This blueberry buckle recipe comes from my grandmother, but we added the apples and it makes this dessert absolutely amazing!

3 large Granny Smith apples, peeled and sliced
¾ cup white sugar
2 tablespoons ground cinnamon
1 teaspoon ground nutmeg
2 tablespoons lemon juice
¼ cup butter, softened
¾ cup white sugar
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
½ cup milk
2 cups fresh blueberries
⅔ cup white sugar
½ cup all-purpose flour
1 teaspoon ground cinnamon
⅓ cup cold butter

Steps:

  • Place apples in a large bowl and toss with 3/4 cup sugar, 2 tablespoons cinnamon, nutmeg, and lemon juice. Cover the bowl and place in refrigerator.
  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Beat softened butter and 3/4 cup white sugar together in a large bowl until creamy; beat in egg.
  • Mix 2 cups flour, baking powder, and salt together in a small bowl. Stir flour mixture into butter mixture, alternating with milk, until fully incorporated. Fold in blueberries.
  • Arrange apples in a single layer in the bottom of the prepared baking dish. Pour blueberry batter over apples.
  • Mix 2/3 cup sugar, 1/2 cup flour, and 1 teaspoon cinnamon together in a bowl; cut in cold butter until mixture is crumbly. Sprinkle crumb topping over batter.
  • Bake in the preheated oven until a toothpick inserted in the center of the buckle comes out clean, 40 to 45 minutes. Cool on a wire rack.

Cool autumn weekend treat! I had a lazy Sunday afternoon and wanted to make a healthy treat to eat while watching football. Since I didn't have the more traditional cranberry accompaniment I used blueberries and was pleasantly surprised! My measurements are approximate because I just "eyeballed" my recipe.

8 whole apples, cored (orchard picked or store bought)
1/2 pint fresh blueberries
1/4 cup dark brown sugar
2 tablespoons butter
4 teaspoons cinnamon
3 tablespoons water

Steps:

  • Preheat oven to 350°F.
  • Core apples with end of peeler.
  • Generously sprinkle cinnamon in each apple, reserving some for topping.
  • Place a few blueberries in each apple.
  • Sprinkle dark brown sugar on top of blueberries.
  • Layer with 1/2 pat of butter.
  • Mound more blueberries on top.
  • Sprinkle with remaining cinnamon.
  • Place stuffed apples on glass baking dish and put a couple spoonfuls of water on bottom of dish.
  • Bake for approximately 35 minutes or until fork soft.
  • Serve whole or cut half way down into a fanning presentation.
  • Substitute margarine for low-fat option.

APPLE AND BLUEBERRY HAND PIES

2 boxes prepared frozen puff pastry
6 apples
1 lemon, juiced
2 tablespoons butter
1/4 cup honey
Pinch salt
3/4 cup fresh blueberries
1 egg
1 teaspoon ground cinnamon
2 tablespoons sugar
All-purpose flour, for dusting work surface

Steps:

  • Preheat oven to 450 degrees F.
  • Thaw the sheets of puff pastry as per the box instructions.
  • Peel and core the apples and cut into quarters. Toss the apples in the lemon juice so they do not brown while you are dicing them. Cut each quarter into about 2 to 3 (1-inch) pieces.
  • In a large saute pan over medium heat, melt the butter until lightly browned. Add the apples and saute for about 3 to 5 minutes until lightly browned. Add the honey and a pinch of salt and toss to mix in well, transfer to the oven and roast for about 15 minutes until apples are soft. Mash with a fork while still warm. Let the apples cool to room temperature and gently fold in the berries.
  • Turn the oven down to 400 degrees F.
  • In a small mixing bowl beat 1 egg. In another small bowl, mix together the cinnamon and sugar.
  • Lay the thawed puff pastry sheets out flat on a floured work surface. Cut large circles out of the pastry with a ring cutter, about 4 per pastry sheet. Brush with the egg-wash on the outer edge of half of the circle. Spoon 2 tablespoons of the apple berry mixture in the center of each round of pastry dough. Fold the dough over to cover the filling, making a semi-circle and sealing the edges.
  • Place pies on a buttered oven tray. Repeat with the rest of the pastry dough. When all of the pies are on a sheet tray cut air holes in the top of each pie and brush the tops with egg wash. Sprinkle with the cinnamon sugar. Bake for about 20 to 25 minutes until puffed and nicely browned.

1 apple
1/2 cup blueberries (or as many will fit to fill ramiken)
1 tablespoon brown sugar
2 teaspoons vanilla
butter
whipped cream or whipped vanilla ice cream

Steps:

  • Core and quarter apple (Do not peel) Arrange standing around edge of buttered ramiken Mix together blueberries, brown sugar and vanilla Fill the centre of the ramekin with the blueberry mixture Dot the top with 2 teaspoons butter Cover ramiken with plastic wrap.
  • Pierce top of wrap once or twice.
  • Place ramiken on plate.
  • Microwave on high for 3 minutes, check and add 1 minute at a time until the apple falls.
  • Serve warm Top with a blob of whipped cream or vanilla ice cream.
  • Microwave one ramiken at a time Other berries can be substituted.
  • Diabetics leave the brown sugar out or use sugar substitute.

My Sorta Fried Apples With Blueberries image

One day i felt like cooking things. So i started looking through the fridge and i decided to work with apples. I turned on the burner and puttm' on the pan and did some stuff. Then voala. It's hardly a recipe though. It's so simple. It's a goood filling for tons of things like french toast. Personally I like to eat it on white rice, but do whatever you want.

2 -99 apples
maple syrup
50 -99 blueberries
white rice (optional)

Steps:

  • Cut apples into thin sheets. Not too thin.
  • Put on non-stick pan at medium heat. Be sure to move them around once and awhile so they don't get burned.
  • Halfway through, pour some maple syrup over the apples, then put in the blueberries.
  • Then stir around and let it cook till the syrup is almost all gone--or not--it's up to you.
  • Then put it in whatever you want, pancakes, french toast, bread dough, crepes, etc.
