LISA'S COMFY CASSEROLE

I whipped this up last night for supper and it was awesome, so awesome there was no left overs, my family loved it

Number Of Ingredients 9

WHAT YOU NEED
2 lbs hamburger cooked and drained
6 potatoes shredded
1 onion shredded
2 cans mushrooms drained
2 cans green bean or yellow beans drained (i used a can of each )
2 cans mushroom soup
4 cans milk ( i used the soup can)
salt and pepper

Steps:

  • 1. Preheat oven to 350. In a roasting pan or big casserole dish mix all ingredients together well. Cover and cook for 1 1/2 to 2 hrs. Stirring every 30 min. Enjoy

LISA'S SWEET POTATO CASSEROLE

I went to the grocery store to get meats and sweet potatoes was on sale so I bought me some. I am going to fix it one day this week. They are so delicious and sweet.

Number Of Ingredients 6

6 sweet potatoes, peeled and diced
1/4 c butter or margarine
1/2 c sugar
1/4 c orange juice
1/2 tsp cinnamon
1 10.5 oz package miniature marshmallows

Steps:

  • 1. Preheat oven to 350 F. Wash sweet potatoes and peeled and diced. Put the sweet potatoes in a large pot with enough water to cover. Bring to a boil and reduce to medium heat and cook for 15 minutes until tender. Remove from heat and drain. Mash sweet potatoes with electric mixer. Add butter, sugar, orange juice, and cinnamon and mix well. Put the sweet potatoes into a 9X13-inch baking dish and spread evenly. Bake for 30 minutes and put on marshmallows on top and cook for 15 minutes until the marshmallows are puffed and lightly brown.

LISA'S BROCCOLI, SPINACH AND CHEESE CASSEROLE



Lisa's Broccoli, Spinach and Cheese Casserole image

I got this recipe from my cousin Lisa, but there is an (unrelated) amusing story that comes with it. When I was in college, my roommate's boyfriend HATED broccoli, until he tried this casserole. I gave the recipe to my roommate, who passed it on to his mom. When his family came down for graduation, his mom gave me a big hug and thanked me for finding a way to get her son to eat broccoli! Note: I've also made this into a complete meal by adding leftover cooked chicken to the broccoli mixture before baking.

2 boxes frozen chopped broccoli (thawed)
1 box frozen chopped spinach (thawed) (optional)
1/2 lb grated cheddar cheese
1/2 onion, chopped
1 cup mayonnaise
2 eggs
4 tablespoons butter (may need more)
1 package Ritz cracker (sleeve)

Steps:

  • Preheat oven to 325 degrees F.
  • Mix all the ingredients together except the butter and the crackers, and pour into a casserole pan.
  • Crush the crackers, either in the unopened roll, or in a plastic bag.
  • Melt the butter in a frying pan, and saute crackers until all the butter has been absorbed.
  • Sprinkle the crackers on top of the broccoli mixture and bake for 45 minutes.

My DH wanted brats but didn't want them in buns, or even done hash style with potatoes like we frequently do. He asked can you pu them in a casserole with maybe a little cheese & onion. This is what came out if that. You get nice beer-cheese sauce on brats, onions, & pasta to hold it all together. All the best of Wisconsin: beer- cheese - brats

Number Of Ingredients 13

1 lb bratwurst, cooked & cooled
1 tablespoon butter
1 tablespoon olive oil
1 large sweet onion, halved, then sliced in julienne strips
8 ounces penne pasta
3 tablespoons butter
3 tablespoons flour
2 (12 ounce) bottles beer, I recommend a craft beer, I used pale ale (room temperature)
4 ounces sharp cheddar cheese, shredded
2 ounces swiss cheese, shredded
fresh ground pepper
1 tablespoon mustard, stone ground or spicy brown
1/4 cup French-fried onions

Steps:

  • Bring a large pot of salted water to a boil for pasta. Cook pasta until l dente, drain.
  • While boiling water & cooking pasta, melt 1T butter & 1T olive oil together over medium high heat. Add onions & a pinch of salt. Caramelize until very golden & soft. Add to large bowl.
  • Slice brats while onions carmelize, add to large bowl.
  • In same pan as onions, melt 3T butter, add flour to make a roux, cook 1 minutes. Gently stir in 2 cups of beer, continue stirring until roux dissolves, bring to a simmer & cook 1-2 minutes until thickened & flour taste cooks out. Recede heat, gradually add cheeses stirring until melted & smooth. Add mustard & pepper to taste. Stir in extra beer as needed to thin sauce, should be a medium consistency, thin enough to pour smoothly, not thick & gloppy.
  • Stir drained pasta in with brats & onions, add most of sauce & toss to coat. Pour into a casserole dish, top with remaining sauce. Can be refrigerated @ this point to bake off later.
  • If refrigerated, warm on counter for an hour before baking.
  • Bake in a preheated 375* F oven, covered 20 minutes, uncover, top with French fried onions & bake another 10-15 minutes until golden & bubbly.

