STRAWBERRIES IN RED WINE
This is a very simple, but quite wonderful dessert, best made with sweet, ripe, fragrant berries, which complements the tannins of red wine. Let the strawberries macerate in wine for up to 1 hour, but no more or they'll be unpleasantly soggy. (It's fine to prepare and sugar them in advance.)

Steps:
- Place strawberries in a medium bowl. Sprinkle with sugar and lemon juice, and toss to coat.
- Add the wine and let macerate for 45 minutes or up to 1 hour.
- Spoon berries and wine into wide dessert glasses (or low soup plates). Serve at cool room temperature.
FRESH PEAR AND BERRY COMPOTE IN RED WINE
This compote -- herbed and sweetened red wine poured over pears and berries -- is delicious on its own, but we like to serve it in wine goblets with Almond Tuiles draped over the rims.

- In a medium bowl, combine strawberries, raspberries, and pears.
- In a medium saucepan, heat sugar and 1 cup water over medium-high heat until sugar has completely dissolved. Add geranium leaves, and remove from heat. Cover, and let steep 10 minutes.
- Stir wine into mixture in pan, and pour over fruit. Cover bowl with plastic wrap, and refrigerate until well chilled, at least 1 1/2 hours. Remove from refrigerator 30 minutes before serving.
NECTARINES AND BERRIES IN WINE SAUCE
I have kept a box of white wine in my refrigerator and red in the pantry almost since these easily dispensed wines first became available. Need a half-cup, a cup or more for a recipe? It's at hand, ready to go into the pot, and there's also some always ready to go into the cook.About the only time I serve the wines is on an informal occasion, for example if someone wants a glass of white when everybody else is drinking red. The wines are also handy for a mixed wine drink like a kir, or even sangria.Their destiny, as the poaching liquid for summer nectarines, could not be more rewarding. The fruit is mixed with berries, and the wine, sweetened with sugar, is enriched with berry purée and reduced to a sauce. Whether to use white or red depends on the berries you select. Do not skimp on the chilling time; overnight would not be a mistake. It improves the dessert.

- Purée half the raspberries or blackberries by forcing them through a sieve or potato ricer to eliminate seeds.
- Place the wine (with raspberries, use white; with blackberries, red) in a 3-quart saucepan. Stir in the sugar, bring to a slow simmer and add the nectarines and pits. Simmer until the fruit is just tender, about 3 minutes. Transfer the nectarines to a bowl with a slotted spoon, draining well. Discard the pits. Stir berry purée into the pan.
- Bring wine with berry purée to a boil and cook about 15 minutes, until reduced to about 3/4 cup. Remove from heat and stir in the lemon juice and framboise or brandy, if using. Allow to cool 30 minutes. Mix the remaining berries with the nectarines. Pour the sauce over the fruit and refrigerate several hours, or overnight. Serve on its own or over ice cream, garnished with mint.

- Mix the jam and red wine together in a bowl.
- Wash and hull the berries. Cut the smaller ones in half; quarter the larger ones. Add the berries to the bowl and mix gently but thoroughly.
- Cover the bowl with plastic wrap, arranging the wrap so it touches the berries and helps keep them submerged in the wine mixture. Refrigerate until cold.
- Serve the berries and surrounding liquid in wine goblets. If desired, garnish with herb sprigs and serve with cookies.

POACHED PEARS IN SPICED RED WINE

- Halve the vanilla pod lengthways, scrape out the black seeds and put in a large saucepan with the wine, sugar, cinnamon and thyme. Cut each piece of pod into three long thin strips, add to pan, then lower in the pears.
- Poach the pears, covered, for 20-30 mins, making sure they are covered in the wine. The cooking time will very much depend on the ripeness of your pears - they should be tender all the way through when pierced with a cocktail stick. You can make these up to 2 days ahead and chill.
- Take the pears from the pan, then boil the liquid to reduce it by half so that it's syrupy. Serve each pear with the cooled syrup, a strip of vanilla, a piece of cinnamon and a small thyme sprig.
