I was given this recipe by my "Granny." It is requested often whenever any of the family stops by for a visit! It is also easily adjusted according to your family's preferences, and can be changed based on what's available in your pantry.

Ingredients

2 tablespoons butter
1/2 cup celery, chopped
1/2 cup onion, diced
1/2 cup bell pepper, diced
4 -5 cups chopped cooked chicken
6 slices white bread, cubed (we prefer wheat bread)
1 cup milk
1/2 cup mayonnaise
10 1/2 ounces cream of mushroom soup (I use Specialty Soup Substitutes - Cream)
1 1/2 cups shredded cheddar cheese
salt, to taste
pepper, to taste

Steps:

Melt butter in a large skillet. Add celery, onion, and bell pepper; saute' until softened.
Combine with remaining ingredients, mixing well. Add salt and pepper, to taste.
Dump into 13x9" dish. Top with additional cheese, if desired.
Bake at 350* for 35-45 minutes.

This is my Grandmother's recipe for chicken casserole. It is by far the best comfort food in the world. I usually double the recipe to allow for plenty of leftovers. FYI this recipe can get rather salty so I use the reduced sodium StoveTop when I can find it, if it's not available I use reduce sodium soups. Some in our family like to pair this with cranberry sauce.

Ingredients

3 -4 large chicken breasts, boiled until tender
1 (6 ounce) box stove top cornbread stuffing mix
1 (10 3/4 ounce) can cream of chicken soup (can sub Cream of Celery)
1 (10 3/4 ounce) can chicken & rice soup
1 small onion, chopped and sauteed in a little butter
2 eggs, beaten
2 cups chicken broth
1 chicken flavored bullion cube- dissolved in broth

Steps:

Boil chicken in seasoned water until tender and no longer pink in center.
Allow chicken to cool and then pull into small pieces or use a fork to shred.
Line bottom of 9 x 13 baking dish with chicken.
Chop onion and sautee.
Dissolve bouillon cube in broth (I use Swanson's broth by preference).
Beat eggs.
Mix stuffing, soups, onion, eggs, and broth.
Pour mixture over chicken.
Bake at 350 for 45 minutes or until set in middle and brown on top. Cooking time will usually depend on your oven.

Ingredients

3 cups shell noodles (uncooked )
3 tablespoons butter
⅓ cup red bell pepper (diced)
1 onion (finely diced)
½ teaspoon seasoning salt
1 teaspoon chili powder
10 ¾ ounces cream of chicken soup (condensed)
1 ⅓ cups milk
3 cups sharp cheddar cheese (shredded, divided)
⅓ cup parmesan cheese (shredded)
4 ounces mild green chiles
3 cups cooked chicken

Steps:

Heat oven to 375°F.
Cook shells al dente according to package directions.
Cook onion and red bell pepper in butter until tender, about 5 minutes. Stir in salt and chili powder.
In a large bowl combine soup, onion mixture, milk and 2 cups cheddar cheese and parmesan cheese. Mix well. Stir in chicken, pasta and green chiles.
Spread into a 9x13 casserole dish. Top with remaining cheese.
Bake 30-35 minutes or until hot and bubbly.

Wonderful side dish. My grandma always makes this for holidays and everyone loves it. Even my husband who does not like spinach goes back for seconds. Can be doubled for a crowd.

Ingredients

1 package frozen spinach
1 can French-fried onions
1 package cream cheese
1 can cream of mushroom soup
cracker crumb, to cover
3/8 cup melted butter

Steps:

Cook spinach and drain; place in mixing bowl.
In sauce pan on low heat melt cream cheese and soup.
Mix well.
Add the can of fried onions.
Pour mixture over spinach and mix well.
Transfer to baking dish.
Mix cracker crumbs and melted butter until moist but not soggy.
Spread over casserole.
Bake at 350 until top is brown and casserole is bubbly about 20 minutes.

1 chicken, boiled & shredded
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of chicken soup
1 (12 ounce) can evaporated milk
1 small onion, chopped
1 (4 ounce) can green chilies
12 corn tortillas, torn
4 tablespoons butter, melted
2 cups shredded cheddar cheese

Steps:

Combine soups, onion, chiles, chicken, milk & melted butter.
In a greased casserole dish :
Layer some tortillas on bottom & top w/ mixture. Repeat and top w/ cheese.
Bake 350 degrees until bubbly.