My husband and I loves squash casserole. I had that recipe since I was 16 years old. They are so delicious and tasty.

6 or 8 squash, fresh and sliced
1 small onion, diced
1 egg
2 c sharp cheddar cheese, shredded and divided
1 stick butter or margarine, melted
1 c ritz crackers, crumbled and divded
salt to taste
pepper to taste

Steps:

  • 1. Wash the squash and slice the squash and put the squash and onions in a large saucepan. Put half water in the squash saucepan and put salt and pepper in squash. Bring to a boil and reduce medium heat and let it cook until tender. Drain the water and put the squash back in the saucepan and add egg, 1/2 cup cheese, and 1/4 cup ritz crackers in squash mixture and stir well. Put the squash in 10X10-inch baking dish and sprinkle 1 1/2 cups cheese and 3/4 cup ritz crackers on top of squash. Add the melted butter on top of ritz crackers. Bake at 350 F. for 30 minutes until cheese melted and golden brown.

LISA'S ZUCCHINI CASSEROLE

NOTE: I have a family of 5 and 4 of them are growing boys, you can modify this if its too much it makes a nice big pan

1 - onion, chopped
1 package(s) mushrooms, fresh
3 - zucchini, sliced thin
1 can(s) crushed tomatoes
1 can(s) diced tomatoes
1 can(s) water
4 - eggs
2 cup(s) minute rice
1 package(s) tex mex cheese ( or cheese of your choice
SPICES TO TASTE, I USED, BASIL, PARSLEY, GARLIC SALT, ONION POWDER, PEPPER

Steps:

  • Pre heat oven to 350.
  • In a large frying pan brown hamburger and onions and mushrooms and spices, when no longer pink, and well cook.
  • Transfer to a large bowl, add both cans tomatoes, eggs, rice, water, mix well, add a little cheese about 1/4 or more of the package.
  • In a well greased big casserole dish, arrange a layer of zucchini, pour meat mixture over top, top with remaining zucchini and cheese. Bake at 350 for about 45 min ~Enjoy~

LISA'S SAUSAGE-RICE CASSEROLE

I found this version in a local farmers market cookbook. I made a few changes but the basic recipe is still the same. Most other versions call for dried chicken noodle soup mix which is hard to find here. Recipe calls for hot sausage but you can use the mild.

1 lb bulk hot pork sausage
1 cup uncooked long-grain rice
1 medium onion, chopped
1/2 cup chopped celery
1/2 cup chopped green pepper
1 (8 ounce) can sliced water chestnuts, drained
1 (14 1/2 ounce) can chicken broth
1/4 cup water
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees. Cook sausage until brown .Drain grease well.
  • Lightly grease a 3-qt. casserole dish. Spread rice evenly in pan. Sprinkle onions, celery, green peppers and water chestnuts over rice. Sprinkle salt and pepper over vegetables. Pour chicken broth and water over vegetables. Spoon sausage on top. Cover and bake at 350 degrees for 30 minutes. Remove from oven and stir well. Cover and bake an additional 30 minutes.

Lisa is the stepdaughter that loved this when she lived at home. This is so easy it's almost embarrassing. I like to mix and match the gravy to suit my mood. And I sometimes use other spices, garlic, onion or chili powders when I S&P the meat.

1 lb ground beef
1/2 teaspoon salt
1/2 teaspoon pepper
2 (14 ounce) cans chicken gravy or 2 (14 ounce) cans turkey gravy

  • Preheat oven to 375f.
  • In a medium casserole dish, tightly arrange the Tater Tots.
  • Crumble the ground beef over the Tater Tots trying to be as uniform as possible.
  • Salt and pepper the meat.
  • Pour the gravy over it all.
  • Bake 45-50 minutes or until the gravy starts to get a little crusty.

  • Brown hamburger, Drain well.
  • Add pork and beans.
  • Add spanish rice.
  • Mix together.
  • In a small bowl, mix together ketchup, mustard, brown sugar, salt, pepper.

  • Place in a 2 quart casserole.
  • Bake at 325* for 30-45 minutes.
