SPICY MEXICAN RICE
Mexican rice is an everyday staple typically enjoyed with beans, avocado, eggs or your favorite protein. Add a subtle nudge of heat by dropping in a whole jalapeno while the rice is cooking!

- Saute 1 chopped onion in 2 tablespoons vegetable oil in a saucepan over medium heat. Stir in 1 cup white rice and cook until toasted, 3 minutes. Add 1 2/3 cups water, 1 chopped plum tomato, 2 teaspoons tomato paste and 1/2 teaspoon each kosher salt and cumin; bring to a boil. Add 1 whole jalapeno. Cover; simmer 20 minutes. Remove from the heat and let sit 5 minutes. Discard the jalapeno. Top with cilantro.
MY SPICE MEXICAN RICE
I love Mexican anything, when it comes to food. It has to have alot of flavor since my taste buds don't work well. This is my version of rice I make with my green chili enchiladas or other Mexican dishes. I cook it in my rice cooker for easier preperation. Enjoy!

- 1. Rinse rice in sieve and set aside to drain. Heat EVOO in large deep skillet with fitting lid. Saute onion & bell pepper until opaque. Add rice and fry for a few minutes. Add water, tomato saauce and spices. Reduce heat and simmer covered until rice is tender and liquid is adsorbed, about 35 minutes. I use a rice cooker to cook mine.
- 2. When I made this rice to go with my green chili enchiladas last night, I had no green bell pepper..but I usually add it. So the pic shows no pepper.
SPICY MEXICAN RICE
This vegan rice dish can be eaten on its own or, if you want to add some protein, it's good with beans, crumbled feta, cooked chicken or prawns stirred through

- Heat the oil in a deep lidded frying pan. Cook the onion, garlic, chilli and pepper for 10 minutes until starting to soften. Stir in the basmati, then cook for 3-4 minutes, stirring all the time.
- Mix in the chipotle paste and cook, stirring for a couple of minutes until fragrant, then tip in the tomatoes and stock, and stir well.
- Bring to a simmer then turn the heat down to low, put on a lid and cook for 15 minutes or until the rice is tender and cooked through. Stir through the coriander and serve with lime wedges for squeezing.

MEXICAN FIESTA RICE
Make this tasty Mexican rice to serve a crowd. Our recipe is vegan but if everyone you're cooking for eats meat, some chopped bacon in with the onions works well

Steps:
- Heat the oil in a large saucepan with a lid, then add the onion, pepper, garlic and cumin and sizzle gently for 8-10 mins until the vegetables are soft and golden. Stir in the tomato purée and smoked paprika and cook for 1 min, then stir in the rice.
- Pour over the stock, then cover and bring to the boil. Stir quickly, then cover again and place on the lowest heat possible. Simmer for 10 mins. Turn off the heat and leave, covered, for a further 10 mins. If serving straightaway, stir through the coriander and spring onions; alternatively, leave the rice to cool, chill, then re-fry before serving and stir the coriander and spring onions through at the end.

SPICY MEXICAN RICE
This is one of my favorite recipes. Whenever I cook anything Mexican, I prepare this as a side dish. I have been known to eat it right out of the pan, before it is even finished cooking.

Steps:
- Slice one of the onions in very thin slices. Finely chop the other onion.
- Mash the garlic with the salt to make a paste.
- Heat the bacon drippings in a medium sauce pan. Add chopped onions and garlic paste. Cook and stir until onions are translucent.
- Puree the two cans of Rotel Mexican Diced Tomatoes with Lime Juice and Cilantro.
- Add pureed Rotel, chicken broth, chili powder and cumin. Bring mixture to a boil. Stir in instant rice and sliced onions.
- Cover and let stand over very low heat 15 to 20 minutes, or until liquid is absorbed.

Cumin and garlic powder season long grain rice in this simple side dish from Sonya Dueck of Cartwright, Manitoba. The mild mixture would be a nice complement to a spicy Mexican entree.

- In a bowl, combine the bouillon, salt, garlic powder and cumin. Store in an airtight container in a cool, dry place for up to 1 year. Yield: about 5 tablespoons., To prepare rice: In a saucepan, saute rice, onion and green pepper in butter until rice is lightly browned. Stir in water and 5 teaspoons seasoning mix. Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until rice is tender.

- Prepare the broth: In a sauce pan over medium heat, simmer the tomato, onion, chicken bouillon and hot sauce, in the chicken broth. Simmer until the onion is tender, and the tomato skin is starting to pull off. Once done, blend in a blender.
- Toast the rice and garlic: While the broth is simmering, toast the rice in 1 tbsp of olive oil over medium-low, with the garlic. You will want to stay near the rice, so it gets evenly toasted. The rice kernels will turn golden brown!
- Top with broth: Once the rice has browned, top with the blended tomato broth. Stir the rice once, and cook covered for 15 minutes on medium-low heat, or until the liquid has been absorbed by the rice.

- Add all the ingredients, except the corn, lime and garnish, to a medium sized pot over high heat. Bring the pot to a boil then reduce the heat to low, cover the pot, and and simmer for 45 minutes, stirring occasionally.
- Once the rice is soft remove it from the heat, taste for seasoning and add more sea salt to taste. We added an extra ¼ tablespoon of sea salt. Stir through the corn and the juice from 1 lime.
