the dough a few times to smooth it out and with a rolling pin, roll dough. Cut into desired shapes. The dough scraps can be used several times. Bake for 8 to 10 minutes, or until golden brown. Cool on a wire rack.

4 1/2 tablespoons powdered egg whites
16 tablespoons water
1 -2 drop food coloring, in red and green. (Paste food coloring works best)

Steps:

  • Combine powdered sugar, Just Whites dried egg whites with water and beat until it is a smooth. (Note: water can be adjusted to obtain desired consistency for dipping cookies in Glaze.).
  • Separate Glaze into two bowls and add paste food coloring:.
  • Tint Red for Christmas stocking cookie shapes.
  • Tint Green for Christmas tree cookie shapes.
  • Dip each cookie in glaze and let dry thoroughly prior to storing.

1 cup butter, softened
1 cup sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon lemon extract
3 cups all-purpose flour
2 teaspoons baking powder
GLAZE:
1 cup confectioners' sugar
2 tablespoons water
1 tablespoon light corn syrup
Food coloring, optional

Steps:

  • In a bowl, cream butter and sugar. Add egg and extracts. Combine flour and baking powder; gradually add to creamed mixture and mix well. (Dough will be very stiff. If necessary, stir in the last cup of flour mixture by hand. Do not chill.) On a lightly floured surface, roll dough to 1/8-in. thickness. Cut out cookies into desired shapes. Place 2 in. apart on ungreased baking sheets. Bake at 400° for 6-7 minutes or until edges are lightly browned. Cool 2 minutes before removing to wire racks; cool completely. For glaze, combine the sugar, water and corn syrup until smooth. Tint with food coloring if desired. Using a small brush and stirring glaze often, brush on cookies, decorating as desired.
