Rich, chewy and soft Neiman Marcus chocolate chip cookies are studded with extra chocolate and chopped nuts to make the perfect sweet treat.

2 1/2 cups oatmeal (blended)
2 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 cup unsalted butter (room temperature)
1 cup granulated sugar
1 cup light brown sugar (firmly packed)
2 eggs
1 teaspoon vanilla
12 oz. chocolate chips (2 cups)
1 4 oz. Hershey bar, grated
1 1/2 cups chopped nuts

Steps:

  • Preheat oven to 375 degree F.
  • Add the oatmeal to a blender and blend into a course flour or powder.
  • In a medium bowl, mix together flour, blended oatmeal, salt, baking powder, and baking soda.
  • In the bowl of an electric mixer, fitted with the paddle attachment, beat the butter and sugars, on medium-high speed, until light and fluffy. Beat in the eggs and vanilla until well blended, scraping down sides of the bowl as needed.
  • Add flour mixture; mix just until blended. Stir in chocolate chips, grated chocolate, and nuts. (Optional: cover dough and chill 30 minutes - add a minute or two to the cook time if using chilled dough.)
  • Roll into balls and place two inches apart on cookie sheet. Bake for 10 to 12 minutes.
  • Let cookies cool for 5 minutes on baking sheet before transferring cookies to racks to cool completely.

Neiman Marcus Oatmeal Cookies are giant oatmeal cookies baked at 300 degrees.

2 sticks (230 grams unsalted butter)
2 cups 280 grams unbleached all-purpose flour (weigh)
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon (optional)
1 cup light brown sugar (210 grams)
1 cup 200 grams superfine or granulated sugar
2 eggs (cool room temp)
1 teaspoon pure almond extract or vanilla extract
3 cups old fashioned rolled oats
1 1/2 cups raisins or any other chopped dried fruit (prunes, dates, dried cherries OR use chopped chocolate or chips)
1/2 cup walnuts (optional)

Steps:

  • Preheat oven to 300 degrees F. Have ready two ungreased baking sheets (or feel free to line with parchment).
  • Melt the butter and set it aside to cool.
  • Weigh the flour and stir together flour, baking soda and salt (and cinnamon,if using).Set aside.
  • Weigh out the brown sugar so that you get 210 grams. Add it to the mixing bowl along with the granulated sugar and the cool melted butter. Beat until well mixed, then beat in eggs and extract.
  • Add flour mixture to sugar mixture and stir until blended, then stir in oats, raisings and nuts (f using).
  • Scoop very large, golf ball sized rounds and arrange on trays, spacing 3 inches apart. You can leave them as balls or press down slightly so that the tops are flat.
  • Bake for about 20 minutes, until golden. A bit longer for crisper cookies.

These are so good! I've been making them for my family for years, I like to add white chocolate and extra (mixed) nuts. I hope you enjoy! I also use 2 &1/2 cups regular oatmeal and 2&1/2 cups instant (I prefer maple and brown sugar)

Helen Corbitt, Neimans first chef, developed this recipe back in the 50's; and it's still as good as ever. The secret is to ice the cookies when they have completely cooled; you can spread a thicker layer of icing that sets up well and won't smear. The recipe was adapted from the book, Neiman Marcus Taste.

3 cups flour, all purpose
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, unsalted
1 cup sugar
2 eggs, large and beaten
1 cup marmalade, orange
2 teaspoons orange zest, grated
1 teaspoon lemon zest, grated
1/4 cup orange juice
1 teaspoon lemon juice
3 tablespoons butter, unsalted and softened
3 cups confectioners' sugar, icing sugar
1/8 teaspoon salt

Steps:

  • Preheat the oven to 300F; and generously butter a cookie sheet.
  • Sift together the flour, baking soda, and salt into a bowl and set aside.
  • In a work bowl, add the butter and beat on low speed; add the sugar and continue beating for about 2 minutes, until light and fluffy.
  • Add the eggs and mix well, add the reserved dry ingredients and the marmalade and mix thoroughly.
  • Drop dough in 2 tablespoon amounts onto the prepared cookie sheet.
  • Bake for about 20 minutes or until the cookies are light brown.
  • While the cookies are baking, prepare the icing.
  • Combine the orange and lemon zests and juices in a bowl, set aside.
  • In a separate bowl, beat the butter on low speed, add 1 cup of confectioners (icing) sugar and blend throughly.
  • Add the remaining confectioners sugar, the salt, and the citrus mixture and blend until smooth.
  • Remove the cookies from the oven and transfer to a wire rack to cool,.
  • Ice the cooled cookies with a butter knife.
