NANA'S CHOCOLATE POUND CAKE

1 cup unsalted butter, softened
1/2 cup vegetable shortening
3 cups sugar
5 large eggs
1/2 cup cocoa powder
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/4 cups milk
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 325°F. Grease and flour a 10 to 12 cup bundt pan.
  • Cream the butter, sugar, and shortening together for about 3 minutes.
  • Add the eggs one at a time and beat well.
  • Sift the dry ingredients together in a large bowl. Add the dry ingredients alternately with milk, being sure to blend well.
  • Add vanilla extract; mix well.
  • Pour into the prepared pan, being cautious not to overfill the pan, and bake for 1 hour and 10 minutes or until a tooth pick inserted in the middle comes out clean.

This is a semi-dry cake and is best served with either whipped cream or ice cream.

3 sticks butter ((softened))
3 cups sugar
3 cups flour ((sifted) )
5 heaping Tablespoons Cocoa ((sift twice) )
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
2 teaspoons vanilla
5 eggs
10X sugar (( to dust cake; optional))

Steps:

  • Pre-heat oven to 325 degrees In a mixing bowl In a mixing bowl, add sifted flour and cocoa, baking powder, and salt. Whisk together and set aside. Using a stand mixer, cream together butter and sugar. While stand mixer is still running add one egg at a time. Once eggs are mixed in slowly add mixing bowl of dry ingredients alternately with milk; add vanilla. Bake in a greased and lined bundt cake pan or angel food cake pan at 325 for 1 hour and 15 minutes. When cake is finished baking it will look slightly moist on the top, like it should continue baking for another 5-10 minutes, you want it to look like this. Allow cake to cool. Go around the edges of the cake with a butter knife and turn cake out on a plate, top side up if using an angel food cake pan. Dust cake with 10X sugar

1 (8 ounce) package cream cheese, softened
1 cup butter, softened
2 cups superfine sugar
1 tablespoon vanilla extract
2 tablespoons brandy
4 large eggs
2 1/4 cups flour
1 tablespoon cornstarch
1/2 teaspoon baking powder
1 (12 ounce) package mini chocolate chips, at room temp

Steps:

  • Preheat the oven to 325 degrees.
  • Cream the cream cheese and the butter together until light and fluffy.
  • Add the sugar and cream well.
  • Add the vanilla and the brandy, mixing well.
  • Add the eggs one at a time, mixing well each time.
  • Sift the flour, cornstarch and baking powder together, and fold in the chocolate chips.
  • Add the dry ingredients/chips to the egg/sugar mixture gradually, mixing well after each addition.
  • Heavily grease a bundt or a 10 inch tube pan, and pour the cake batter into the pan.
  • Bake at 325 degrees for 30 minutes.
  • Reduce the oven heat to 300 degrees and bake for another 1 hour and 20 minutes.

This is my mother's famous pound cake recipe. I have posted it so that my brother and sisters can access it at any time. She used to make this for all the church and school bazaars and it was the first to go. I made it for my school bazaar and got many requests for the recipe. My mother is a southern cook from those bygone years where everyone knew by heart the recipe for a good pound cake. This is hers.

1 (16 ounce) box confectioners' sugar
6 eggs

  • Add flour, salt and vanilla.
  • Bake in tube pan at 300 degrees for 1 hour and 20 minutes.
