These sweet pecans are wonderful snacks for any occasion.

Steps:
- Preheat oven to 250 degrees F (120 degrees C). Grease one baking sheet.
- In a mixing bowl, whip together the egg white and water until frothy. In a separate bowl, mix together sugar, salt, and cinnamon.
- Add pecans to egg whites, stir to coat the nuts evenly. Remove the nuts, and toss them in the sugar mixture until coated. Spread the nuts out on the prepared baking sheet.
- Bake at 250 degrees F (120 degrees C) for 1 hour. Stir every 15 minutes.

CINNAMON-ROASTED PECANS AND ALMONDS
This is by far my favorite fall and winter treat to have available, and makes an incredible food gift to anyone without an allergy--for the holidays or any occasion! Store cooled nuts in airtight containers for up to 2 weeks.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- Beat egg whites with salt in a bowl until frothy; add sugar gradually, beating to stiff peaks. Gently fold in pecans, almonds, and cinnamon. Pour mixture onto a 15 1/2 x 10 1/2-inch jelly roll pan, drizzle melted butter over top, and toss to coat.
- Bake in the preheated oven, tossing every 10 minutes, until nuts are crisp, about 40 minutes. Serve warm or at room temperature.

MY SUGAR COATED PECANS (ALMONDS)
I make these every Christmas and everyone in my office loves them. I make them with pecans and almonds. You can use whatever you like. UPDATE: I played with this recipe and I think that it is better. The last reviewer said that it was not sweet enough so I up'ed the sugar & even changed it to brown sugar....

- Melt butter in a 13 x 9 baking pan.
- Combine sugar, flour, cinnamon, and salt, set aside.
- Beat egg white until foamy, add vanilla. Stir in sugar mix and nuts and coat. Spread on a baking pan and bake at 250 for about 30 to 45 minutes, stirring every once in a while so that they don't stick -- .

SUGAR COATED PECANS
These are the BEST tasting spiced nuts I've ever had. A sweet girl gave me this recipe and I have made them so many times. Great for the holidays.

Steps:
- Preheat oven to 300°F
- Line a jelly roll pan with foil. In medium sized bowl, combine egg white with 1 tablespoon water and whisk until foamy. Add pecans and stir until nuts are coated with egg white. Set aside.
- In another bowl, combine sugar, salt, and cinnamon. Pour sugar mixture over moist nuts and stir to coat evenly.
- In preheated oven,melt butter in jelly roll pan. Remove pan from oven and gently stir nuts into melted butter. Spread nuts evenly and bake for 20-25 minutes, stirring occasionally. Watch them so they don't burn.
- Remove from oven and allow to cool directly in the pan.
