MOM'S PERFECT CHILI

Mom's Perfect Chili image

Smoky tomato flavors lead the way in this comforting classic. This is the perfect chili recipe in my opinion--it's not so fancy that it's intimidating at all, but it's definitely a step above chili packet recipes and chili beans. Serve topped with desired garnishes, such as jalapeno, green or white white onion, cheese, sour cream, cilantro, and hot sauce.

Provided by NicoleMcmom

Yield 12

Number Of Ingredients 24

1 tablespoon olive oil, divided
2 pounds ground beef sirloin
1 large onion, diced
2 medium poblano peppers, diced
1 medium orange bell pepper, diced
1 medium jalapeno pepper, seeded and chopped
3 cloves garlic, minced
¼ cup chili powder
4 teaspoons ground cumin
1 teaspoon ground paprika
1 teaspoon white sugar
1 teaspoon kosher salt
1 teaspoon black pepper
½ teaspoon garlic powder
¼ teaspoon cayenne pepper
½ teaspoon dried oregano
1 (12 fluid ounce) can or bottle beer
1 (28 ounce) can crushed tomatoes
1 (14.5 ounce) can fire-roasted diced tomatoes
½ (28 ounce) can tomato puree
2 cups beef stock
1 chipotle pepper in adobo sauce, minced
1 tablespoon adobo sauce from chipotle peppers
3 (15 ounce) cans kidney beans, drained and rinsed

Steps:

  • Heat 1 1/2 teaspoons oil in large Dutch oven over medium-high heat. Add ground beef and cook, crumbling with a spoon until evenly browned and cooked through, about 8 minutes. Drain and set aside.
  • Add remaining oil to the pot and return to medium-high heat. Add onion and saute, stirring often, until translucent, about 5 minutes. Add poblano, bell, and jalapeno peppers and garlic; cook, stirring frequently until softened, about 5 minutes.
  • Stir in chili powder, cumin, paprika, sugar, salt, pepper, garlic powder, cayenne, and oregano; cook for 1 minute. Add beer and stir, scraping any small brown bits from the bottom of the pot. Add crushed and fire-roasted tomatoes, tomato puree, beef stock, chipotle pepper, and adobo sauce; stir until well combined. Bring to a simmer, stirring often.
  • Stir in beef and kidney beans; return to a simmer. Cover, reduce heat to low, and simmer, stirring occasionally, for at least 3 hours.

FAMILY FAVORITE CHILI

Family Favorite Chili image

I found this recipe several years ago at the service meat counter in our local supermarket and tweeked it a little. I also call it 'Really Good Chili That's a Whole Lotta Work' but my guys love it so what can I do? It can be 1/2 diced beef and 1/2 ground beef but we like it all diced. It's pretty mild so add more chili powder and chopped chilis if you like it hot. I also use trimmed stew beef instead of a roast, costs a bit more but its quicker to cut up. Prep time includes browning the beef and onions. It's good left over also.

FAMILY FAVORITE CHILI

Family Favorite Chili image

The name says it all...this has always been my family's favorite, even though there are a lot of shortcuts. It is simple to make, tasty and fast. What else can you ask for? To serve, I ladle it into a large bowl and garnish it with lots of shredded cheddar cheese and jalapenos. I insert tortilla chips all around the edge of the bowl for either scooping up some of the chili with (nacho-style) or eating along with the chili itself.

MY MOM'S FAMILY FAVORITE CHILI

My Mom's Family Favorite Chili image

Our family favorite chili that I keep coming back to again and again, over the years-- it's so simple, quick and easy to make, and totally yummy and satisfying! Especially good this time of year. From my mom. Wonderful sprinkled with grated cheddar cheese and chopped onions, with freshly baked warm cornbread on the side. Enjoy!

Categories     One Dish Meal

Time 55m

Yield 6-8 serving(s)

Number Of Ingredients 15

1 lb lean ground beef
1 medium onion, chopped
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 -3 tablespoons chili powder
1/8 teaspoon garlic powder
1 dash oregano
1 dash cumin
couple dashes cayenne
2 (16 ounce) cans diced stewed tomatoes, undrained (I like Hunt's diced tomatoes with peppers and onions added)
1 (8 ounce) can tomato sauce
2 (15 ounce) cans kidney beans, rinsed and drained
3/4 cup green bell pepper, roughly diced
grated cheddar cheese, to serve
chopped onion, to serve

Steps:

  • In a large saucepan, brown the ground beef and onion, stirring to break up any clumps.
  • Season with chili powder, salt, pepper, garlic powder, oregano, cumin, and cayenne, and stir in the remaining ingredients.
  • Bring quickly just to a boil, then immediately reduce heat to low and gently simmer with the pan partially covered, stirring occasionally (add a little water if it seems too thick), for about 45 minutes.
  • Taste and adjust seasonings.
  • Serve hot topped with grated cheddar cheese and chopped onions, with sides of warm cornbread. Enjoy!
