POPPY SEED CHICKEN
This is a great and easy chicken dish. It is a way to use up leftover chicken or turkey and it can be prepared beforehand. The cracker mixtures is what makes this dish so good. I have taken it to people for dinner several times and had lots of requests for the recipe.

Steps:
- Combine chicken with soup and sour cream in a bowl.
- In another bowl add crushed crackers and poppy seeds to melted butter.
- Mix well.
- Mix half of cracker mixture in chicken.
- Put in casserole dish.
- Spread remaining cracker mix on top.
- Bake 30 minutes at 350 degrees.
- Cover for first 15 minutes and then uncover for last 15 minutes.
- (I like to double the crackers and butter).

MY LIGHTENED VEGGIE VERSION OF POPPY SEED CHICKEN
The original recipe of Recipe #269300 belongs to diner524. When I made it to suite my needs she suggested that I post it as a new recipe. Here it is, it's very tasty and the fat has been trimmed significantly. diner524 adds the suggestion that this could be served with whole wheat pasta or brown rice.

Steps:
- Preheat oven to 350°F.
- Mix two cans of soup with sour cream in a deep sided casserole and combine well.
- When well mixed stir in the "chicken" until well separated and coated with the soup mix.
- Place crackers in a plastic bag and gently crush them.
- Add poppy and shake to mix and then over the chicken and soup mixture.
- Drizzle the oil over the crackers.
- Bake for 30-40 minutes until it begins to bubble around edges and the crackers are golden brown.

A low-fat, high taste twist on sour cream & chicken casseroles. When I cook the chicken, I usually pan-sear with salt, pepper, and spices like garlic or onion powder. This provides a little extra yummy taste to the overall dish. Wonderful with green vegetables or salad as sides.
